This recipe is based on the dish from my local Italian Pizzeria here in NJ - theirs consists of:  meat tortellini, chicken, pancetta, prosciutto, and minced onion in cream sauce. 			<description>Heres the deal.if you want REAL authentic Italian tomato sauce, youve come to the right place. Sure you can save yourself all the time by opening a couple cans of diced/peeled tomatoes, but then again, thats not authentic at all. You can freeze this sauce for later use.

This sauce is perfect for anything that requires a tomato sauce: e.g. spaghetti, lasagne, pizza sauce, etc. 

My girlfriend learned this authentic recipe while living in Italy for several years. Its simple, but takes a lot of time and a lot of love, but its well worth the effort! This is for your free Saturday or Sunday when you will be in the house for the day. 

Add more tomatoes, garlic, or basil if you wish. There really is no set amount for each of these, but I do suggest a minimum of 10 whole red ripe tomatoes, and a minimum of 5 garlic cloves. Add some crushed red pepper to give it a kick if you wish. 

This recipe is the rundown of how I make the sauce now. It took me several attempts to really master this, but once you get it down you can make more tomatoes at a time. I usually work with two pots and start out with 10 in each pot, skin all the tomatoes in both, combine and start more in the empty pot to really make a large pot to freeze. The local vegetable stand sells 25 lb. baskets for $9 while in season. We do 50 lbs. a week for a month, so we can freeze and have great sauce all during the winter.

He always thought regular marinara sauce was too &amp;quot;strong tasting&amp;quot;....I think it is just too acidic for him.  However, he loves cheese and loves italian sausage.  Much to my surprise, I have found that I love this dish as well.  I prefer to make the sauce myself, but if you are pressed for time, substitute your favorite pre-made sauce and just add the italian sausage and cream.  If you aren't a fan of italian sausage, substitute 1/2 the sausage for ground beef or ground turkey.  The rosemary is optional. I like it, but some don't like the taste. If you don't have a picky eater, I would add some mushrooms and possibly some bell peppers. For the entree, a recipe for some type of Mushroom Ravioli was a natural choice since this is what Bella ordered when Edward took her to dinner.  After searching online, I found a casserole type recipe for ravioli that had a mushroom sauce.  A salad and Recipe #362337, named after the color of Edward's eyes, completed the meal.  We thought the original recipe as written was a little on the bland side.  So I went to the Italian forum asking for help with the recipe and Chef Dee514 was kind enough to give me suggestions for the recipe.  I have now made the recipe incorporating her ideas and although it wasn't suggested, I did opt to leave in the container of alfredo sauce.  Much better than the original recipe I had posted and I hope you'll think so too!
