Easiest Lentil Soup of All Time

This could probably be sold in a jar as "Insta-Lentil Goodness: Add Water and Boil." I think it would cost $3. Any variety of spices can be used...sometimes I'm lazy and just buy a can of diced tomatoes that is already flavored with Italian spices or Zesty Chili flavor, or whatever. I also throw in a tablespoon of cumin and/or chili powder from time to time. Sometimes I don't add any spices and enjoy the simple flavors by themselves. -- posted by Serah B.

Lentil Barley Stew

This is a simple, hearty stew adapted from the More with Less Cookbook. The crushed red pepper is my own addition, and of course it's optional if you don't like that sort of thing - but I like it to have a little zip. -- posted by pattikay in L.A.

Souped up Lentils

This is for lentil lovers. When I saw the RSC#9 ingredients, I knew I had to come up with a recipe for lentil soup or dahl. This is a bit of both -- a thick-ish lentil soup or a watery dahl. It is very quick and easy to make, and very warming on a wintry day. Use vegetable stock to make it a completely vegetarian dish.------ -- posted by Leggy Peggy

Turkey Lentil Ragout

I got this recipe from a Williams-Sonoma cookbook and I love it because it is hearty but not fatty, extremely flavorful, and easily adaptable to large crowds -- not to mention unique, delicious and healthy! You can substitute any meat for the turkey. I'm not a mint lover so I usually do a little more parsley than mint. Don't let the length of the recipe fool you...it's mostly just spices. Serve this when you want to impress company while making an easy meal! -- posted by Gina Farina

Beefy Rice Pilaf With Lentils

Lentil Burritos

My Fiance has decided that he isn't overly fond of lentils. When I prepare them this way he doesn't seem to complain as much. The burrito get this lovely crunchy bottom to them that is almost like pastry. It is my favourite part. These are very filling! One is often enough.
I found this recipe ages ago as a base for a vegetable stew. I have yet to get to the stew part. These two ingredients make a complete protein and I find it very satisfying.
Veggie Loaf

This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling. -- posted by Prose

Friendship Soup Mix

My favorite. My mother gave me this recipe in 1998 when I left home. I missed the home cooked soup that she made all growing up and asked her for the recipe. She made it and wrote it down for me. I am sorry for those that think it came from a 1999 book; isn't it great how a recipe is recycled and recycled over time everyone will have the same thing their grandparents ate and think it is cool. Have fun with this recipe and use different beans, veggies, and amounts. It is fun to play with! -- posted by shysavsianna

Lentil and Wild Rice Loaf

We frequently make this for Thanksgiving or Christmas for the vegetarians in the family. It's very nutritious and yummy and it goes great with the rest of the traditional holiday meal. You can make it ahead of time and then just pop it in the oven to heat up before the meal. Always serve it with the cashew gravy recipe I'm about to post separately. I'm not sure of where this recipe originated, but I got it from my sister years ago. I apologize for the some of the amount guestimates on the broth and spices as it's been a while since I've made it and we never had a real recipe, it's just scribbled on a piece of paper. -- posted by Sandy in California

Spicy Lentils

Cooking time for lentils can vary from 15 minutes to as long as 1 hour, depending on the type and age of the lentils. Red Lentils (which turn yellow when cooked) cook very quickly because they are split and after 15 to 20 minutes they soften to a puree. Brown lentils hold their shape better but can take longer to cook. Serve this soupy stew-like dish in a shallow bowl over brown rice.
Veggie Burger

Like many vegetarians, I'm always searching for a delicious veggie burger. I recently had one at a restaurant, that made me start the search again. My husband and I were pretty sure that it included garbonzo flour, rice, sesame seeds, hickory and broccolli. I've been searching for another burger recipe with some of these ingredients and found this one. I'm not vegan, so I might add eggs for binding and switch ground up broccoli for the tomato paste. I'll probably fry them up in olive oil or grill them instead of baking them. It's from www.all-creatures.org, and below find the description from there.

This recipe will make 12 thick veggie burgers. They are great when eaten fresh out of the oven or after being frozen and reheated. Freezing the veggie burgers is a great way to have quickie meals when the need arises. -- posted by Kendra PeloJoaquin

Adapted substantially from a recipe in a recent issue of the Australian magazine ‘New Idea’. Instructions have been included for freezing this dish in a 10-cup capacity ovenproof and freezer-proof dish. If you are choosing to freeze all or some of this dish, you may find it more convenient to use several smaller dishes. If you are doing this, remember to adjust the cooking times: obviously, smaller portions will cook more quickly. -- posted by bluemoon downunder

Mexi Lentil Rice

this is an easy side or main dish. the cheese is optional. we eat it as a main dish. I can't remember where I got the beginning of this recipe but I have adapted it so much I don't think it would be recognized anymore. I make this in a crock pot but it could be made in an oven in a covered dish at 350 degrees for 1 1/2 to 2 hours. I've never tried making it on low heat so I don't know how long for that. -- posted by ReLiveLY

Lentil Barley Soup

From fatfreevegan.com, adapted from NewCenturyNutrition.com

Based on a recipe by J. Raymond

Thick enough to be called a stew, this hearty soup is easy to prepare and cooks in a single pot. Add more water or stock if you wish to have a thinner soup.

Pearl barley is the variety most commonly sold in supermarkets. Natural food stores offer hulled barley, which is slightly less refined and cooks in about the same amount of time. -- posted by Chef #1109421

Lentil Minestrone Soup

A satisfying main dish soup from "The Best Vegetarian Recipes" by Martha Rose Shulman. The pasta and rice absorb a lot of the liquid, so the soup is thick (add more water if you want a brothier soup). Advance preparation: The soup is even better if it's made a day ahead of time; but don't add the pasta or rice or parsley until you reheat. Then proceed with step 4. It will keep for 5 days in the refrigerator and for 3 to 4 months in the freezer. -- posted by blucoat

This delicious and simple recipe is from Chef Jennifer Iserloh of New York City (aka "Skinny Chef") and was printed in this month's Self Magazine (February 2009). Following the recipe results in an al dente lentil with a little chew to mimic the texture of ground beef.
Spaghetti With Lentil Bolognaise

A versatile vegetarian bolognaise and a great way to get some nutritious lentils into your diet! Adapted from a recipe I found online. I love the vegetables that were in the original recipe but you could vary them depending on what's in season, what's reasonably priced and, of course, to meet your taste preferences. I just had to add a leek as I love the subtle blend of flavours from onion, garlic and leek cooked together. And when I made this I used probably double the 15 mushrooms included in the original recipe! :) Vary the herbs to meet the whim of the moment! -- posted by bluemoon downunder

Easy One Pot Lentils and Rice

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect.
Pasta With Lentils

A couple of notes about this recipe.
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast.
Secondly, I usually soak my lentils beforehand because it makes them cook quicker.
Third, I put "2 oz" of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.
Also, you can do it with rice instead of pasta if you so desire! It's equally as yummy! -- posted by michelle!

Imitation Meatloaf (Vegetarian)

I found this recipe on allrecipes. com and I want to try it as I dislike ground meat and so I haven't had much luck with traditional meatloaf. I am hoping this turns out well and I am keeping it for future reference here. -- posted by arualanne

Braised Lentils

from the Food Network Canada show called The Main. I tried it tonight and it was pretty tasty! I'm a big fan of lentils anyway but I've never had them with bacon. The lentils are done in 2 steps remove the pre-cooking items before moving on to the braising. Prep time includes both steps -- posted by LizzieLou

Ade (Adai or Lentil-Rice Crepes)

This is yet another South Indian recipe for a type of dosa made from lentils and rice. It is nutritionally very dense and delicious! Serve with peanut-garlic chutney podi. -- posted by Dimpi
