Pierogie Casserole

This is one of the first recipes I learned while away at college. Its a very simple side dish or main course. And great to take for a potluck dinner. This recipe freezes nicely and the leftovers are wonderful the next day. If you want, you can sauté onions in some butter and serve on the side. I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Enjoy!! -- posted by coffybean

Spinach and Artichoke Penne Pasta

This is one of my new favorite recipes, and by far my favorite concoction that I've ever whipped up myself! It turned out amazing, and the whole house smelled amazing (if you like the smell of garlic, that is!). I was reading a Spinach Pasta recipe that I was going to make, but didn't have 75% of the ingredients, so I created this one instead! And I'm so happy I did! -- posted by Kristi Nicole

Cauliflower and Shells With White Cheddar Dill Sauce

There is an amazing website here in Richmond, VA called Black Sheep (MUST GO IF YOU'RE LOCAL!). They currently have seasonal side dish that inspired this copy-cat recipe for my family's Christmas dinner - with no baking necessary. I have pretty exotic taste buds, but my two brothers and father have a diet that consist of tacos, hot wings, pizza, burgers and steak - NO VEGGIES. This is a gourmet and delicious way to sneak them into a meal that usually consists only of meat and potatoes ... -- posted by Susan 0485

Tuna Patties

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!

You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried! -- posted by Angel Stowe

Pressure Cooker Ham and Beans With Spinach

This is a variation of cooking basic beans in the pressure cooker. As I was craving beans, I just threw this together with what I had on hand and the result was very good!! The ham was leftover and I was out of fresh onions so I used onion powder. I only use a digital pressure cooker so I can't speak for how this will work for the old fashioned kind.
Pad Thai

This was adapted from another recipe on this site. (Thanks ms_bold for a great beginning!) I changed the original recipe to suit my family's tastes, to shorten cooking time, and to decrease the fat content. I am primarily posting this to check the Nutrition Facts since we are trying to eat healthier without compromising on taste.

I used the breast meat from a Rotisserie Chicken, but this would also be a great way to use leftover chicken breast.

My children will not eat anything remotely spicy so my husband and I must add crushed red pepper to our plates after serving, but I'm sure this would be even better if it was cooked in. Enjoy! -- posted by Chef #1506131

Ww Low Fat Taco Beef Skillet Dinner

Since starting Weight Watchers, I have missed the flavour of Mexican foods. But with calorie-filled toppings and wraps, they're not always diet-friendly. So I came up with this meal- it has the flavours of Mexican food without the majority of the calories and if you have extra points, you can even add a little guacamole or sour cream on top! It's worth using fresh salsa, not the jarred stuff for this recipe- it adds a lovely fresh bright flavour. Using extra lean beef, this recipe has a total of 19 Weight Watchers points by British points calculations. -- posted by Shuzbud

Winter Stew

Quick and easy, yet surprisingly delicious and hearty. Ground beef, potatoes, cabbage, broth and seasonings make this a fast and tasty dish sure to please your family! Serve with rolls or a nice crusty bread and sliced cheese.

I came up with this on one of those 'there's nothing in the house to eat' nights and the kids loved it! They named it Winter Stew because it was in the winter and it's been a winter staple on our menu ever since. We've also made this with Steak-Umm and it's great with that too! Just chop the Steak-umm into small pieces, cook, and remove from pan until adding the cabbage. -- posted by The Frugal Cheflady

Mexican Salad in a Tortilla (Ww 6 Pts)

This is a delicious recipe from Weight Watchers New Complete Cookbook.
The crunchy tortilla cups soak up the yummy dressing and become a treat on their own.
To make the tortilla cups use my Recipe #381215
The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. I think the cooking spray might be counted in the calorie count by WW. -- posted by Dreamer in Ontario

Chicken Cacciatore

This is out of the 2002 edition of KCTS Chefs cookbook. It was sent in by Executive Chef Chris Tess from Mama Stortini's Ristorante Restaurant. I decided to make this a 2 serving dish instead of 1 based on the calorie and fat count along with the huge restaurant amounts that are normally served. My only change was cutting the 8 oz chicken breast into 2-4 oz size. The rest of the ingredients stayed the same. -- posted by TeresaS

Coconut-Curry Chicken Fingers With Cashews

These are yummy healthy chicken fingers with a little crunch. Came out of a fitness magazine. Instead of layering on spinach leaves, I threw on top an Asian salad with some ginger honey dressing. I'll definitely make again. My only issue was with the coconut-cornflake-cashew mixture. I didn't have enough to coat all the chicken, so had to make more. But that was easy enough. -- posted by KT9791

My Stir "fry" (Low Fat, Low Sodium)

Not authentic! but does have an Asian flavor. I love stir fries but wanted something that works with my eating plan. Though I am still experimenting with this, here is my current version. It does not make extra sauce but is somewhat dry, because I don't eat it with rice. I lightly steam the veggies (sometimes I add chicken) in water or broth and then give them a very quick fry in a small amount of oil. The veggies are only suggestions - use what you like. If you are not concerned with sodium content, feel free to add more soy and/or peanut sauce. -- posted by coconutty

Southwest Chipotle Pork

An excellent Pulled pork recipe can be put on a bun or in a wrap. I usually use only 1 onion and 2 peppers. If you like spicy don't seed the chipotle peppers. I use 2 of them instead of 1.

If you wish to do this on the stove use medium heat for 2 to 3 hours and mind to add water, as a pot lets moisture escape and a slow cooker does not. -- posted by Matts Lotus

Creamy Leftover Chicken Surprise

I invented this recipe a long time ago and make it when I have leftover chicken. It's quick and made with simple ingredients. Feel free to make substitutions and experiment with it. Fresh or frozen broccoli. Cream of chicken soup or cream of mushroom. Any type of cooked chicken will do, but I prefer breast. If the leftover chicken has been marinated or seasoned, it will be a bonus. Any type of small pasta. Cheeses are flexible as well. I often use a combination of whatever I have on hand. Just be sure its sliced or shredded so that it melts quickly. It's a great all in one meal to keep on the stove on nights when family members are coming and going at different times. -- posted by veggienut

Stir Fry Maitake Mushroom & Beef With Oyster Sauce

This recipe is from a Japanese Mushroom company called Yukiguni Maitake Corporation. I bought some maitake mushrooms at a local japanese market and wanted to add the recipe here so that I can find it tomorrow when I plan to cook them! I would image you could use regular "gringo" mushrooms too. But I have read that the health benefits of maitake mushrooms is really really good- especially for cancer. -- posted by kda949

My mom made this all the time. My dad and I loved it. It is so simple to make it was one of the first things I made on my own. The basic recipe has only four ingredients. You can customize to your own taste. I would try it first the way it is and modify as you see fit. I sometimes add onion and garlic when browning meat. I also have some nice hot curry that I mix with my regular curry to spice it up a bit. -- posted by Deglazing Dad

Steamed Taiwanese Meatloaf

Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether. -- posted by Fluffkins
