			<title>Little Smoked Salmon Cucumber Cups With Peppered Creme Fraiche</title>

			<description>Delightful and EASY little smoked salmon and cucumber appetisers, and healthy too, with NO pastry! These are a breeze to make but they tick all the taste boxes, as well as being elegant. Cucumbers do vary in size, and I have suggested a medium cucumber, which is about 10&amp;quot; to 12&amp;quot; long.........however, any size will do!! Adjust the cr&amp;egrave;me fraiche to how many cups you yield from a cucumber, I managed to make 30 cups and used 10 tablespoons of cr&amp;egrave;me fra&amp;icirc;che for that amount, 1 teaspoon per cup. Serve these with cocktails and pre-dinner drinks, or as part of a buffet. The cucumber cups and cr&amp;egrave;me fra&amp;icirc;che can be prepared beforehand, but these should only be assembled 1 hour before serving (at the most) and covered in cling film to ensure the smoked salmon does not dry out. 			<description>You could serve this as a 1st course for company; it is not your usual mayo/tuna salad. The addition of fresh mushrooms and green peas really does the trick. I usually make a lighter version where I will strain the whey out of some plain yoghurt in a sieve and use 1/3 strained yoghurt and 2/3 mayo. If using this method the yogurt must be drained really well. This is a great, sorta spicy but refreshing beer cocktail that pairs well with Salt &amp;amp; Vinegar chips and Mexican Novellas!  Sort of like a Mexican Bloody Mary..  All the ingredients are adjustable to your own taste; want it spicier?  Add more hot sauce.  Tangier?  More lemon! The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. 			<description>I was taught to make this Aioli in Spanish cooking classes, it is basically a fast way to make an real (or almost real) Aioli without resorting to using pre made mayonnaise. It tastes great and takes under 5 minutes to prepare. 

You will need a thin tall measuring cup or jug and a hand held (vertical or stab) blender. 

If you don't like garlic, you can make without. 

You can add things like herbs (fresh or dried), black pepper, smoked paprika or other things you like. 

Experiment with the amount of oil and lemon juice.

			<description>This recipe was from Family Circle Magazine Dec. 2009. It was considered to be a healthy recipe choice for those having parties with lots of food and drink. I made them for a meeting and they were a hit. I think you have to serve them with other things because despite being healthy they are a bit rich. I like them as a great alternative to the usual cheese ball. The nuts give it crunch and the two cheeses with the three fruits was very unique. This is not for someone who doesn't like cheese though. Perfect for the holidays, New Year's parties or anytime you need a no cook appetizer.

I love these kinds of appetizers because they don't take much time, this one is vegan -- so almost anyone can eat it. I like to serve them with Pita Crisps: preheat oven to 375&amp;ordm;F. Split 6 pitas hrizontally into circles, then cut each circle into 6 triangles. Lay them in a single layer, rough side up, on 2 or 3 baking sheets. Use a pastry brush to brush triangles with olive oil, then sprinkle with fennel seeds and a pinch of sea salt or instead of fennel and sea salt use Mrs Dash salt free seasonings. For example: Table Blend, Original or Garlic &amp;amp; Herb, these have a flavor all their own -- try it you might like it.
