" Big Mac" Meatloaf

I worked in a group home with 7 elderly ladies who like meatloaf. On this day I didn't have eggs so I kinda just threw in some stuff and this is what we dubbed it. My little ladies just loved it. The joke always was don't let me get bored in the kitchen. -- posted by BobbiDoll Kress

Namurrah or Cream of Wheat Cake

This is the easiest cake imaginable! Try it if you're looking for a low-fat cake or if (like me) you're wondering when the Cream of Wheat will ever get used up. The texture is like a muffin merged with pudding. It's different than most cakes but well worth trying. I thought of Najwa's Basbousa #12957 when I saw this in the Arab section of RecipeLand. Both are similar but this version has a thicker syrup and calls for Cream of Wheat and yogurt rather than semolina and buttermilk. The almonds on top are a nice touch. I like both recipes and personally think its best to bake them a day ahead so the syrup can thoroughly permeate the cake. It's great with coffee or tea--if you're concerned about fat in your diet, try this and you might not miss those high fat coffee cakes! -- posted by TommyGato

Chicken and Dumplings

My mom made a similar recipe for this comforting dish, and I still remember the wonderful aroma of it cooking throughout the house. She didn't make it often, but when she did, what a treat. I especially loved the light, tender dumplings, which is still my most favorite part of this dish. (In a pinch, Bisquick dumplings are also very good). For those of you, like my good friend Cindy, who like a more Southern style of dumpling (heavier, chewier), the recipe is at the bottom. This recipe is from Steph's Country Kitchen Goodness. This is my favorite website for recipes. -- posted by Dawn Vezina

The Last Meatloaf

"How do I love Thee? Let Me count the ways." Hot, fresh from the oven, in sandwiches both hot and cold, fried or would that be refried? Crumbled for Pasta sauce, Omelets, Enchiladas, Tacos, Quesedillas. The other ingredient for Rice, Pasta, Potato, or what have you casseroles. There isn't enough room here to list them all. There are few things to compare with a good, basic, simple Meatloaf.
Hoe Cakes

Farm hands would take the 'makings' into the fields. at lunch time they would knock the handle out of their hoe and use the blade for a griddle. While it was heating they mixed the batter. The result was simple corn flat bread. We've spiffied it up a bit and serve it topped with Real Maple Syrup and Eggs over medium on the side. After these, plain Pancakes sort of loose their appeal. -- posted by Pierre Dance

Louisiana Dirty Rice

My favorite dirty rice recipe straight from "A COOKS TOUR of SHREVEPORT" cookbook. Some of the ingredients are optional and if you prefer you can use white long grain rice in place of the brown,I prefer the brown, though I would not recommend using fragrant rice. This recipe is extremely versatile and can be used as main dish, along with salad and garlic bread,or as a side,or stuffing mixture.I like to season mine up with some additional creole seasoning such as zatarin's but would suggest tasting in between seasoning.ENJOY! -- posted by @ngdarlen

Autumn Chicken Stew

I adapted this recipe from one that appeared in BBC Good Food magazine and loved the rich, earthy flavours it produced. The original inspiration for this dish apparently comes from Tunisia and it certainly reminded me of some African stews I have had. The changes I made were to use butternut squash instead of pumpkin, fresh ginger instead of ground and two cans of tomatoes instead of one. I also used my chili olive oil, which is stored in a jar with hot chillis to give it some bite, but if you don't have any spicy oils to use, you could add in a bit of chili powder, cayenne pepper or some harissa. This is a very adaptable recipe so have fun playing with it. -- posted by Sackville

Sweet Potato Pie

I got this recipe from somewhere a long time ago. A nice alternative to the ever popular Pumpkin Pie!
Stock your pantry ahead of time to whip up this delicious satisfying soup. It comes together quickly for a nice meal.
Midwest Living's Bouja / Burgoo

Weekday Black Beans and Rice

My family loves this recipe and it's so easy to throw together after work. It's pretty spicy, how spicy depends on the andouille sausage that you use, mine was quite hot and so the resulting dish was spicy hot, but good. I reduced the amount of red pepper flakes to appease my family's preference. This will make your house smell as if you've been cooking, rather than out working, all day! I found this in the Chicago Tribune, the author, Donna Pierce, re-worked her Grandma's recipe to make it after-work friendly. -- posted by Hey Jude

The Best Benne Wafers

"Benne" means sesame seeds, and these are deliciously crispy little cookies. I made these recently for a friend-of-the-family who celebrates Kwanzaa, and he loved them. They originate in Africa, but have become a tradition in the deep south of the United States. They are also the only Kwanzaa cookie type I could find; as an added bonus (although the ingredients sound REALLY weird), they're delicious! -- posted by hannahactually

Injera (African [ Ethiopian] Flat Bread)

This is a simplified version of Injera. There are many sites where you can find the more traditional way of making it but this is quite close in taste and texture and 300 times easier. Injera is used the same way some cultures use Tortillas, as a scoop and/or wrap for food. Try this with any sort of saucy dish... it's great and oh so simple. -- posted by JanetC-KY

Dawa (African Cocktail)

Dawa means "medicine" or "magic potion" in Swahili. In other words, a dawa is said to be so potent that it will cure whatever ails you. The recipe is based on a famous Brazilian drink that was introduced to Kenya. It is now one of the most widely consumed cocktails in Kenya and has spread through out North and South Africa (especially in touristy regions).
Dave's Barbecue Sauce

This is a wonderful barbecue sauce! Get all of your ingredients measured out and ready for you. That way, it only takes a couple of minutes to make your recipe. This is a great sauce for any kind of meat or even fish. It's great on everything. I use this for my barbecued beans, delish! The amount is approximate. Hoisin sauce should be in the Oriental section of your supermarket. It's kind of like ketchep in Asian cooking. Chili sauce should be near the ketchup. It isn't "hot" even though it says "chili" sauce. Heinz is the best, but any will do. -- posted by FLUFFSTER

Pina Colada Freeze (No Alcohol)

This is so refreshing! If you love coconut, you'll love this! I usually freeze the rest of the pineapple. I measure out the tablespoons, then put them on a waxed papered cookie sheet and flash freeze them; when they're frozen, I put then in a plastic freezer bag, so that when I want one(Or more lol) the pineapple is easy to get to. This calls for Torani Sugar Free Coconut Syrup. I don't know if you can find this, it may be the same thing but be a different brand. It's worth looking for. They have some at Sam's club, I buy mine in a restaurant supply store. They make syrups flavors in just about anything you want. Some are sugar free, some are not.

Note:I have no idea how much sweetener is in the little packets, so for the computer's sake so I'll take a stab and say 1/4 tsp. -- posted by FLUFFSTER

If you've always thought beans were boring, try this super recipe flavored with almonds. The beans are served over couscous, a grain popular in Northern Africa. I thought this was okay the first day, but the next day, I couldn't keep away from it! The first time I made it, I didn't make the couscous. You can make this in a crockpot too. Just check the water occasionally.
