TVP is textured vegetable protein. It is highly nutritious, has twice the protein of beef, and it has no fat or cholesterol. It absorbs the flavors of the other ingredients in the recipe while offering the texture and appeal of ground meat. Packaged TVP granules are available in health food stores, grocery stores and online.

			<description>I found this recipe in Conveniently Vegan by Debra Wasserman.  I made it for Christmas Eve dinner.  It's a wonderful vegan alternative that doesn't involve tofu.  This dish involves using several different pots and pans but is well worth the effort.  I made it the day before then baked it.  It worked out well.  I wrote the recipe exactly as it appears in the book.  I used a little almond milk and earth balance in the potatoes to make them creamier and more spreadable.  I also used fresh spinach instead of frozen. When I made this recipe, I only needed one box of lasagne noodles because the veggie mixture was so plentiful that I couldn't fit in another layer. The flavor is great, and I think you could use rotini noodles and bake it in a casserole dish for an easier preparation. (Leave the sweet potatoes in chunks if you do that.) Notice that the recipe doesn't call for any oil. Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up. 			<description>Found this in a supermarket checkout cookbook years ago and it's still a family favorite. One important step is getting the water removed from the spinach as much as possible; after I drain it and squeeze as much out by hand I wrap it in a 4 layer pad of paper towels and squeeze it some more. Save the paper towels and use them later to dry off the noodles so they don't slide all over, this makes it a lot easier to spread the filling. I have listed 2% cheese and 1/3 less fat cream cheese but it started out being  made with the full deal, we don't notice any decrease in flavor (I've also made it without the egg a time or two when I ran out and it tastes the same and holds together OK). I also think the filling makes a good spinach dip if you leave out the egg. 			<description>This is one of the first recipes I learned while away at college.  Its a very simple side dish or main course.  And great to take for a potluck dinner.    This recipe freezes nicely and the leftovers are wonderful the next day.  If you want, you can saut&amp;eacute; onions in some butter and serve on the side.  I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer.
