Gluten Free 60% Whole Grain Hamburger Buns Recipe (Or Bread)

I didn't actually do the math but these buns taste like the bread we used to comprise on. Healthy enough for Mom but still fluffy enough for the family to enjoy. This recipe was, as all successful multigrain bread recipes I've read have been, inspired by Heather Butt and Donna Washburn of 125 Best Gluten-Free Recipes. I freeze them as soon as they are cool and when I pull them out they are as good as new. If you are baking gluten free and haven't bought muffin top pans yet, I have to say, besides my mixer, they have been my best gluten free investment.
This recipe makes one 4 1/2 by 9 loaf and one bun if you prefer bread and doubles very well if you want bread and buns. Since I started using this recipe my gluten eating husband doesn't buy bread anymore. -- posted by SWalker

Sopaipillas

While I was visiting my friend in Arizona, she had me help her make Sopaipillas. I loved them! They're mexican, but sold in Arizona, New Mexico, Texas, and other states near Mexico. You can literally point to the mountains at the back of her house and say "There's Mexico!"
Mexican fried breads.
Golden fried puffs, usually served with butter or honey for dessert. You can also try them with cinnamon and sugar. -- posted by Giniaa

Savoury Chickpea Onion Biscuits

Gluten-free, sugar-free, corn-free, soy-free, vegan! I was on a crazy diet and sharing my food with friends who have allergies, so I developed these. The rice and chickpea combination makes a complete balance of essential amino acids, so it's good vegan food too. Oh, and they taste awesome.
I like brown rice flour, but you could easily substitute white rice flour. I love onions, but you could use less or omit this ingredient entirely if you don't share my enthusiasm. Sometimes I also add garlic for good measure.
They are best hot out of the oven, but do okay cooled. I've also tried freezing these with good luck - making a double-batch on the weekend and bagging them 2-3 at a time for use during the week. -- posted by wormwood

Quick Basic Chapatis/Rotis

Unleavened vegan stove top Indian flat bread. We really enjoy this with garlicky hummus and an herb salad. I learned to make it from Manjula on YouTube (http://www.manjulaskitchen.com/). If you have chapati flour and are good with a rolling pin, you can whip 4 of these out 15-20 minutes or less because they do not have to rise or rest. With regular flours, 4 will take an hour including 1/2 hour resting time. I am not sure the exact origin because so many peoples claim them as their own. I have seen many good ideas for adding herbs/spices to these on this website that I will be trying... Yummm! -- posted by Kanopolis Kook

Gluten and Yeast and Dairy Free Multigrain Bread

A tasty and nutritious gluten and yeast free bread. You need to start soaking the grains the night before you want to bake the bread to allow the abiant yeast in the teff time to work. It makes tasty crackers too if you slice very thinly and toast on a cookie sheet in a 300 degree oven for about 5 minutes per side. The crackers keep for a couple of weeks in tupperware. If you blend the crackers and add some parsley and seasonings it makes great bread crumbs as well.

For the information of Chef #257341

There is no yeast in apple cider vinegar, just apples.
If you can tolerant teff, you can tolerant soaked teff. As a matter of fact, it is a good practice to soak all grains in an acid like buttermilk to ease digestion, especially if you have digestion issues. -- posted by SWalker

Crazy Zucchini Bread

One of the most sinful yet deliciously healthy vegan cakes. You can take stuff out add things you like. Just keep the consistencey of awet chocolate chip cookie mix. For instance you can add raisons or cranberries without changing it. Or you can substitute the cup of sugar with 3/4 cup agave nectar (or honey) but you will need to add a little more flour to make up for the viscosity of the nectar. -- posted by BellaMaria

Water Challah

According to our family's Sephardi custom, we cannot make 'HaMotzi' on anything that contains more than a minimal amount of sugar or any eggs. (Although you may use an egg wash or honey or other sweet additions on the outside). When I have to bake Challah this is what I do. For Rosh Hashannah our tradition is use anise seeds instead of extra sugar or raisins and shape the dough in discs with a grid on top. -- posted by baezus

Pumpkin Muffins - Ibs Friendly

Living with Irritable Bowel Syndrome can really put a damper on your meals so I try to find interesting things to do as much as possible. These muffins have been adapted for the IBS diet, so think low fat! Original recipe was from www.helpforibs.com, I tweaked it just a bit. I used Demerera Sugar, but any brown sugar will do. Keep these muffins in the fridge or the freezer, the low fat content means they will go stale quite quickly. -- posted by TheMorningStar

Yule Oatcakes

I've been making these oatcakes at Yuletide for the last 5 years or so. They've become one of my favorite parts of the Holiday! I originally began making them to leave as gifts for the deer and other animals around our home, and under the trees we decorate in the woods. However nobody can ever keep their mitts off them! (especially right out of the oven) I had no idea they'd be so tasty. So now the baking of the Yule cakes has become an event. We usually pick a night and roll out about 4 batches. These are super easy to make (we usually partake of some wine during this event - that tells you how easy they are lol) They come out crispy and sweet. Perfect for breakfast or just snacking. -- posted by Nikoma

Tyler Florence's Pita Bread (Bread Machine, Dough Cycle)

I don't know if Tyler Florence would approve of the use of a bread machine to knead his pita bread recipe. I think it works wonderfully. Fresh pita bread is like a loaf of homemade bread. The flavor, texture and fragrance can't be compared with the store bought variety. I think this goes well with Paula Wolfert's Hummus which I also submitted to RecipeZaar. This recipe uses a Pizza Stone but I think you might possibly use a hot cookie sheet with good results. Prep time is bread machine time. -- posted by P.B.&Jayne

This recipe was my grandma's, who gave it my my mother, who gave it to me! Hopefully I read her hand-writing correctly! I love all quick breads but I REALLY love homemade. The Nutmeg listed in the recipe is optional, and so are the raisins and nuts. We always made it for the holidays, but it could really be made any time.
Moist Jumbo Banana Wheat/Oat Bran Muffins

Moist and flavorful these can be made with oat or wheat bran depending on what you have. You can put your choice of nuts (my fav is walnuts) or dried fruit and vary the amount of mashed banana and they still come out great. Since I started using this recipe 5 years ago, I have kept these muffins on hand in our freezer. I save my brown bananas, freeze them and when I get a good amount puree them in my cuisinart so I can triple the batch of muffins. You can also make these as regular size muffins. The batch would make 12 muffins and bake time would decrease to 15 minutes or so. -- posted by RussianMama

Florence's Peach Muffins

This had been my Mom's recipe. I've been making these for decades because they taste good; however since they are dairy free ( due to World War II rationing), that should make them healthful as well. I always make these during peach season, however, there's no need to wait until then, frozen or canned peaches work well too. A cooking note: If you're seriously watching cholesterol levels, you can make these with just one egg, and they taste just as good, however the muffins will tend to be a tad crumbly. -- posted by lynnski / LA

Sweet & Speedy Breakfast Oat Bran Muffin (Microwave)

Stir and pop into the microwave for an easy, healthy breakfast!

I mix it up, microwave, and eat it straight out of a ceramic mug. The batter sticks a little, but to wash cleanly, pour in hot water and soap and let sit until you do the dishes!

I was inspired by *Pixie* 's South Beach Muffin (http://www.recipezaar.com/South-Beach-Muffin-263983) but I didn't have the baking powder, yogurt, or flaxseed, so I improvised.

From the 222 Recipes-The Greek Cookery Book. A gift from NurseJaney.
This bread is the bread I ate in Santorini when I visitied my family. I love Greece and loved visiting this unique island. This is a fast and easy delightful bread to make and has a lovely flavor. The colors from the ingredients stand out. It brings a little bit of old world flavor with it and to your home. It is very quick to make.
Enjoy a little bit of Greece. The picture on the book cover is a place we walked and stayed near.

Cinnamon Raisin Beer Bread (Gluten-Free)

I had never had beer bread before and this looked delicious. I found this on a forum and decided to give it a shot. The baking made the whole house smell delicious and the taste was great! This makes a very dense bread, so slice it thin. It is almost fat free! I calculated it to have about 0.4g fat per 1/2" slice. In addition to being fat free, it is also egg and dairy free. I didn't experience any deflating. Makes a 8" x 4" loaf. *For the gluten free flour, I used Bette Hagman's mix: 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour. I used a bottle of New Grist beer: http://www.newgrist.com/ which I think tastes much better than Red Bridge. -- posted by Andrew Mollmann

Crusty Portuguese-American Yeasted Cornbread (No Knead)

An easy no-knead recipe for "pao de milho" is from Nancy Baggett's wonderful new cookbook, Kneadlessly Simple: Fabulous, Fuss-Free, No-Knead Breads". The large, homespun loaf has a mild, go-with-anything flavor and a delightful crusty-chewy top. It has a finer, moister crumb than most cornbreads, the result of the cornmeal being combined with boiling water and turned into a mush first. This simple, seemingly unimportant step makes a big difference in taste, too: Due to chemical changes that occur as the cornmeal begins to cook, the bread is noticeably mellow and sweet, even though no sugar is added. Serve it with meals, along with butter, toast it, or grill it and use in all sorts of hearty meat, cheese, and roasted vegetable sandwiches. This bread is very easy to make, but due to the slow rise, no knead method, you must start this bread a couple of days in advance. -- posted by blucoat

Gluten-Free High Protein Bean Bread

"Why not try it?" was the question which led me to this recipe. After reading and studying and thinking about a dozen recipes for different bean breads, I came to the conclusion: Keep it simple. If you want people to feed themselves healthily, it must be done easily. Otherwise they won't do it. At least not here. At least not the client I was thinking of. She's a carny and has definitely not the time nor the possibilities to spend hours in a kitchen - although she's pleasantly compliant to keeping her gluten and lactose free diet. She's a pleasant person anyway, and I'm grateful I met her. Hugs for her because she inspired me to create this simple gluten, egg and lactose free bread!
For the bread mix, I used Schaer Brot Mix which is one of the most affordable and well working gluten free mixes I know in Germany and the Netherlands. It's made of cornstarch, rice flour, lupin protein, dextrose, psyllium husks, xanthan gum and salt. Made with yeast it has great baking properties, and the result is a fantastic fluffy white bread. The trick is to knead the dough for a long time.
The whey protein I use is lactose free.
If you use other bread or flour mixes, please let me know which ones and what results you got!

Multi-Grain Bread

After searching everywhere for a easy Multi-Grain Bread recipe, that didn't have a ton of ingredients or too many steps I finally decided to make my own. I might try topping this with rolled oats or sunflower seeds some time. I took a whole wheat bread machine recipe I knew worked well and added cereal mix soaked in water and added more yeast and more gluten flour. The directions are for a KitchenAid Stand Mixer. Can be made Dairy Free. -- posted by tasb

Aayi's Jowar/Jolad Roti (Gluten Free Indian Flat Bread)

Gluten free but not corn free. This is an unleavened Indian flatbread which is made from Jowar, Sorghum here. The flour is gluten-free and so making these rotis (chapattis) is not as easy as making whole wheat rotis/chapattis. Despite not containing gluten, these are quite soft and have a somewhat nutty flavor. Traditionally, eaten for lunch or dinner with a dollop of unsalted home-made butter and garlic chutney, these rotis can be served with any vegetable curry.
Quinoa Blueberry, Cheddar, and Caraway Rye Cornbread

I just finished baking this glorious cornbread as the apex of my post-exam celebration. Wonderful things happen to your brain when you're 19 and done exams - like figuring out the perfect recipe for wholegrain blueberry herb cornbread! I'm amazing! I'm also a bit of a health nut so the ingredients are really quirky, but I'm sure you can play around with things to some appropriate degree. Be creative! That's the best part. But I hope you'll enjoy this recipe just as much as I have!

***NOTE: I make 2 loaves out of this amount of batter, because it rises better (more evenly) that way. -- posted by zoelife

Gluten Free Oatmeal Bread

This is a very simple yeast bread recipe from Allergy Cooking With Ease, with no other flours than oat flour (grind oats in your blender). It turned out a little like a sponge bread in texture, but had a nice flavor and did not crumble when slicing. Has a bit of a sweet flavor (I used honey). I have tried a few gluten free breads, and this one turned out great on the first try. Didn't rise as much as I liked, but I'm wondering if that's because I used regular yeast, not quick-rise. -- posted by WI Cheesehead

Sweet Yeast Rolls (Vegan)

This is my favorite bread recipe. The rolls have a soft crust and are slightly sweet and yeasty. They are especially good straight from the oven but also keep well for a few days. I like to brush them with agave nectar instead of the margarine/oil to make them a bit sweeter. If you eat honey, that could work too.

Easy No-Knead Challah Bread

A fabulously easy recipe from "Artisan Bread in Five Minutes a Day" by Jeff Hertzberg and Zoe Francois that bakes a beautiful golden laof. This recipe takes very little effort (you basically need to mix ingredients in a bowl for a minute), but you do need to give the dough time to rise.
Makes four 1-pound loaves. The recipe is easily doubled or halved. You can freeze or refrigerate unused dough. -- posted by blucoat

Vegan Lemon Loaf/Bread/Cake

I'd really say this is a lemon loaf, but it is more cakey, than it is bread-y--that's for sure! The brown sugar in this recipe gives it a richer, more buttery taste and all of my non-vegan friends were shocked that this didn't have a drop of dairy in it. This is an adapted and doubled recipe from a Moosewood recipe and although it's not amazingly healthy, it is so yummy that it's silly...! -- posted by MellyLou

Yummy Fool Proof Gluten Free French Bread!

From Cooking Free by Carol Fenster. This turned out great, even in a regular bread pan. Crunchy on the outside and soft on the inside. Carol says: "Put this in a cold oven for a crisp crust and nice texture. If this doesn't work in your oven, let the bread rise until level with top of pan; then bake in preheated 425° F oven for 25-30 minutes. Use a pan specially designed for French bread." It is critical to cool bread completely before slicing and is easier to slice with electric knife. This is a quicker bread because you don't have to let it rise before baking. -- posted by WI Cheesehead

Chef/cookbook author/restaurateur Laura Frankel uses this challah recipe in her own home. It uses some whole wheat flour and results in dense, chewy, and delicious loaves.

Challot can be baked and stored, covered overnight at room temperature (not in the refrigerator) or can be frozen for one month.

No-Knead Ciabatta

This is one of my most favorite recipes. It has very few ingredients but turns out very well. When you take it out of the oven you can hear the crust crackling-very nice! Hope you like it as much as we do.
(If you want to use whole wheat you can add only a half a cup to this recipe -more than that will make the bread dense) Also if you only have active dry yeast- double the yeast amount to 1/2 tsp.
Note* since it is a no-knead recipe it is a pretty flat loaf with a max. height of about 5-7 inches. -- posted by Leah's Kitchen

Banana Apple Bread (From the Sweet Melissa Bakery)

This is an excellent, moist banana bread by itself but the addition of caramelized brown sugar apples make this truly outstanding. You can add nuts or currants. Be sure to use super-ripe bananas (the blacker the better). The banana bread keeps well wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost (still wrapped) at room temperature. The recipe was printed in "The Sweet Melissa Baking Book: Recipes from the Beloved Bakery for Everyone's Favorite Treats" by Melissa Murphy. -- posted by blucoat

Gluten Free Biscuits

This Recipe is from Roben Ryberg's Cookbook You Won't believe it's Gluten-free!
Easy and super yummy! Even good re-warmed the next morning(it any left!)
I followed directions exactly except used soy milk and marg. and patted out and cut with a knife, worked fine but might try dropping from spoon like traditional drop biscuits next time, don't know how that would work, I have only done as writen so far.... -- posted by Robin Batterson

The Best Bread Machine Challah

After trying out several different bread machine challah recipes, I have come to find the best one. The challah it produces is so light and the perfect combination of sweet and salty. The bread machine I own is an Oster, nothing fancy. As with all bread machine recipes, I will say every once in a while I will have a flop, no idea why this happens sometimes. This recipe calls for 3 yolks, so I will post a link for something easy to do with the whites: Ultra Moist Easy Chocolate Bundt Cake. Everytime I make challah, I also make this cake. -- posted by Lee Hock

I Cant Believe It's Gluten Free Bread

I have tested this recipe many times in many ways, and it is really faboulous bread. Make sure you don't overmix the dough, and only let it rise once when its in the pan. Xanathan gum is expensive but it lasts a very long time. I have subbed many different gf flours in this recipe, and they all turned out "fine" but this one is "fabulous". -- posted by Nurse Rain

Brother Juniper's Cajun Pepper Bread

Delicious bread from Brother Juniper's Bread Book. Excellent when paired with savory foods or just by itself (with butter, of course). I often use half the amount of Tabasco for those with a little milder mouths, because the full amount is SPICY! As noted, I use the Trader Joe's frozen pepper medley, but you can also use fresh, cans/jars or even pimientos. They all taste fantastic in the finished product. -- posted by SillyRhino
