Good for Health - Crostini Salad

Did you know that the water content of lettuce is as high as 96%! Moreover, this is the vegetable that's lowest in calories! When shopping for lettuce, always buy dark coloured leaves since these are more nutritious, higher in iron and beta carotene than the light green ones. The best way to store unwashed lettuce in your kitchen is in the vegetable crisper, loosely packed in a plastic bag or in a covered container in the refrigerator. Use lettuce within 3 days from the day you buy it. This is the best thing that I got to learn today - 2 leaves of lettuce have just 1 single calorie!!!!!! I hope you enjoy this recipe and munch on some lettuce instead of biscuits the next time hunger pangs take their toll on you!;-) This is Chef Sanjeev Kapoor's recipe from the Young Times magazine. -- posted by Charishma Ramchandani

Salad With Radish and Green Onions

Small red mild radish are a favorite salad ingredient with many Germans. One of the many salad variations we usually eat. We prefer the mild nutty flavor of a medium-priced walnut oil to the fruity flavor of olive oil, the grainy texture of the country-style mustard and some tang from the vinegar, but feel free to use what you like best. I often sub the onions with 1 tablespoon chives. -- posted by Inge 1505

Bush Tomato Dressing on a Bed of Greens

serve over antipasto platter with toasted focaccia bruschetta. From Executive chef Michael Warren at the Bough House restaurant at the Ayers Rock Resort
Australian Bush Tomato (Ground)
From the time that Nirmala was a child, growing up in a village in Guyana, South America, she has been focused on the blending and mingling of different flavors. The fragrant spices of her Indian roots fuse with the bold flavors of the West Indies and South America, now all collide with the dozens of ethnicities she has adopted in the melting pot of New York City. To feed her insatiable appetite for exotic ingredients, Nirmala has spent the past ten years traveling to every ethnic corner of the world seeking out spice plantations, locals farms, markets and food stalls.

Bush tomatoes are actually berries, native to Australia and known as akudjura. Dark brown with a fruity caramel-like flavor and a slight tangy acidity, Australian bush tomatoes taste somewhat like green tomatoes. Bush tomatoes are hand-picked by the aboriginal people in the Northern Territory of Australia, just as they have been for thousands of years. Use ground Australian Bush Tomato to flavor casseroles, beef stews or wild game. Or sprinkle it on focaccia, antipasto and chutneys. It also works well as a coating for grilled fish, such as salmon or tuna. -- posted by ~Rita~

There are about 30 recipes on this site if you would like to make your own. You can find prepared tabouli next to the hummus in the deli. You can also make your own hummus. In order to keep this quick and simple, this recipe uses prepared refrigerated mixes from the grocery store deli. -- posted by KelBel

Artichoke Heart Salad

Whoever created this recipe called it "Mushroom Toss," which I never understood, since the mushrooms are no more important than the other ingredients in this salad. So I am re-naming it after the artichokes - equally random, I suppose, but they're more interesting than the mushrooms. (FYI: ignore the ounces on the ingredient list - I have no idea how many ounces a bag of spinach weighs, but the site needs the amount to be specific, so I made it up. This goes for the jar sizes, too - just use whatever you find in the supermarket) -- posted by Kishka

Holubsti--Ukranian Cabbage Rolls

I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked. This recipe comes from me combining elements of two or three different recipes that I found. The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well. If I want to do a homemade sauce, I usually do it a day or so in advance.,

By omitting the meat, this can be a vegetarian dish. By also omitting the sour cream and using margarine instead of butter, it can be vegan. -- posted by CorianneW
