Chicken Lasagna

This is one of my favorite recipes! You can make this a day or two in advance and bake when you are ready to serve. You can also freeze the unbaked lasagne and take it out of the freezer, defrost, and cook when you are ready to serve. This recipe came from Sandy, a very special friend. -- posted by Chef #1288524

Ski's Easy Cincinnati Lasagna

Delicious cheesy-buttery blend kicked up a notch with the familiar spice of Cincinnati chili reminds how great a combination pasta and chili are. Having left the Cincinnati area one of the craves I continue to run into is for the taste of Goldstar or Skyline chili. In an effort to quell the crave it seemed logical to merge a traditional lasagna recipe with the flavor of chili. -- posted by Chef #1367132

Fresh Tomato Lasagna

This is from the September 2008 Homemakers magazine; takes advantage of all the fresh local tomatoes available at the end of the summer. The original recipe calls for a total of 1/3 cup of oil which seemed like a lot; I usually use about 3 tablespoons. I also substituted lower fat ricotta and mozzarella cheese and reduced the salt and the flavours weren't compromised. Posted the recipe as it appears orginally, so I don't lose it. -- posted by Kirstenht

Torgogna (Or, Torgo's Vegan Lasagna for 2)

I am Torgo. When The Master told me we were becoming vegan, I said it was an abomination. He then reminded me, "You're the abomination, goat boy!" Since he doesn't yet want to give up his favorite comfort foods (and comfort wives), I concocted this simple fake lasagna. It makes 2 large portions if only accompanied with bread, or 4 small portions if 2 hapless guests dine with you and your The Master.
Healthy Lasagna

Clock full of winter veggies and cheese -- a healthier version to a family favorite! This can also be made a day ahead -- just put in the fridge and add 10-15 minutes to baking time when ready to cook! If you freeze the unbaked lasagna (can keep in the freezer for up to one month) - add 1 1/4 hours to baking time if cooked while still frozen -- an emergency meal life safer!
Decadent Veggie Lasagna Rolls

My mom used to make this "veggie lasagna" once in a while when I was a kid. I've copied it a few times, but wanted to do something special with it to make it my own and fun for small dinner parties.

For me the keys are using fresh spinach and ricotta and making my own marinara on the side out of left over tomatoes & other veggies. There's not much better than that. -- posted by Melanie B.

Felix's Lasagna

I started with a recipe a friend gave me ages ago and adapted it to what I had and what I felt like eating. You could add some onions or garlic to the meat mixture if you felt like it, or use something other than mushrooms (or leave out that part entirely) if you don't want them. Whatever flavour or brand of spaghetti sauce is your favourite will work, as long as it's not one of the ones with meat. Excellent served with garlic or other crusty bread and a green salad. What I'm calling prep time is stove-top cooking time, and cooking time is time in the oven plus sitting time. -- posted by Felix4067

Chicken Florentine Lasagna Rolls

A twist on the standard lasagna dish. Fontina, fresh spinach, roasted chicken, cremini mushrooms and sauteed onions make this a great dish. A creamy bechemel sauce and rolled lasagna rolls make this perfect.
I admit this takes a little time but worth it. Now I also take advantage of a grocery store roasted chicken for this or you can roast your own. But I do insist on fresh spinach and herbs, but why not take advantage of a little help ... I also get my mushrooms pre-sliced. Take a little help on some store bought items when you can. The fontina to me just adds lots of flavor, but if you can't find it mozzarella will work just fine.
This is worthy of entertaining, but the best part ... make it ahead and just refrigerate. Just put in the oven and bake the night of the party, NO work. -- posted by SarasotaCook

My Standard Lasagna

This is my basic easy lasagna. I either use homemade sauce or a really good quality store bought brand. There are four types of cheese in this recipe. If you like things spicy, by all means add a bit of crushed red pepper to the sauce or use spicy sausage. If I am adding sausage, I prefer to use mild turkey sausage in this, but it tastes really good with just ground beef too. -- posted by HeatherFeather

Quick Creamy Lasagna Three Ways

This came from the USA Weekend insert in my Saturday paper and they say:
Why do we love this lasagna?
Let us count the ways:

1. Lasagna can be a yawner, but this formula is outstanding yet utterly simple (especially the chicken and seafood versions).

2. It's do-ahead, cheap and feeds a crowd. And almost everyone will eat lasagna.

3. It can be frozen for a month or more. Simply thaw overnight in the fridge before baking.

4. It easily retains heat for a half-hour, making it a good candidate for the buffet table.

There are 3 different fillings listed. I am listing this recipe as Seafood Lasagna but will list the other two as well. -- posted by Sooz Cooks

Florentine Lasagna Roll

Found this in a supermarket checkout cookbook years ago and it's still a family favorite. One important step is getting the water removed from the spinach as much as possible; after I drain it and squeeze as much out by hand I wrap it in a 4 layer pad of paper towels and squeeze it some more. Save the paper towels and use them later to dry off the noodles so they don't slide all over, this makes it a lot easier to spread the filling. I have listed 2% cheese and 1/3 less fat cream cheese but it started out being made with the full deal, we don't notice any decrease in flavor (I've also made it without the egg a time or two when I ran out and it tastes the same and holds together OK). I also think the filling makes a good spinach dip if you leave out the egg. Cook time includes the 5 minute stand time. -- posted by greksgirl

Three Cheese Beef Lasagna

I used to have a great recipe for Lasagna sauce, but of course the book it's in is at my parent's winter home. I used about three different recipes to approximate it, so here's my current version. I made this for dinner the other night and it was fairly easy and very good. This recipe is written for use with fresh Lasagna sheets, the ones that aren't dried and you don't have to boil or anything. You can just as easily use the dried pasta, just boil according to the package directions and use in place of the sheets. -- posted by CoCaShe

Pumpkin Lasagna

Italian-Americans often serve lasagna or another pasta dish before their Thanksgiving turkey, and it got us thinking – what would happen if we cooked pumpkin, the most iconic Thanksgiving food, in lasagna. The result is a delicious blend of traditions. Made heartier with the addition of ricotta cheese, mushrooms and greens, this vitamin-A rich pumpkin lasagna can be served as a sophisticated side dish or a substantial vegetarian entrée (perfect for the vegetarians at your holiday table, too). -- posted by Chef #1365024

Light Lasagna

From Cooking Light a long time ago. I lost my hard drive and want to save this for the future. I make this for my family and friends and they don't know it's light. The original recipe called for non fat cottage cheese and non fat ricotta, but I use low fat and part skim, they taste better to me. I also use the oven ready lasagna noodles, which weren't in existence back then. Trust me, you'll never miss the mozzerella cheese, the provolone is so much more flavorful. -- posted by Chef #455710

Boxing Day Festive Roast Pumpkin and Cheese Lasagne - Lasagna

Roasted pumpkin and creamy cheese lasagne (lasagna); a Boxing Day special - although I have made this for Christmas Eve too! This is a wonderful addition to the festive vegetarian table, but is ALSO hugely popular with meat eaters. This is my adapted version of Nigella Lawson's pumpkin lasagne; I have changed a few of the methods and added (as well as omitted) a few ingredients! Boxing day is the day after Christmas day, also called St Stephen’s Day – the 26th December; it is a public holiday in the UK and most Commonwealth countries……….generally a turkey curry day, or a turkey-free day, one of the two! Serve this with a large bowl of salad and some crusty bread for mopping up the delicious sauce. -- posted by French Tart

Turkey Spinach Lasagna

This is an amalgamation of some different Cooking Light recipes using what I had on hand one evening, which turned out to be even better the next day. Best of all, you don't have to cook the lasagna noodles first! Feel free to adjust, such as replacing water with chicken broth, adding more ground turkey, using whole wheat noodles, etc. Also, I am a slow cook, so it may take less than 30 minutes for you to prep.
Pierogie Casserole

This is one of the first recipes I learned while away at college. Its a very simple side dish or main course. And great to take for a potluck dinner. This recipe freezes nicely and the leftovers are wonderful the next day. If you want, you can sauté onions in some butter and serve on the side. I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Enjoy!! -- posted by coffybean

This recipe was made for me by my Grandpa. Its my birthday meal every year and it couldn't be simpler to make. I don't like a lot of meat and I really HATE ricotta cheese so this is the perfect lasagna for me. We make it with jarred marinara sauce and to make it taste less like store bought try adding chopped green peppers and simmer it for about ten minutes prior to assembly.
This is a combination of many lasagna recipes. This version is our favorite and comes close to what I always think of as a true restaurant style lasagna. I like to cook my own noodles, but you can also use no bake lasagna noodles and just add a 1 1/2 cups of water to the bottled sauces.
Sarasota's Full Proof Traditional Lasagna

This is my favorite lasagna, and is always the one I go back to. It is "fairly" classic, but I enjoy the mix of turkey and sausage vs all beef or beef and sausage which can be a bit heavy to me. A nice mix of romano, parmesan and mozarella and some red peppers in the tomato sauce makes this just a bit unique. I have many different recipes, including ... a vegetarian lasagna, mushroom, spinach and kale, mexican, and seafood ... but this by far is my ultimate standby. I really call this my Classic Lasagna. This is what I do: Layers ... 1) meat sauce 2) noodles 3) meat sauce 4) ricotta mix 5) grated cheese 6) noodles 7) meat sauce 8) ricotta mix 9) grated cheese 10) noodles 11) meat sauce 12) grated cheese. FYI ... These feeds a crowd, but I love to make it and then keep 1 or 2 pieces out for the week and freeze the rest. This makes a great easy lunch or simple dinner -- posted by SarasotaCook

Beef & Pork Ragu Lasagne (Lasagna) from Fine Cooking

This is a PHENOMENAL recipe from Fine Cooking. I have made it for company and everyone raves over it. It's labor intensive but SO worth it. It either makes one huge pan or two smaller ones. I have found that making the ragu the night before makes the preparation a lot easier.

Two minor substitutions I have made: (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store.
Mom's Favorite Lasagna

This is a recipe handed down from my dear mother. She adapted this recipe from an old cookbook of hers and it has been a family favorite for years!
My husband and kids like more meat, so I do use a full pound of both the ground beef and Italian sausage. -- posted by Ms. Delaney

Best Ever Red & White Sauce Lasagna

This is the absolute best tasting lasagna I have ever had. The red sauce offers sweetness and the white sauce gives it a warm creaminess. I came up with this recipe for my sister who doesn't eat pork, but have made it many times with traditional pork Italian sausage. Either way its yummy, hearty and sure to impress. -- posted by Shamrockjulie
