			<description>This soup is a family favourite. It's a great way of using left-over winter vegetables and also sneaking a few more vitamins past the kids.
Adding the cabbage towards the end helps preserve its flavour and prevent the dreaded &amp;quot;boiled cabbage smell&amp;quot; permeating your kitchen! Experiment with different flavours and this will soon become a trusty warming soup for chilly winter's days. This soup freezes really well. This is the pressure cooker method but you can do it the traditional way using a large pot &amp;amp; simmer the soup until the lentils, beans &amp;amp; chick peas are tender. Feel free to add some stock / bouillion cubes to this soup along with any additional spices you might like. I have added chicken to this on occasion too. This is the first version of Makhlouta, I will be posting another version too. 			<description>I found this recipe on lowfatlifestyle.com last week and was intrigued by it. I'm always looking for new dishes to make when our son and his wife come for dinner. They're vegetarians and we aren't, so sometimes  grilled cheese or mac and cheese get old. So, I haven't tried this yet, but am posting it for safe keeping.  
Warning:  cardamom and garam masala are expensive spices and this recipe only uses a little. 			<description>From the Cook's Illustrated website: Lentils du Puy, sometimes called French green lentils, are our first choice for this recipe, but brown, black, or regular green lentils are fine, too. Note that cooking times will vary depending on the type of lentils used. Lentils lose flavor with age, and because most packaged lentils do not have expiration dates, try to buy them from a store that specializes in natural foods and grains. Before use, rinse and then carefully sort through the lentils to remove small stones and pebbles. The soup can be made in advance. After adding the vinegar in step 2, cool the soup to room temperature and refrigerate it in an airtight container for up to 2 days. I've also used chicken broth instead of vegetable broth, which also works well.  Rinse lentils right before adding to soup so they won't stick together. 			<description>This is derived from a turkey vegetable soup my Mum used to make the day after Thanksgiving and Christmas, using leftover turkey meat. I tend to use lentils these days instead, with everything else staying pretty much the same. Obviously this is delicious with the meat as well if you prefer, but when you use lentils you don't miss the meat at all! Very easy to make in bulk to keep as leftovers, and it freezes very well. The recipe lends itself well to versatility: just put in about a can's worth of whatever you want, adding a cup of broth for each cup's worth of ingredient. The main ingredients (lentils, ham, mushrooms, carrots, celery, onions) can cook all day in either a crockpot, or a stove-top pot - although I have always made it in a crock pot.  The addition of mushroom soup, beef boullion granules and parsley help with the overall taste and seasoning.  This recipe is easily adjusted for personal taste (can omit one of the vegetables, or add more/less of one) and takes very little preparation time. I don't use the onion, garlic or bell peppers, personal preference. The Homemade Boullion Cubes and Vegetable Broth Powder are recipes in the same book. They look time and labor intensive and I haven't made them yet - I skip them and put in the tamari. 			<description>I admit, the first time I used a pressure cooker I was a little afraid. I left my studio and stood on the other side of the door to avoid severe burning and disfigurement if my pot of legumes exploded. I called a friend to ask her if I was doing it right. But now I see the pressure cooker like a trusted friend who only wants to save me some valued time. So when I saw this lentil recipe in Veganomicon by Isa Chandra Moskowitz and the preparation time of 1 hour, I was so glad I had a pressure cooker to cut the time by nearly two-thirds, borrowing a technique from the Spanish and the Lentils with Chorizo Sausage Recipe (Recipe #342592). The first thing I did was skip the step where you saut&amp;eacute; the onion and carrots for 10 minutes. It's unnecessary, and you'll find that my method makes a soup with a smoother, more pleasant consistency by cooking the vegetables whole or halved, then removing and pureeing them afterwards. My kitchen has a surplus of brown lentils, so those are what I used. I'm going to keep the brown lentils in the recipe because I don't know if French lentils require more liquid. One thing I want to try for next time, since I used bouillon cubes, is to break them up and try to dissolve them in step 2 rather than prepare the stock ahead of time, and I plan to cut down the salt next time. I find the best way to seed plum tomatoes is to cut them in half and sweep out the seedy parts with your index finger. 			<description>A couple of notes about this recipe. 
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast. 
Secondly, I usually soak my lentils beforehand because it makes them cook quicker. 
Third, I put &amp;quot;2 oz&amp;quot; of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.
