Inside-Out Avocado Rolls With Chives and Cashews

From Sushi: Easy Recipes for Making Sushi at Home by Emi Kazuko, Fiona Smith and Elsa Petersen-Schepelern, a great little reference book with beautiful photos. The nutty, salty cashews and creamy avocado make this sushi roll great. Use Easy Sushi Rice (In Rice Cooker) #315511, you will need about one-third of this recipe, prep time does not include cooking the rice. -- posted by Lille

Special Shrimp Gunkanmaki - Battleship Sushi Roll

A battleship shaped version of nigiri sushi has a ribbon of nori seaweed wrapped vertically around the rice and toppings. Inspired by Sushi: Easy Recipes for Making Sushi at Home by Emi Kazuko, Fiona Smith and Elsa Petersen-Schepelern and a special scallop sushi I had in a Calgary restaurant, long since closed. "Special" usually refers to the use of mayonnaise in the filling. -- posted by Lille

Vegetarian Tamale Pie

I combined two recipes for this and made modifications to make it vegan. Note that Morningstar Farms recently changed their product to include egg and dairy, so read the label before buying (not all stores carry the brand new bags, Boca is my second choice). Don't be scared off by the vegetarian/vegan label if that's not your dietary preference, this dish is a traditional comfort food. The best part is it's an all-in-one meal, you don't have to serve side dishes (although a dark green salad with a light dressing would go well too). Note that the photo to the side (from me in the baking dish) is the recipe cut in half. -- posted by danakscully64

Laura Frankel's Whole Wheat Challah

Chef/cookbook author/restaurateur Laura Frankel uses this challah recipe in her own home. It uses some whole wheat flour and results in dense, chewy, and delicious loaves.

Challot can be baked and stored, covered overnight at room temperature (not in the refrigerator) or can be frozen for one month.
This will make 2 large loaves or 4 small loaves. -- posted by blucoat

No-Knead Ciabatta

This is one of my most favorite recipes. It has very few ingredients but turns out very well. Hope you like it as much as we do.
(If you want to use whole wheat you can add only a half a cup to this recipe -more than that will make the bread dense) Also if you only have active dry yeast- double the yeast amount to 1/2 tsp. -- posted by Leah's Kitchen

Kiwi, Strawberry and Grape Juice.

I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says "All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels"
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
Enjoy! :) -- posted by TALIA #3

Stuffed Grape Leaves

I didn't mark a "cuisine" for these, because they're a real Heinz 57! Dolmades are Middle Eastern/Greek, but these are my strange variation. Most people don't know, that you can pick your own grape leaves early in the spring, while they're tender, and just pickle them in water and vinegar - there's nothing special about the grape leaves you buy in the store. They reheat just fine in the microwave. -- posted by BritHans

Organic Meal Replacement Shake (With Chia Seeds)

I have been trying, unsuccessfully, to find a "healthy" commercial, meal replacement, that doesn't have artificial sweeteners and/or sugar alcohols (like Xylitol, Manitol, Stevia, etc), which give me migraines. I have MCS (Multiple Chemical Sensitivity), and must avoid ALL chemicals, so organic is a must, for me. Each time I find a shake, I think I can use and recommend to friends, I look closer, and find something in it that won't work. Add to that, the fact that they are all very expensive, and I finally decided to make my own. Here is the result of my search. -- posted by Devonviolet

Maxine's Cream Cheese Chocolate "cupcakes"

My husband's great aunt's recipe. Her and my MIL never got along and she always refused to give her the recipe... well, one day my MIL stumbled across the recipe in her kitchen and immediately distributed the "secret" recipe to everyone she knew :) These are THAT good. You can omit the filling (which will make this a delicious dairy free recipe) and fill the cupcake liners 2/3 full... then the recipe only makes about 18-24 plain (but so delicious) chocolate cupcakes. ***I know it sounds weird but DON'T SKIP THE VINEGAR!!*** It gives the recipe its unique flavor. Also, follow the directions carefully. It just won't be the same otherwise :) -- posted by Summer's Mommy

Whole Wheat Pancakes With Blueberry Compote

This is a refresh of a Wholeliving.com recipe. Martha Stewart's gang opts for low-fat buttermilk, but I never have that on hand so I trade in 2% milk or vanilla soymilk -- depending on what's in the fridge. The added wheat germ supplies some potassium and iron (it has more than any other food). I also add a teaspoon of cinnamon (because I love it) and cut the whole wheat flour with some all purpose flour so they don't taste too "nutty." To make the compote, you can use fresh or frozen blueberries -- up the lemon juice for more tartness and up the sugar for more sweetness. -- posted by Kristine at Recipezaar

Green Herb Seasoned Salt

I like to use this when I reach for salt, So I lower my intake of salt and kick up the flavor of what I cook.
I used home grown herbs that I dried whole. Leaves that are loosely packed into measuring cups. So if using store bought do take note the amounts of the whole herbs would be a lot less. I guesstimate my 2/3's. Great to season any game, roast beef or roast poultry. Season roast veggies, stuffing, rice or potatoes. How about a touch on your eggs.
I do like heat but I kept it down in this using only peppercorns. You can add chili powder to really make it hot! -- posted by ~Rita~

Chicken 65 Curry

This sticky, spicy chicken curry is deliciously sweet and packs just the right amount of heat. It is to be scooped up with warm, chewy naan, then licked off of fingers.Your first step is to hunt down some curry leaves. Their flavour is irreplaceable in this dish - a bit nutty, warm, and citrusy. Used a lot in South Indian cooking, they have nothing to do with “curry powder” which is a blend of spices.Start by browning the chicken in a heavy skillet - make sure the oil is good and hot and the chicken has been patted dry before you put it in the pan. Don’t flip it until it releases easily - if it is sticking, leave it - it will tear if you try and turn it before it is ready. Next, cook the onions gently over low heat for about 10 minutes to coax out the sweetness. Then add the spices to the pan to saute before the liquid is added. These three steps have a big flavour impact.
As far as curries go, the ingredient list is very short. Which makes it a great curry for beginners, if you can track down some curry leaves at an Indian grocer.
Fall Pumpkin and Tomatillo Stew

My recent trips to the farmers markets on the weekend have resulted in some delicious and creative recipes.. Now I said creative, not awesome... Some have not been top notch, but this recipe is a keeper. I'm saving it so i remember how I made it. It's really hearty for a vegan dish. Sooooo Yummy, and even my one year old loved it. -- posted by MC Baker

Creamy Quinoa, Corn, and Vegetable Stew (Vegan)

This recipe is loosely based on 'R's hearty breakfast stew' at R Thomas Deluxe Grill, in Atlanta. It is highly versatile, sometimes I also put spinach and mushrooms in it, but I think there are many more possible additions. I'm not actually vegan, and I eat this for breakfast with chicken. I used to eat a lot of carbs for breakfast, albeit healthy ones, like whole grain breakfast muffins. Since I started eating this, I feel so much better in the morning, it is still filling but I have considerably more energy. -- posted by Cleatuslives

Vegan Spiced Pumpkin Cheesecake

The best vegan adaptation of a cheesecake I've had. I avoid any vegan cheesecakes that call for tofu because the texture turns out funky, and tastes, well, not like cheesecake should taste like. This variation is great for the holiday season! You can make your own crust or find a separate recipe for a cheesecake crust, but I wanted to save time so I just used the pre-made crusts. I would recommend the bigger "extra serving" pie crust because this yields quite a bit of filling. -- posted by J.J.
Apricot-Walnut Oatmeal

My husband and I eat this every morning M-F. The oatmeal is low sodium, low sugar, high fiber. The apricots are high Vit A (beta carotene), the walnuts are high Vit E. Without honey, it's quite bland. Honey, I feel, is a better choice than sugar because it is antiseptic and is thought to help with allergies, from which my DH does suffer. -- posted by DonitaK

This recipe came into being one night when trying to use up the last of my somen. Easy and quick to fix, very little clean up time too! For those that don't like tofu, use a firm tofu that has been frozen at least 24hrs and then thawed (this will give the tofu a more "chewy/meaty" texture). Also, if you don't have chili oil, use a tiny pinch of cayenne pepper instead. -- posted by blueyedwineaux

Hummus - Silky Smooth, from Scratch!

This recipe was published in the food section of my city paper from a local Lebanese restaurant. Amazingly smooth and creamy.

"Baking soda is the secret to silky smooth hummus; it softens the beans so they cook quickly and break down easily when blended. The hummus can be prepared up to two days ahead and stored in an airtight container in the refrigerator until ready to use." -- posted by biznana

Lentils With Cumin and Asafetida

This is a wonderful Indian lentil side dish. Asafetida has a very strong, musky smell that many people find unappealing. Store it in an airtight container to prevent it from contaminating your other spices, and if you really don't like the smell, keep it in the freezer--I left it in my car for a little while and everything in the car smelled like it afterward. Despite the strange smell, I have not yet met anyone who dislikes the flavor once it's prepared! This recipe comes from a cookbook called Madhur Jaffrey's Spice Kitchen.
Pineapple Oatmeal Pancakes (Gluten-Free)

Oh my gosh these are AWESOME! This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them. Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes. Neither one is like this new version though. SO AWESOME!
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.
This recipe makes A LOT of pancakes, and they're very filling. Store uneaten pancakes in the fridge and have breakfast all week! -- posted by kitchengrrl

Freekeh is whole wheat harvested green. -- posted by JustJanS

Awesome Crock Pot Sweet, Sour and Spicy Chicken

A great Fall (or anytime!) recipe for an easy, convenient and mouth watering dinner. You will have a hard time not tearing into it while you smell it cooking! Warning: this feeds a crowd, it can easily be cut in half, or just make the whole thing and have awesome leftovers :) -- posted by emtpixie

Basic Tomato Sauce

This is the base sauce I make in large quantity and then freeze. I often add things to the defrosted portions before use, and I also use it in various dishes, like lasagna. I created it myself. spices can be varied to desired taste. I often swap the sage listed here for rosemary. -- posted by Khyricat

Rice Cooker Chicken, Wild Rice and Veggies

My boyfriend and I made this recipe from stuff we had around the house one night and it turned out great. Easy, flavorful and healthy to boot! I used a packet of Tyson "recipe ready" chicken breast pieces because I had it on hand, I'm sure any meat would work. -- posted by Chef #1404267
