			<description>Recipe courtesy Giada De Laurentis from Everyday Italian Show and the Episode: Italian Salads. We used this recipe for a Dr's meeting here and it was liked by all! I had printed copies of the recipe ready for those who wanted them. We used walnuts instead of the pignoli's (personal preference). There is a 2 hour cooling time or if wanted you can prepare the croutons and salad dressing the day before. Then it assembles easily and quickly! We used the polenta croutons in a salad of mixed greens and they were awesome! One thing about Ceasar dressing, if you make more than you will need for a single setting, take it out of the fridge for a few minutes, as olive oil solidifies in the cold. Another thing, please don't use the parmesan in the green can, buy a piece at your local market for this, and grate it yourself. It will be so worth it. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages.  I'm not sure where the &amp;quot;m&amp;quot; stems from in &amp;quot;veggiemich,&amp;quot; that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down.  Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe!  We loved using a lot of pepper for a nice kick. Serve this with poached salmon or cold chicken for an elegant dinner party dish. Adapted from a 16th century French translation of a book originally written in Latin in 1474. NB: Borage is an excellent culinary herb and can be used in a variety of ways. Borage is far better used fresh, as the flavour and colour deteriorate when dried and some essential oils lost. Traditional recipes recommend borage leaves and seeds, together with fennel in salads for increasing the milk supply in nursing mothers.
