We make 2 batches of these a week, wrap them in parchment paper and seal them in an air tight glass container.  Note: If you are gluten intolerant, you need to make sure that the rice and corn cereals you choose are gluten free.  Some rice and corn cereals contain malt which is derived from barely. We love homemade tortilla chips, but turning them was driving me nuts until I had a lightbulb moment--so much nicer than my usual senior moments! Six 6&amp;quot; tortillas will fill a standard cookie sheet. If making a big batch you can have two pans going and reverse the order; it doesn't matter which side is cooked first, but it IS easier to watch the tops after changing position. For best results keep the oven door open during the entire process to insure that the heating elements stay on. 			<description>Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. 			<description>This is an evolved recipe.  I started with a recipe for cinnamon lime fajitas, but I'm not keen on the potatoes.  I didn't have peppers; but I do have cabbage...Look, a recipe for fajitas using cabbage!  But it's raw and it's  winter....nahhh.  This is what I came up with &amp;amp; as weird as it sounds, it is delicious!  At least to us - everybody, even THE PICKY ONE, loved this.  No leftovers for the 4 of us but it's easily doubled.  It says 8 tacos because that is the yield I got with corn tortillas.  Please remember that flour tortillas are often bigger &amp;amp; will need more filling.
