Mini Meatball Heroes by Giada

This recipe comes from Giada De Laurentiis. Mmmmmm....this is on the table in less than an hour! You can use any combination of meats to equal 1-1/2 pounds. -- posted by Charmie777

Preposterously Paradisiacal Panini

This was the first panini I made on my grill/press and dayam, sam! That’s an impressive little machine! If you don’t have a panini press, you can use a brick well-wrapped in foil and a skillet, but it’s not nearly as much fun. ;o) -- posted by Sandi (From CA)

Italian Sausage Meatloaf Sandwich

This simple recipe was devised from a rare flash of inspiration and ingredients I had on hand. I started out making a regular pasta dinner & got sidetracked after I had made the bread and thawed the meats. I used premade basil pesto & jarred onion-garlic marinara sauce to speed this dinner along. This could be easily changed to reflect what you have to use up. *Definitely a recipe for skinny, heart healthy folks! The rest of us can only lick our chops. -- posted by SusieQusie

Italian Lunchbox Sandwiches

I designed these to be stored in the refrigerator for up to a week before eating. I make them in batches of 10, so my boyfriend and I can just grab one in the morning to take for lunch. They're elegant and tasty enough to serve as party or luncheon food, too--just probably not after a week in the fridge. -- posted by archimageiros

Low Fat Club Panini

I got the inspiration for this sandwich from Recipe #152596 from Pets'R'us, but this is a more "low fat" rendition of it.
I find also if you heat the bottom of a medium sized skillet, place it on top of the sandwich, and place a tin foil wrapped brick in the pan on top, it will press it just as well as a George Foreman Grill. -- posted by Hazard195

Quick to Fix Cheese Calzone

Variation on a Robin Miller recipe. She used steamed broccoli and no garlic in hers. You can use any vegetables (roasted or raw) you like or cooked meat (pepperoni, sausage, etc). When I made this, I actually used two cans of Pillsbury pizza dough (about 13.5 ounces each) and divided the filling to make one veggie calzone and one pepperoni calzone. -- posted by HeatherFeather

Campfire Calzones

Okay, this is a much-beloved SECRET PARK RANGER RECIPE that I've used for years, impressing campers at my park as well as family and friends. This version (below) is the one I use most often but I have also offered alternatives, in the directions section of this recipe for all tastes, kids and adults alike. For this unique recipe, you will need either a charcoal grill or a small campfire. You will also need a campfire pie or sandwich baker, (also called pie irons), which you can easily find at Wal-mart in their outdoor section, or, at any outdoor supply store. They come in both square (sandwich) and round (pie) versions -- you can use either one with equal success. These babies are so delicious, fast, and easy that they're certain to become a family favorite at home or on camping trips which your kids will surely pass down to their own kids some day. The recipe screams out for substitutions and variations so have a lot of fun with this one! -- posted by Bone Man

Joshua's Little Pizzas

My kindergarten teacher's son Joshua created
these pizzas. You see when I was in kindergarten he wasn't born, but my niece, Mia, is in his class now. Small world huh? Anyways Josh created these "Little Pizzas" when Mia was at his house for a play date! This recipe is in the words of Joshua himself (with a bit of punctuation hehe!). He says: "deez Pizzis are fum Berklee (these pizzas are from Berkeley). Enjoy!
Love Joshua and Mia and Andi.
NOTE: All toppings should be ALREADY cooked!
For the toppings you can add anything! Josh's
sister Ella is lactose intolerant so we used pesto! Be creative--it's YOUR pizza! -- posted by The Happy Cook

Italian Panini

One day while watching food network I saw a panini made on Paula's Party and it looked absolutely delicious. I searched the recipe and realized I wouldn't be able to find much of the ingredients here. So I decided to try and create my own so to speak with what I could find. A few tries later I settled on this one and I am done searching! It is fabulous! A great blend of flavors! I am not sure how easy it would be to find those meats singularly but I bought them in a gourmet pack in the deli section. I had to name the meats "sausage" so that recipe zaar would recognize them, though I don't know that they are actually a sausage or not. Its more like a salami or pepperoni. -- posted by CulinaryExplorer

Tantalizing Roasted Vegetable Sandwich With Secret Spread

HOLY COW, this sandwich is marvelous. I'm only 3 bites into this amazing creation, and I had to come post this recipe lest I forget it. You can vary in any way you like from the original recipe, but the most important part is the cream cheese spread!
Egg Sandwich

When Friday morning rolls around we on the farm rejoice -- and although for us this isn't the end of the week, (our Saturdays are really busy) there is a certain celebratory aura that overtakes us. This egg sandwich was the brain child of Giada De Laurentiis but adapted for fast paced life here on the farm. I often make my own sauce from the summer tomatoes, but please use any sauce you have on hand. So with a full stomach Dennis heads out the door to face the day, when he gets home later on the day, we have a Saturday to go through.
Mama Maroni's Meatballs and Sauce

From "Throwdown with Bobby Flay". My boyfriend Loves this dish, he say's that they are the best meatballs he has ever eaten. They are great served with spaghetti or especially good served in a toasted hoagie roll with a little melted cheese on top. The sauce is thick and full of flavor. Be sure to use good quality "Crushed" tomatoes, not diced or stewed etc. It's key to the sauce coming out perfectly. I add a little red pepper flakes for a little more kick. Also, the original recipe doesn't mention adding salt to the meat mixture, but it is needed in my opinion. These are super easy and so, so good! -- posted by Not-2-Sweet

Porchetta - Italian Marketplace Slow Roast Pulled Pork Sandwich

This is JUST gorgeous! A domestic take on the classic Italian marketplace or street food, Porchetta, which is actually roast suckling pig. Porchetta is thickly sliced and served in ciabatta bread as a delectable hot sandwich throughout Italy. My recipe is a much-adapted recipe taken from one of Nigella Lawson's cookbooks, and it is SO easy to make at home. I cook mine in the crock-pot for meltingly soft and tender pulled pork - however, I have also given traditional roasting directions in this recipe. Preparation time includes the 24 hour period required for the pork to marinade in its herbed and spiced rub. -- posted by French Tart

Semi-Homemade Italian Sausages & Peppers

Total comfort food that couldn't be easier!!! Whip it together in 5 minutes and simmer for 45 minutes. Italian restaurants usually serve this on a bun/roll, but we prefer it "as is" (without bun and low carb). Make sure you cook a little extra. . .cut up your sausage, mix back in the sauce, place the sauce overtop pasta noodles, cover with cheese and bake. . .what wonderful leftovers! I also used to lightly toast the kaiser rolls in the oven for a little something extra! -- posted by ceceusmc

Hot Truck P M P - Poor Man's Pizza

This is posted in tribute to Bob Petrillose, its creator who passed away last month. I had the honor of eating way too many of these pizza subs during my college days. Rumor has it that a student who worked in the truck sold the idea to Stouffer's and was the origin of the French Bread Pizza.
A Taste of Italy ... for 1

Recently we were told our son was allergic to milk, eggs, and peanuts so we have made some pretty major diet changes in our house. I love food so it has been pretty hard, but it has also challenged to me try new things and come up with new dishes to prepare. This sandwich is the result of that. Measurements are just estimates since I don't really measure things out for a sandwich but wanted to give you an idea to base your own sandwich off of, as well as for the nutritional info. It can obviously be doubled or tripled or whatever you need depending on how many sandwiches you are making. In this sandwich I can honestly say I don't miss the eggs or dairy! Its simple but oh so flavorful! -- posted by CulinaryExplorer

Like red, plump tomatoes; fresh basil and mozzarella; red onions and green peppers; salami, ham and capacolla - drizzled with homemade Italian vinaigrette.
This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella.
Quick and Yummy Meatball Panini's

A semi-homemade recipe I came up with trying to please my son's craving for a meatball grinder (New England name for a sub or hoagie) and my wish not to waste a loaf of ciabatta bread I had bought the day before. The result? My son said they were "amazing" and he was glad I didn't order out and I thought they were quite yummy myself! FYI - the infused olive oil can be stored in the refrigerator in a sealed container to be used later in the week in any pasta or italian dish.
Instead of going out make it at home. Choose the veggies of your choice, but this is how I like it. -- posted by Vicki in CT

The Ultimate Stromboli

This is the best stromboli recipe I have ever used. It is my brother's recipe and once you try it, you'll see what I mean - your guests and family will rave! You will need to find an Italian deli to get the ingredients. Try it as written the first time and then later you can make changes if you want to make a simpler version. I use 2 pizza dough balls, but I couldn't get the site to accept that wording, so it says one. Knead the two together by hand for a couple of minutes & you should have the right amount of dough. My directions make it sound complicated, but basically, you just roll out the dough, layer everything in columns, roll it up and bake it. -- posted by Pesto lover
