Cream Cheesy Pierogi Casserole

I admit that I have never had a real pierogi, but I took samplings from many different casserole recipes, added some of my own touches and called it YUMMY. I hope this recipe gives the humble pierogi the respect that it deserves. -- posted by Mercy

Butternut Squash Lasagna

This recipe is courtesy of Giada De Laurentiis. It's especially popular with vegetarian guests... but a hit with carnivores too. There's no red sauce... it's entirely different from traditional lasagna... but oh so good!

Cook's Note:The no-boil lasagna noodles can be substituted with fresh spinach lasagna sheets. Look for fresh lasagna sheets in the refrigerated section of specialty markets. -- posted by Seamouse

Butternut Squash & Swiss Chard Lasagne With Bechamel Sauce

This recipe was posted on coconutlime blog spot and copied it so I can share it with my friends. It is a little labor intensive but worth the effort. A great way to use butternut squash and swiss chard. My deviation from the original recipe is to add mozarella cheese to make it even cheesier. I found the original recipe didn't bring out the flavors of the fresh herbs. This is also great served as a side dish (about 20 servings) but we tend to eat it as a main course with a green salad and garlic bread. -- posted by Sherri at the Beach

Portabello Mushroom Lasagna

This is a classic Italian dish, but also commonly made in Provence. The French somehow make it a little more elegant. Portobello mushrooms have so much more flavor than button. This is a good substantial meal for a vegetarian but can also be served as a side dish with a roast. Adapted from Barefoot Contessa at Home cookbook. Enjoy! -- posted by Sharon123

Pierogie Casserole

This is one of the first recipes I learned while away at college. Its a very simple side dish or main course. And great to take for a potluck dinner. This recipe freezes nicely and the leftovers are wonderful the next day. If you want, you can sauté onions in some butter and serve on the side. I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Enjoy!! -- posted by coffybean
