Tomato Salad with Feta and Olives

The best time to make this is when the tomatoes are in season. If you love tomatoes, you will love this salad, as did my guests. This is not a complicated salad and you would think it came from a gourmet restaurant. I found this gem of a recipe in the Fine Cooking Magazine. -- posted by heather in Ont,

Good For Health: Bean Sprouts And Almond Salad

My latest favourite salad. This is VERY GOOD for health! Preparation time does not include the time required to soak the whole green moong(lentils) and then drain the next day and keep aside to get sprouts on the following day. It takes 3 days for that. -- posted by Charishma Ramchandani

Good for Health - Crostini Salad

Did you know that the water content of lettuce is as high as 96%! Moreover, this is the vegetable that's lowest in calories! When shopping for lettuce, always buy dark coloured leaves since these are more nutritious, higher in iron and beta carotene than the light green ones. The best way to store unwashed lettuce in your kitchen is in the vegetable crisper, loosely packed in a plastic bag or in a covered container in the refrigerator. Use lettuce within 3 days from the day you buy it. This is the best thing that I got to learn today - 2 leaves of lettuce have just 1 single calorie!!!!!! I hope you enjoy this recipe and munch on some lettuce instead of biscuits the next time hunger pangs take their toll on you!;-) This is Chef Sanjeev Kapoor's recipe from the Young Times magazine. -- posted by Charishma Ramchandani

Pucker up! This is a tangy, lemony vinaigrette that's perfect on a simple green salad, drizzled on sliced tomatoes, avocado or tuna, or anything else you can dream up! A little goes a long way, and correct seasoning with salt if you wish, but I find that salt isn't needed with this amount of lemon juice. -- posted by EdsGirlAngie

Western Dressing

This dressing can also be used as a marinade for meats. From "Cooking a la Heart"- Delicious heart healthy recipes from the Mankato Heart Health Program. When I was little, the only time I had salad was at my grandma's house, and it could only be with Western dressing. Ok, that still holds true. But still, I figure a home made version of the dressing would be pretty cool! Oh, and have you ever tried just putting some ketchup on a bowl of salad? It's great- (Just don't put too much on- less than a tablespoon is perfect for a bowl). -- posted by Bec

Lemon Salad

This recipe is Moroccan in origin and makes a piquant, refreshing appetiser. For a touch of authenticity, serve several different Moroccan salads in small bowls at the beginning of a meal. I’m posting other salads for you to choose from. This recipe is borrowed from “The World of Spice” and is posted for Zaar World Tour 2005.

NOTE: The original recipe calls (not very helpfully in my opinion) for ½ wine glass of olive oil. So, how much oil is that? As standard sizes of wine glass are either for 125ml or 250ml I’m going for the smaller, healthier option; which equates to about ¼ cup. Feel free to add more if olive oil if you wish. -- posted by Mrs B

Leeks With Olives and Feta

A highly flavoursome low calorie vegetable dish which is ideal for a Greek-style meal, served with other salads, warm pita bread or warm crusty bread and an assortment of dips. A great dish if you love leeks! This recipe has been adapted from an International Master '1001 recipes for pan or wok' card and has been posted for the 2005 Zaar World Tour. I use my Recipe #135453 when making this recipe.
Spiced Eggplant (Aubergine) Salad

A Middle-Eastern-influenced Greek salad which is great served with warm pita bread or crusty rolls as a starter or as one of several mezze dishes, or to accompany grilled meats or pilaf. I have adapted this recipe from one I found in 'The Taste of Greece' and I am posting it for the 2005 Zaar World Tour. When I've made this, I just haven't noted how long it takes to grill the eggplant, so the 10 minutes below is a guesstimate. I have not included the chilling time required in the calculations for preparation and cooking times. This is very much a prepare-ahead salad. -- posted by bluemoon downunder

Green Peppers and Peaches Salad

When I first came across this recipe in 'real greek food', I began to appreciate what Greek chef and restaurateur Theodore Kyriakou meant when he said that "the term 'Greek Salad' is one of the most abused in the world. Greece (he proceeded to explain) has a large range of interesting and novel salads, nearly all of which require the ingredients to be wilted first, plus several interesting vegetable accompaniments". His recipe for Green Peppers and Peaches Salad is one such recipe. I am posting it for the 2005 Zaar World Tour. He describes this recipe as "a novel configuration of sweetness and tang". It's certainly very different from what is generally served to non-Greeks as "Greek Salad" in Greek restaurants, and from any other salad I've ever eaten! If you're feeling adventurous, you'll give this recipe a try! -- posted by bluemoon downunder

Apple Lemon Basil Salad

This awesome salad is a "No Cook", "Simple" and (if you have a food processor) "20 Minutes or Less" recipe. It's a shredded salad that is easily adapted to smaller or larger servings and would be great for a potluck or bbq. The dressing is lemony and tangy. Use whatever apples appeal to you, but I don't recommend Granny Smith. A bit tart is okay, but the dressing is tangy and a sweeter apple helps balance that. I used Pink Ladies. The salad did fine overnight in the refrigerator, I was happy to find that the apples did not discolor and stayed crunchy overnight. -- posted by Mrs Goodall

Suzanne Somers' Green Beans and Vinaigrette

Green Beans with a garlic vinaigrette. Can serve this hot or cold and the vinaigrette can be used over other vegetables or as a salad dressing. I find that if you make the vinaigrette in advance, it allows the flavors to blend and infuse the oil. I have added Parmesan cheese, Emeril's Essence spice mix and even some splenda and honey. My kids loved it. You could use the dressing as a base and just add ingredients to taste (Dijon and Worcestershire work well too). -- posted by Oolala

Another Tahini Salad Dressing!

Classic English Salad Cream - Oil Free Salad Dressing

The salad cream that most of us in the UK know, love and use was invented by Heinz in 1914 and was very popular with working classes; a truly socialist salad dressing if you will. However, its popularity waned in the latter part of the century, with the arrival of the decadent mayonnaise, flaunting its Continental French and Spanish roots and pushing the humble salad cream to one side. However, like any good socialist, salad cream would not go away and still remains a firm favourite in the UK with people who have refused to climb that social ladder to mayonnaise!! My recipe for homemade salad cream comes from Mrs Beeton's cookbook originally, but I have made some modifications. Mrs Beeton uses quite a lot of vinegar in my humble opinion, but the recipe is flexible so add more if you wish. I prefer salad cream when I am trying to cut back on fat - plus I rather like it's tangy flavour, and it is truly wonderful when spooned over hard boiled eggs or fresh lettuce leaves. Or, try it in sandwiches and dips, for a lighter taste to mayonnaise. -- posted by French Tart

I was attending a dinner party where the theme was Spanish food, and I was responsible for bringing a salad. The funny thing about Spain is that their salads are either super plain (e.g. a couple of tomatoes and some greens) OR contain meat, in the form of fish or cured ham of some kind.
