Sweet Coconut Cream

This makes a great dessert topping to drizzle over berries or pies...really yummy on pumpkin pie. I also have a whipped version that makes it nice and thick like whipped cream!!! I like to let it chill for a couple of hours or even better over night. Depends on how much of a hurry you are to eat it :) Remember this is a simple way to make a dessert from berries. Just drizzle or coat berries and serve. Delicious!!! And very good for you too. The coconut is anti-microbial, antifungal...etc.. I use Thai Kitchen Brand...NOT the low fat one...coconut doesn't make you fat...it actually speeds up your metabolism. You can read more about the health benefits of Coconut here: http://www.greensmoothiegirl.com/coconut-oil-health-benefits.html She also has some good recipes on her site too. -- posted by RawwGurl

This is something I came up with as a whipped cream substitute since I am allergic to milk. It came out great and I use this on my pies.
Milk and Soy Protein Free (Mspi) Ice Cream

This recipe is a great substitute for regular ice cream and couldn't be easier to make. You can substitute any flavoring that suites your fancy. I've made chocolate from cocoa powder, strawberry, strawberry-banana, peach, and maple-walnut. The coconut flavor enhances the other flavors and isn't very noticable. There is more than enough sugar in the cream of coconut but a little honey might add a nice touch. -- posted by Chefro

Sesame Halva, Raw Vegan, Gluten Free, Wheat Free, Dairy Free

This is possibly the most nutritious sweet treat in the world. A delicious rich melt in the mouth halva. Great for babies and children. Sesame seeds are the highest source of calcium (975gms per 100gms -9 times that of whole milk-), high in iron (14.55grams -grain fed beef mince has only 1.99grams-) an almost equal amount of protein to beef and numerous other nutrients. This has become a staple in our house and the combinations are endless. I like to mix in chopped pistachios. You can use other things such as prunes, date paste, dried cherries, apricots, coconut, cocoa powder or other nuts and flavourings. you can add more dates if you prefer it sweeter. You could also try using tahini to make it easier. -- posted by canthelpmyself

Big B's Pancakes (Dairy Free, Diabetic Friendly)

My late dad was a fabulous cook. My mouth waters when I think about his concoctions. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl. Fortunately it is dairy free so it works well for my dairy allergic son. My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking. The batter can last in the fridge for up to 24 hours. I usually use 2 pans simultaneously to halve the cooking time, so the cooking time specified in this recipe is for the whole batch using 2 pans. -- posted by Cheron

Passover Apple Cake With Candied Nut Topping

Chocolate Tahini Rum Cake

This an amazing chocolate cake which is very easy to make and is sheer heaven if you happen to love tahini. The recipe comes from Stelios Parliaros, a famous Greek pastry chef who has done much to introduce international desserts into Greek homes. It also happens to be completely vegan (or nistissimo) and oil-free. The only thing to watch out for is that the measurements have to be exact or it won't work. Use an electronic scale, measure the ingredients precisely and you can't go wrong. -- posted by Perfectionist cook

A gluten-free version of my son's favorite "from scratch" brownies; the original recipe appeared in a holiday baking insert from the Sunday newspaper.
Rhubarb Crumble

I planted five rhubarb plants in the garden in 2003. Then, I found this recipe comes from "Supercook's supersavers cookbook" (1980). The favour of the dessert is nice. However, we only have it as a treat a couple of time per year as my husband needs to lose weight. I normally use half apple, half rhubarb as I found the original recipe a bit too sharp for me.
Dairy Free Rice Pudding

Both my mom (96) and myself are allergic to milk so much of what we make needs to be adjusted to use Mocha Mix instead. If you can't find this product try a sweet vanilla soy milk instead. The custard on this isn't very high, but the flavor is just great. Small price to pay for a feel good, memory filled dessert.
Watermelon and Berry Soup

This is a wonderful, easy recipe. Dairy free, no cook, quick to make! Perfect for entertaining in the summer. I "adjusted" the original of this recipe which came from "Vegetarian Cooking for Everyone", a fabulous cookbook by Deborah Madison which won Julia Child and James Beard awards (I'm not vegetarian, it's just a great book!). I always keep Costco's 3 Berry Mix in my freezer. I use these frozen berries, but use fresh if you prefer. I like the texture the thawing berry's have in the soup as well as the unexpected chill they add to each bite. This is really an easy recipe to adapt, be creative, go wild! -- posted by Mrs Goodall

I had a tin of chickpeas that needed using up and decided to experiment, so I pureed them with banana, peanut butter, honey and cinnamon and they tasted great!
Fudgy Chocolate Cupcakes (Or Cake)

There was an o.k. recipe here on Zaar that I have worked on and changed to make these truly amazingly rich and chocolatey cupcakes. Don't be scared of the tiny bit of coffee it only deepens the flavor of the chocolate. These don't require any frosting but the kids love it with frosting and some colored sprinkles so that's what I typically do. I like to use my lazy version of Recipe #19353 (a little bit of this, a little bit of that) and they always look and taste wonderful. As an added bonus this has no shortening, butter, or margarine (all those bad trans-fats) but amazingly enough they still taste fattening. -- posted by scancan

Egg Dairy Nut Free Carrot Cake

This is delish! Now I just need to work out how to make it gluten free and I have one wonderful anti alergy cake!

This is a mixture of different egg free recipies I have tried. Although we are not allergic to diary - i find this works best with water... however - there is no stopping me topping this with a cream cheese icing! To keep it diary free I simply spread some apricot jam on the top for a glaze

I often sub the carrot with zucchini and the sultana's with diced dried apricots -- posted by happygurl06

Sarah's Vegan Oatmeal Amazingness Cookies

This vegan chocolate chip oatmeal cookie eats more like a breakfast food than a cookie. If you are looking for a sweet desert cookie for kids, this recipe might not work. However, if you are trying to eat healthy, preserve the environment, and indulge in a little yumminess, then this is an excellent cookie to bake! (I personally like the cookies chilled.) I thank my friend, Sarah F., for giving me this fabulous recipe.
NOTE: For the ease of posting, I listed an egg in the ingredients. Egg Replacer works perfectly well in this recipe and it is usually how I make. If you live near Trader Joe's, their orange flavored cranberries are perfect for this recipe. Also, you can substitute currants or dried berries for the raisins. -- posted by The Bad Cook

Feathery Fudge Cupcakes

These feathery, moist, fudgey cupcakes are the all time chocolate lovers favorite. Relatively easy to make, healthy, and satisfying, these cupcakes are sure to be a hit with kids, at a party, or just to satisfy your own chocolate craving.

(Recipe was originally a cake recipe. To make as a cake bake for 30-35 minutes in two 9x 1.5- inch round greased baking pans.)

Note: These cupcakes are light and fluffy so piping frosting on them instead of spreading generally works easier with less possibility of crumbling.

Gluten and Dairy Free Basic Cake Mix

This is a gluten and dairy free version of my family's 'Jiffy tea cake' which is one of those basic cakes you can add almost anything to! It makes a smallish cake, so I usually double the mixture if making a whole cake, or just use the quantities below to make about 6 muffins.

I've given the quantities in 'cups' and by that I actually mean a tea cup that I've been using as my cooking measuring cup for the last 30 years! It doesn't really matter whether you use a metric or imperial cup as long as you use the same cup - though if you only have small eggs, I would perhaps use two. I also like to have a fairly thick batter, so I add more milk or flour as needed to get it to the right consistency - experiment to see what suits you and your oven best. -- posted by feedingtimeatthezoo

Carob Pudding (Gluten & Dairy Free)

From Allergy Cooking with Ease. Carob is so much better for you than chocolate - no caffeine, naturally sweeter (so need less added sweetener), lots of vitamins. This is a great version of chocolate pudding. I adapted it to make it gluten and dairy free. I used 1 tsp of regular vanilla. -- posted by WI Cheesehead

Walnut Brownie Energy Bites

Found this recipe at deliviouslivingmag.com. I haven't tried it, but I've seen recipes like it and wanted to put it here for safe keeping. The brownie bites are super healthy and I think they should be super delicious too. These are essentially raw brownie bites. Here's what it says on the website about them "Decadent and rich, these are made with good-fat almonds and antioxidant-laden cacao and sweetened with fiber-rich Medjool dates. They provide whole-food nutrition, so enjoy as a snack or treat. These can be kept at room temperature for a couple of days or will keep for at least a week refrigerated. Ingredient tips: Bob’s Red Mill makes almond meal (flour), but if you can’t find it, just use whole raw almonds and process them into a powder using your food processor. Prep tip: Keep batter from sticking to your hands by lightly coating them with coconut oil, olive oil, or even water." -- posted by dimply dots

Homemade Soy Vanilla Ice Cream

Need a healthier alternative to regular ice cream that is easy to make? My family (including the meat and dairy lovers) loved this ice cream, and no one would have known that it didn't have milk or eggs!

You can top it however you want, and experiment with the ingredients (we've made blackberry ice cream, strawberry ice cream, healthy chocolate chip cookie dough ice cream, healthy or "fake" butterfinger ice cream), etc.! You can make blizzards (aka Frosty or shake) by briefly blending it a bit in a blender. This recipe is perfect for experimenting! -- posted by Glorify.Jehovah

Yum Yum Yo Yo Biscuits

Adapted from a recipe I found on the Simply Great Meals website. Faced a dilemma in settling on a name for these. They are n-e-v-e-r called Yo Yo Biscuits, just Yo Yos... the Simply Great Meals website called them Yo Yo's, but the apostrophe makes no sense, and without the apostrophe the name looks like Yo YOS - which sounds silly and is NOT what they are known as! Conversions: 150g = just under 5oz; 60g = 2oz. Personally, I'd prefer to omit the food coloring. Not anti-pink, just prefer to avoid unnecessary chemicals. Seems to me that even a 1/2 teaspoon of cherry juice would achieve the pinkness if that's what you're after. The slivered almonds are not generally found in a traditional Yo Yo: I've added those. I'm of the belief that yummy nut never goes astray, be it in sweet or savoury dishes. -- posted by bluemoon downunder

Chocolate Chip Oatmeal Vegan Cookies

Hearty, heavy, comfort food vegan cookies! So good as a treat, but I usually have two for breakfast and it gives me energy all day! They are chewy and dry, more like a scone than a cookie and really good with tea or juice! I make them big enough so that I only get 8 cookies out of the batch, but you could make them smaller and probably cook them a few minutes shorter. I adapted this recipe from a vegan tea cookie recipe in a magazine. -- posted by theresa913

Anzac Cookies (Vegan)

This is a modified version of the recipe from Baking: A Commonsense Guide. When they first come out of the oven, they're chewy and delicious. When they cool, they become crisper, ideal for dunking in coffee or tea. (And of course they're still delicious.) I added allspice just because I like it. If you use sweetened coconut, you can probably cut back on the sugar some. -- posted by dreabakes

Super Sneaky Brownies

This is an even sneakier version of the "sneaky chef" brownies by Missy Chase Lapine. It is made with some of her "purple puree" but also utilizes black beans, which is a trick from Weight Watchers. No added fat to this recipe! No cholesterol! And if you omit the chocolate chips, it is vegan. It makes a very good, not overly sweet, cake-y brownie. NOTE: the purple puree part of the recipe makes a good 1 1/2 - 2 cups. This recipe uses only 1/2 cup, so reserve remainder for another use. It freezes well. -- posted by Susiecat too

Gluten Free, Dairy Free Millet Trail Mix Cookies

This recipe is what turned out when I adapted Galley Wench's recipe #378586 to my dietary needs: No gluten, no dairy, no oats, no coconut and low fructose. I used brown rice syrup but will post the recipe with honey so that it will appear in the nutritional facts. This is a more grown up, not so sweet version using chopped dark chocolate (I used 85 %) and slightly tart craisins. For kids maybe better use semi-sweet chocolate chips or dried fruit like apricots or dates. Accidentally I used reduced fat margarine instead of normal margarine, but that didn't matter at all. Use a non-hydrogenated margarine! And yes, I used olive oil - it doesn't affect the taste, but you can also use canola oil, of course :) For the rice flour use powdery white rice flour or it will be too crumbly. -- posted by Mia in Germany

Vegan Lemon Loaf/Bread/Cake

I'd really say this is a lemon loaf, but it is more cakey, than it is bread-y--that's for sure! The brown sugar in this recipe gives it a richer, more buttery taste and all of my non-vegan friends were shocked that this didn't have a drop of dairy in it.
Maxine's Cream Cheese Chocolate "cupcakes"

You can omit the filling (which will make this a delicious dairy free recipe) and fill the cupcake liners 2/3 full... then the recipe only makes about 18-24 plain (but so delicious) chocolate cupcakes. ***I know it sounds weird but DON'T SKIP THE VINEGAR!!*** It gives the recipe its unique flavor.
Rice Cooker Chocolate Cake

This dark, rich, chocolate cake is perfect with coffee on a lazy afternoon or as a special treat for a birthday cake. It has no eggs or milk so is ok for Vegans. Top it with your favourite frosting, or just sprinkle powdered sugar on it to 'finish' it for the table.I love the recipe as I alway seem to be out of milk and eggs, so this recipe suits my house!
I do not have an oven so need something that works in rice cooker. Rice Cookers vary but this recipe seems to work just fine in most. Set the cooker for slow cook if you have that function. -- posted by circle3

Vegan Spiced Pumpkin Cheesecake

The best vegan adaptation of a cheesecake I've had. I avoid any vegan cheesecakes that call for tofu because the texture turns out funky, and tastes, well, not like cheesecake should taste like. This variation is great for the holiday season! You can make your own crust or find a separate recipe for a cheesecake crust, but I wanted to save time so I just used the pre-made crusts. I would recommend the bigger "extra serving" pie crust because this yields quite a bit of filling. -- posted by J.J.
Soy Free, Vegan, Dairy Free, Delicious Pumpkin Pie!

I developed this recipe because I was unable to find a tasty pumpkin pie recipe that was all of the above. This pie is SO good! Just like real pumpkin pie. Let me warn you that this pie is a no bake, so it has a lighter texture. Also, preferably you will need a high speed blender. -- posted by Chef #629158
