Lentil Soup Express

I have had this recipe in my recipe box forever. It is such a quick and easy lentil soup recipe that is thick and hearty, not watery. Sometimes, instead of the parsley, I put in spinach and it wilts down and tastes great!!! -- posted by Little Debbie

Lentil-Lima Bean Soup With Smoked Ham

This is a twist on the traditional lentil soup, as it uses lima beans and smoked ham in addition to the lentils. It is from the R.S.V.P. section of a December 1985 issue of Bon Appetit magazine and was requested from The Buttercup Bakery in Berkeley, California. This recipe doubles or triples well and also freezes well. -- posted by Leslie in Texas

Ragout of Beluga Lentils from the James Beard House

From Leite's Culinaria http://www.leitesculinaria.com/recipes/jbh/beluga_lentils.html
(by Brian Alberg
from Terra Mar Grille
Saybrook Point Inn & Spa
Saybrook, CT)

Beluga lentils are small, plump black lentils that are available in specialty gourmet stores. They have a delicate flavor and a slightly firmer texture than small, green French lentils. Though this dish was served alongside Brian Alberg's roasted baby chicken with foie gras stuffing, it is a simple, elegant accompaniment for a multitude of basic dishes. Our recipe tester served it with roasted cod and tomato sauce and was pleased with the way the lentils, fragrant with smoky bacon and herbs, paired with the sturdy baked fish. To increase the yield, simply double or triple the ingredients proportionately. -- posted by Chef Gruyère

Walnut and Lentil Pate

I found this recipe on the safe.org.nz site and found it too dry - the addition of low fat cream cheese made it just what I wanted - I take it to work to spread on toasted bagels for lunch.

I use two 400g tins of lentils, rinsed and drained.

I guess it could be made vegan by swapping the cheese for tofu. -- posted by Moyni

Vegetarian Bobotie

This is my own vegetarian adaptation of the traditional Cape Malay dish of my country. I have tried to approximate flavour and texture as closely as possible and have retained all the ingredients my mother used when making it - aside from the mince, of course :) This project has been very important to me as most of the vegetarian versions I have found online so far are rather inaccurate. Bobotie was one of my favourite dishes as a child and I wanted to preserve and share that memory as much as I could. -- posted by Cora_and_Clarice

Lentil Tomato Pie

A deliciously filling pie loved by vegetarians and meat-eaters alike. Perfect for taking to picnics and potlucks or served with soup on a winters day. A pre baked bought pie crust can also be used. The pie crust works well with both wholewheat and half and half flour as it gives the crust more substance, however, white flour can be used if preferred. This pie can also be made without a crust on top. It works just as well, cuts down on fat and still looks and tastes delicious. -- posted by the_allergic_chef

Lentil and Vegetable Stew

This is a great recipe for toddlers, especially if you are vegetarian or have a baby who is not fussed on eating meat. These simple ingredients cook up easily and the recipe makes at least 10 servings and is good to freeze. -- posted by Kiwi Kathy

Refried Lentils

Threw this together one day when I had nothing in the fridge (save condiments). Lentils cook much, much quicker than dried pintos, and have more protein and fiber. I used my mini-slow cooker, but can be made in a pot on the stove top. Makes 2 servings for a main course with tortillas or chips, 4 servings as a side. -- posted by catwolf

PIMENTOS and YELLOW SPLIT PEAS in a creamy sauce over TORTELLINI make for a filling, protein-rich vegetarian dinner. The mozzarella complements the pimentos, which in nature are bright red and appropriately shaped like a heart...just perfect for a Pretty Young Thing.
I found this in a Cooking Light magazine. It's quick & easy! My kids (8 & 10) even liked it, but using 1 tsp of red pepper made it almost too spicey for them.
Lentil Vegetable Pottage

From "Complete Candida Yeast Guidebook" by Jeanne Marie Martin. I changed the recipe a little: less celery, more carrots, a little more salt. I don't use the onion, garlic or bell peppers, personal preference. The Homemade Boullion Cubes and Vegetable Broth Powder are recipes in the same book. They look time and labor intensive and I haven't made them yet - I skip them and put in the tamari. She suggests simmering the tamari to kill any yeast or mold in it, but I don't know why you would have to in this recipe, since the tamari is cooked for at least 15 minutes. -- posted by Jetta

I admit, the first time I used a pressure cooker I was a little afraid. I left my studio and stood on the other side of the door to avoid severe burning and disfigurement if my pot of legumes exploded. I called a friend to ask her if I was doing it right. But now I see the pressure cooker like a trusted friend who only wants to save me some valued time. So when I saw this lentil recipe in Veganomicon by Isa Chandra Moskowitz and the preparation time of 1 hour, I was so glad I had a pressure cooker to cut the time by nearly two-thirds, borrowing a technique from the Spanish and the Lentils with Chorizo Sausage Recipe (Recipe #342592). The first thing I did was skip the step where you sauté the onion and carrots for 10 minutes. It's unnecessary, and you'll find that my method makes a soup with a smoother, more pleasant consistency by cooking the vegetables whole or halved, then removing and pureeing them afterwards. My kitchen has a surplus of brown lentils, so those are what I used. I'm going to keep the brown lentils in the recipe because I don't know if French lentils require more liquid. One thing I want to try for next time, since I used bouillon cubes, is to break them up and try to dissolve them in step 2 rather than prepare the stock ahead of time, and I plan to cut down the salt next time. I find the best way to seed plum tomatoes is to cut them in half and sweep out the seedy parts with your index finger. The soup you'll get from this is addictively delicious and filling, and you'll feel like a genius for owning a pressure cooker. -- posted by Valeria

Easy One Pot Lentils and Rice

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did! -- posted by Chef #1082457

From Neva & Jim Brackett's 7 Secrets Cookbook. Makes a very healthy meal that's delicious!
Yummy Indian Crunch Patties / Lentil & Chickpea Masala Vedai

I finally got the blades to go back on that $*%#@! food processor correctly so I've been making lots of fritters. (Preferably all at once and freezing so A) I don't have to scramble looking for something to eat between classes, and B) I hate washing that cantankerous odious thing and the less I have to wash it out, the better.) I found a website (if my brain was working right now I could remember what site it was) that had lots of cool Indian and vegan recipes. I browsed through many then I got this idea for some spicy fritters that didn't involve me getting up to go back out to the store; I'll probably be posting fritter/crunch patty recipes all week. These are not quite bhajia, not quite masala vedai, but they're tasty. And vegan! Yields about 10 crunch patties. -- posted by the80srule

I found this in an old Good Housekeeping Magazine (Dec. 2005) in my Dr. waiting room. We love it and it freezes beautifully. You can sub turkey Italian sausage for the regular. Don't skimp on the fennel, it makes the dish. I also disregard the amounts of salt and pepper and just season to taste (it does need a bit more salt than stated in recipe). -- posted by Aubergine910

Lentils With Cumin and Asafetida

This is a wonderful Indian lentil side dish. Asafetida has a very strong, musky smell that many people find unappealing. Store it in an airtight container to prevent it from contaminating your other spices, and if you really don't like the smell, keep it in the freezer--I left it in my car for a little while and everything in the car smelled like it afterward. Despite the strange smell, I have not yet met anyone who dislikes the flavor once it's prepared! This recipe comes from a cookbook called Madhur Jaffrey's Spice Kitchen.
Pasta With Lentils

A couple of notes about this recipe.
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast.
Secondly, I usually soak my lentils beforehand because it makes them cook quicker.
Third, I put "2 oz" of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.
Also, you can do it with rice instead of pasta if you so desire! It's equally as yummy! -- posted by michelle!
