Lemonade Scones

I found this recipe on a blog site. It sounded really good and easy so I wanted to post it. Recipe is by Chris Chun.
Serve with strawberry/ raspberry jam and whipped cream. Also good with a cup of tea or coffee.
Want to try something a little different? Put a little lemon zest, basil or mint in for that extra zing! Try using Ginger ale for a nice change of flavor. You could just use soda/carbonated water and flavor the scones as you would like (half a cup.) -- posted by sexymommalucas

Chocolate Cheesecake - Caramel Macchiato Trifle

I Invented this for Thanksgiving dinner, and it got rave reviews! If you have more time to prepare, I would suggest substituting real whipped heavy cream for the Cool Whip. You can also use Kahlua instead of Starbucks liqueur if you prefer. Time does not include the preparation time for the brownies or mousse. I usually make them a day ahead to make things easy on the day I am serving the trifle. -- posted by Cooks4_6

Savory Muffins With Goat Cheese, Rosemary and Kalamata Olives

Savory muffins to serve with soups, a big salad or on their own for healthy snacking. This recipe was in Pam Anderson's CookSmart column in the USA Weekend paper, Feb 20, 2009. If you want something delectable and nourishing and don't mind messing up four or more different bowls, this recipe is a lucious hit every time. I replace the sugar with agave or leave it out sometimes. These freeze fine, if well-packaged, to add quick pizzazz to a dinner for many or just take one out to reheat solo. I believe this is from her newest (fifth) cookbook called "The Perfect Recipe for Losing Weight and Eating Great".
Microwave Pecan Toffee

Very easy, every day ingredients and quick. I believe the recipe said you could use pecans or almonds, but there are plenty of almond toffe recipes and besides, I like pecan toffee! I got this recipe from a cookbook, but can't remember the one. I have made this many times for work parties, christmas presents, bake sales and family. Everyone loves it! -- posted by suseme

Lemony Sweet Carrots

I discovered all of my lemonade mix was gone except for 1 tblsp. I had just opened a can of sliced carrots. This recipe was born. So simple but makes carrots delicious. Double the recipe for two cans of sliced carrots if you wish. You may use any sugar variety including Splenda blend brown sugar.
I had requests to serve more than one can at the next meal. -- posted by Montana Heart Song

Homemade Kahlua from 15 Romolo. Better Than Storebought

Scott Baird, the mixologist at 15 Romolo's recipe makes kahlua with more flavor, thicker and richer by adding dark rum to vodka or light rum as well as whole coffee beans before filtering. It takes a full 3 weeks so start now if its for christmas gifts :) He suggests using Pampero rum for the dark, but any good dark will do.
Cranberry Orange Holiday Relish

There are many versions of this basic recipe. This little riff adds a little extra color and crunch to an already delightful side dish that is rich in both flavor and fiber. Add different fruits, and it becomes yet another kind of salad, beautiful in its ruby-redness, especially on a bed of greens. Note: the toasted pecans are nice added the day before serving, but as time goes on, they become less crunchy - but still add a great flavor. This relish can be held in the refrig for a week or so, and can be frozen as well. -- posted by MaryRich

Taco Seasoning Mix

I found this recipe on southernfood.about.com and it works great. I use it to season rice or tofu although it would work great with meat as well.
Cucumber and Strawberry Salad With Pimms Dressing

An elegant summer salad dish that is wonderful served on the side of poached cold chicken. Pimms has become a traditional English alcoholic summer beverage, its a bit like sherry or vermouth and is best served in tall glasses with soda water, lemon, strawberry and cucumber slices. Its actually the cucumber that makes the drink special I think. I've tried to capture this, I think to good effect in this salad and I hope you enjoy it as much as me -- posted by robd16

Barbara's Fruit Roll

A dear friend brought this delicious sliced fruit roll when I was very ill as a teenager. That was many years ago. I loved it so much and she graciously gave me the recipe. I have made it almost every Christmas since then. It is a bit easier to make today. Thanks to the "boxed crushed graham crackers" I no longer had to crush the graham crackers between layers of waxed paper with a rolling pin. It keeps well in the refrigerator for several weeks. It is also very nice for a New Years Celebration. Enjoy!!! -- posted by Chef #1416334
