Gourmet isn't a new concept, it's been around for a long time, but what I like the best about it is the often-thin crusts and unique toppings. It can be a a bit pricey, it's very easy to recreate at home using fresh local ingredients. The BBQ is the greatest place forthe pizza that I have, I just love griling the flatbreads, and making the pizzas, have fun with your adventures in making Gourmet Pizza!! -- posted by Chef mariajane

"pizza" Pasta Toss

A delicious pasta dish, that even the kids will enjoy, because of the flavor. A variation of this could be to omit the pepperoni, reduce vegetable cooking time to 5 minutes. Add 2 cooked and crumbled bacon slices, along with the cheese.

If using a very thick pasta sauce, reserve 1/4 cup of the pasta cooking water when draining the pasta. Gradually add the reserved cookng water to the finished dish until of desired consistency. -- posted by Chef mariajane

Tenderizing Beef for Chinese Cooking

I have no idea where I got this recipe; I found it on a piece of paper among all my lose recipes. I added a dash of Accent to the marinade and let the meat marinade overnight. The beef came out tender, I used the beef to make beef and broccoli. I used sirloin steak sliced thin for my beef. The recipe calls for 1 pound of beef. I didn't include marinating time in the cooking time. -- posted by Mainely Debbie

Southwestern Shrimp Salad

I made up this recipe one night, and really liked it so thought I would share. I made it for just myself so if you are making it for more than one person I would adjust the measurements. Speaking of the measurements, I apologize if they are off a bit. It's one of those things you have to adjust the amounts of ingredients to suit your individual taste. I just threw together without measuring anything, but the measurements I provided are my best guess for the best taste.
Also, I believe this would be good as a coleslaw type dish if you just omit the baby romaine and spinach and add a little more dressing. -- posted by WBChica

Mandarin Pepper Rice Salad

Tagliolini With Pecorino Romano and Black Pepper

Don't let the number of ingredients fool you, this dish offers a lot of flavor despite it's simplicity. Be sure to get high quality ingredients; it makes a big difference in a recipe with so few ingredients and it's still ridiculously cheap to make. Even the pepper is important, don't use the powdery stuff that's been sitting around for a year, splurge on some high quality peppercorns; you won't regret it.

The lack of oil is one of the most notable things about this recipe. While some add oil or butter to this dish, you'll find it really isn't necessary. Instead you use the starchy pasta water to create an emulsion sauce with your cheese which will stick to the pasta beautifully. As for the pasta itself, taglioni is a particular cut, but this recipe would work just as well with something thicker like tagliatelle or fettucine.

Although it's an old Roman favorite, I got this recipe from a recipe blog called "Rachel Eats" which I highly recommended. I wanted to post it on here to give it a wider audience. -- posted by OwlMonkey

Fire Roasted Tomato and Zucchini Vegan Pasta

This fantastic blend of fresh vegetables, fire roasted tomatoes and peppers, and pasta can be modified to include any seasonal vegetables. It's easy, healthy and delicious!
You can find fire-roasted tomatoes and fire-roasted peppers at most grocery store olive bars, including Whole Foods. If you don't have access to these, you can make your own, substitute sun-dried tomatoes, or substitute fresh versions. The beautiful thing about veggies is that there's no "right" way to do things!
You can also substitute basil or oregano paste or powder for the fresh version, if you need to - but fresh is best! -- posted by Mountain Bike Mom

Blackened Portobello Mushroom Salad

A SPEEDY cajun themed main-dish salad. Recipe from Cooking Light, May 1998. It is very highly rated on their website. After making this recipe, I have to say I was pleased. I marinated my mushrooms for about 30 minutes and they had great flavor. I used Emeril Essence (left over from another recipe) as the Cajun seasoning. My only suggestion would be to cut the mushrooms very thin so that they aren't rubbery after cooking. ENJOY! -- posted by JanuaryBride

Spicy Meatballs and Couscous

This title is a bit misleading--I don't find the dish to be very spicy, but some people do, hence the warning label. I made it up one night when I had fifteen minutes to get dinner on the table--I juggled my pots and had it ready in twelve! Don't worry if it sounds like it needs more herbs or spices, it is tasty as is. The peanuts are a South African thing to add--try it at least once. -- posted by GreenEyed Precious

Forget wasting time waiting in the McD's line. This healthy dish is more delicious, nutritious, and fast. All 4 of my kids love this because it is mild, not like most black bean dishes. To be sure, it is simple and plain, but sometimes that is the best. It can be supplemented with as many things as you can imagine--grilled chicken pieces, cheese, cilantro, tomato, black olives, green onions, etc., but we all love it just like this. -- posted by annlouise

White Sauce With Spinach

Here's an oldie from my collection. I use this when I make veggie lasagna, but I am sure it can be used as a pasta sauce. Easy to make. You can make the sauce richer by subbing whole milk, or by using cream or evaporated milk for part of the skim milk. Sometimes I melt a tablespoon of butter and make a roux with the flour before adding my liquid. Very versatile sauce. Note: Prep time does not include time for spinach to defrost. -- posted by Sweet PQ?

Easy and Delicious Stir Fry Sauce

This is so easy to make and tastes amazing on any stir fry. I usually use Chicken and loads of veggies, but pork or beef or even seafood would be great as well. The measurement are very approximate, as I NEVER measure when I make this. Just taste it as you go and adjust as you wish!
Easy Punjabi-Style Chickpea and Potatoes

I came up with this when I was in the mood for spicy potatoes, and immediately thought of my favorite side dish at the Jackson Diner buffet. This is a great sidedish but I also like it as a main meal too, with some rice or naan. Green peas would work in this recipe too, either as a third main ingredient or to replace the chickpeas, but I love the richness of the chickpeas and couldn't get over not only how close it was to Indian restaurant quality, but also how simple and quick it was to make! By accident better yet! You'll find it hard to believe it's homemade and from canned food better yet. The taste is very hot and spicy, and what I love the most is the way the kick sneaks up on you after a minute! :) Important note-- I created this dish by accident so I just ballparked the spices before tweaking measurements. This yields about 4 cups (I'd have about a 2-cup serving with one more leftover for the next day), so if you're planning on a potluck, larger amount to cook for your family, OAWC/OAMC, etc. you might want to use the multiplier on here to figure out the correct proportions for the ingredients. -- posted by the80srule

Tomato Spinach Spirals

I'm trying to feed my family of four on $10 or less for each night's dinner. I found this tasty recipe on the Taste of Home website. I made it and was surprised at how much I liked it. I'm posting it here for others who are budget-minded. The original recipe submitter said that it serves 6 people at 69 cents per serving. I'm posting it with the same serving size she had, but truthfully my family of 4 likes to eat more than that, so I doubled the recipe and had a bit left over for lunch the next day. -- posted by G.I.
One Pot Vegan/Vegetarian Rice and Lentils Dish - Khichdi

This is a popular dish in North India, and is quick, easy and fuss free. Everyone has their own way of doing it, and this is the way i do it. When i am exhausted and too tired to do much else, i make this dish. Other people use a lesser amont of lentil to rice, but i use a 50/50 cos thats the way my husband likes it, moist. Some people prefer it drier. The choice is yours. You can also vary the type of rice and split lentil you use, but then cooking times will vary. -- posted by Sudika

OAMC Basic Chicken or Turkey Taco Filling

This is a basic filling using cooked chicken or turkey and a chili seasoning packet for tacos, chili, or enchilada filling. I came up with this recipe on the fly after a busy day of work, school, and basketball practice using what I had in the refrigerator and pantry. I didn't have any taco seasoning, but had a lonely packet of chili seasoning from Aldi and used that instead. My picky kids, who were never keen on tacos before, loved it. This can be made ahead for tacos, chili, or enchiladas. Note: My kids do not like hot and spicy, so this is very mild. Add jalapenos or chipotle chilies to turn up the heat. Also my kids are small eaters, so I cut the tortillas in half and make mini wraps for them which works better for little kids than unwieldy tacos. OAMC: double the quantity and follow instructions below to freeze. -- posted by UrbanDesiMommy

Vegetarian Brown Rice Casserole

Vegetarian main dishes often require hours of chopping and cooking, and a laundry list of ingredients – but not in this dish. This easy casserole turns a can of vegetarian lentil soup into a hearty casserole with the help of nutritious, ready-to-serve whole-grain brown rice, canned vegetables, and cheddar cheese. Because all of the ingredients go into the casserole already cooked (canned vegetables are simply cooked vegetables in a can), all they need is a few minutes in a microwave before they are delightfully done and ready to serve. -- posted by Chef #1365024

Creamy Cajun Shrimp

This is a mildy spicy recipe for shrimp. I found something like it somewhere online under a blog and modified it for my own tastes. It was delicious, even my 7 year olds loved it! Great for the lower carb diet. I served this over a bed of green beans. -- posted by Chef #1530734
