Coconut Crunch Muffins

This is such a delicious muffin - fantastic for a breakfast muffin with a great cup of coffee!! You can replace the Europe's Best 4-Field Berry Mix with Caribbean Treasure. Simply chop up the frozen fruit before folding into the batter. To toast the coconut, place on a baking sheet and bake in a preheat oven (350F) for 8-20 minutes. Mix around every few minutes. -- posted by Chef mariajane

Cranberry Zucchini Muffins

I made this recipe based on one of Martha Stewart's recipes. I love cranberries in baked things...the tartness of them. Delicious!! The zucchini adds a little something without being the major flavor. Hope you enjoy them as much as I have!
Note: You can substitute the applesauce with oil, I just prefer to use applesauce. Also, the cups will be quite full when you fill them, but I haven't had any trouble with them spilling over. -- posted by rbrynsaas

Easy Blueberry Almond Scones

Inspired by Lalalous's recipe #371363, this simple scone recipe is so easy, you can make it in the morning before work! Raspberries work well, too - use almond extract if you're using rapberries! I use frozen berries (the individually frozen kind, not the kind in syrup) for these, and I like my berries, so my scoop of berries is more like a heaping 1/2 cup! -- posted by Katzen

Oatmeal Whole Wheat Quick Bread

I found this on AllRecipes, posted by Zoe. She says "There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!" I have personally made this a number of times as a quick accompaniment to warm soup. The original recipe calls for an oven temp of 450, but I find this gets too brown if I go that high. Also, I have made this as both a rustic round loaf and in a loaf pan. When I want to make a round loaf I put it on a cookie sheet. It does flatten a bit while cooking, though, so if I want slices instead of wedges I will put it in a loaf pan and tent w/ foil to avoid burning the crust. -- posted by smellyvegetarian

Easy French Onion Biscuits

Another quick and easy recipe. This was in a small Bisquick Recipe book I got years ago. I added the cheese, but can't take all the credit, but they are still really good. Just mix and bake. Five (5) minutes to make, 15 minutes to bake and on the table. The best part is that these are just as great for company as they are for every night.
Gluten Free Blue Corn Muffins

Funnily I cannot have yellow corn but am fine with blue corn - and managed to get some blue corn flour in Germany! This was my first approach to making corn muffins, and they turned out wonderfully moist. I suppose they can be made with yellow or white corn flour as well.
Healthy Whole Wheat Muffins

Well sort of whole wheat...half and half, but these are pretty tasty, easy to make, healthy for the most part, and very filling. I came up with this on my own with experimentation. The very slight hint of sweetness combined with the nutty crunch flax flavor is good stuff.
This is a Tyler's Ultimate recipe (with some minor tweaks for my taste) for berry scones, but the basic recipe is an absolutely perfect jumping off point for any flavor scone.
Homemade East Indian Chapati Bread

No authentic Indian meal is complete without some form of bread -- usually naan or chapati. Here is my recipe for chapati bread... one which I consider easy to make... unless you consider using a rolling pin work! This delicious flatbread is terrific plain or spiced-up and seeded. I've included seasoning options below for those who want a little more pizzazz in their chapatis. Enjoy it your favorite Indian entrees... with a refreshing cucumber-mint yogurt sauce. -- posted by Bazaar®
