			<description>This healthy soup is enjoyed throughout the middle east, and although simple in preparation and ingredients, is a very flavorful soup. The taste will be richer with organic ingredients, this goes in particular for the tomato.
Prep time is just washing lentils, the rest of the cutting is done while lentils are on the stove.

			<description>Don't let the word &amp;quot;Simple&amp;quot; fool you; it's a fairly easy recipe to make, but results in the loveliest of flavor complexities. The mashed garlic, cloves and cinnamon give the lentils a lovely, warm aftertaste and a heavenly fragrance.  Whole spices are cooked in a bit of oil to infuse it with their flavor before the lentils are added and a fresh tempering oil is also used to finish the dish. This can be a of a stew-like consistency or like a soup depending on your preference. Add more water to thin, less to thicken. Puree a bit of the lentils for a smoother dal. Really nice over basmati rice!

As one reviewer has commented this isn't a spicy Indian dish and therefore makes a great accompaniment / side dish to othe rspicy curries. For a complete Ethiopian feast, make this dish with (other recipes from my book):
- Cabbage of Ostracism
- Tofu Dorowat (if you like tofu, or are accomodating a vegetarian... chicken otherwise)
- Beef Stew in Berbere Sauce

Making these four dishes together, you can:
- Pick up one lg white onion and chop it finely.  Split it four ways between the dishes.
- Pick up one 28-oz can of crushed tomatoes and split it between the Dorowat and Beef Stew

Start the beef early, then the dorowat.  Then, do the lentils (assuming pre-cooked potatoes) and cabbage.

Beluga lentils are small, plump black lentils that are available in specialty gourmet stores. They have a delicate flavor and a slightly firmer texture than small, green French lentils. Though this dish was served alongside Brian Alberg's roasted baby chicken with foie gras stuffing, it is a simple, elegant accompaniment for a multitude of basic dishes. Our recipe tester served it with roasted cod and tomato sauce and was pleased with the way the lentils, fragrant with smoky bacon and herbs, paired with the sturdy baked fish. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect.
