			<description>This is one of the first recipes I learned while away at college.  Its a very simple side dish or main course.  And great to take for a potluck dinner.    This recipe freezes nicely and the leftovers are wonderful the next day.  If you want, you can saut&amp;eacute; onions in some butter and serve on the side.  I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. It uses TVP, or textured vegetable protein, which is a dried soy product available in granules or chunks that, when cooked, resemble the texture of ground meat. 			<description>During Christmas, we were on holiday in Scotland. I asked my mother-in-law, &amp;quot;Have you ever made a dish called &amp;quot;rumbledethump? They're talking about it on a website. (Zaar)&amp;quot;  She laughed and said, &amp;quot;That old thing! We ate it as kids and when newly married! I haven't made it in years!&amp;quot;  She explained that if you asked a 100 Scottish women to make this dish, you'd come up with 100 variations.  

Some use onions, some use chives. Some boil their cabbage, some fry it. Other's add turnips or parsnips or carrots. But however you make it, this is Comfort Food at it's highest elevation. I watched her make it from scratch, took notes and asked questions. The end result is her version, which comes from the Loch Lomond area of Scotland.

What I love about this variation is the great contrast between the tangy tomato topping and the incredible richness of the cabbage/onion/potato filling. Top it with cheese and you have some of America's favourite flavours: tomato, cheese and potato.  I should know: I ate three pieces the first time that I ate her version!

Here's one gleaned from Gourmet magazine, Nov. 2006 via Epicurious. Enjoy! This is one big casserole, but at the restaurant it was in individual dishes. You may add the cheese between each layer or just use it to top, or leave it out if you prefer! On the  website, this has 92 wonderful reviews! this is even better the next day. You can half this recipe and cook in a 9x9&amp;quot; pan. This is so good, serve to company and for the holidays. This recipe calls for slicing raw squash but to make it easier to cut, microwave for 3-5 minutes, or lightly steam or bake and then cut in pieces. This is what I came up with &amp;amp; as weird as it sounds, it is delicious!  At least to us - everybody, even THE PICKY ONE, loved this.  No leftovers for the 4 of us but it's easily doubled.  It says 8 tacos because that is the yield I got with corn tortillas.  Please remember that flour tortillas are often bigger &amp;amp; will need more filling.
