Chicken With Prosciutto Di Parma (Pollo E Prosciutto Di Parma)

This recipe is from Giuliano Bugialli's Classic Techniques of Italian Cooking. I made it this past weekend with 20 drumsticks, 20 slices of Prosciutto di Parma and doubled all other ingredients. It was the most tasty dish at the party and everyone loved it! The chicken was incredibly flavorful and juicy and the prep is quite simple as well. I put everything together the day before and just roast it in the oven before the party. -- posted by Grace Lynn

My hometown newspaper (The Orlando Sentinel) finally published this, my favorite chicken dish ever, in their "Thought you'd never ask" column. There are copycats on Zaar, but this is the actual recipe, as given by Carrabba's.
Lighter Angel Hair Pasta With Lemon and Chicken

Ravioli With a Wild Mushroom Creamy Alfredo Sauce

My daughters and I are total Twilight fanatics. To celebrate the release of the dvd, we all got together for dinner before watching the movie. For the entree, a recipe for some type of Mushroom Ravioli was a natural choice since this is what Bella ordered when Edward took her to dinner. After searching online, I found a casserole type recipe for ravioli that had a mushroom sauce. A salad and Recipe #362337, named after the color of Edward's eyes, completed the meal. We thought the original recipe as written was a little on the bland side. So I went to the Italian forum asking for help with the recipe and Chef Dee514 was kind enough to give me suggestions for the recipe. I have now made the recipe incorporating her ideas and although it wasn't suggested, I did opt to leave in the container of alfredo sauce. Much better than the original recipe I had posted and I hope you'll think so too! Huge thanks and hugs to Dee514 for all her help!! :) -- posted by Dreamgoddess

Pasta With Chicken in a Light White Wine and Fresh Herb Sauce

This is a fresh, light meal that is great for the warmer times of year. The sauce is not thick or heavy but coats the pasta for an even flavour. The choice of herbs here is merely what I have found to work well but please adjust to your family's tastes! The herbs should be fresh though- dried herbs will not give the same result. The fresh basil really brings out the flavours in this dish. UPDATE: In light of a review, I have tried this dish again and increased the liquid ingredients in the recipe to provide more sauce. It is important in this recipe to include the stock cube as there is something in it that thickens the sauce. If you must leave it out, add an alternative thickening agent. -- posted by Shuzbud

Rosemary Roast Chicken With Smothered Potatoes

The reason the potatoes are called smothered here is because they are roasted under the flattened chicken, where they absorb all its juices. Prep time assumes the chicken is already butterflied. This is easy and delicious hot, tepid or cold.
Chili Chicken Pasta

I first made this recipe years ago after trying something vaguely similar from a cafe in Sydney. DH fell in love with it instantly. Hadn't made for years until last night, but wanted to put it back on rotation now that I can easily find gluten free pasta. Hope you enjoy it as much as we do. -- posted by Heydarl

An easy and healthy recipe from Cooking Light Magazine (June 1999). It's also great if you add a little salsa to the wrap and the marinade works really well for grilled chicken breasts!

Chicken Pesto Parmesan (Non-Breaded)

A non-breaded but super tasty spin on chicken parmesan. This is a recipe I just threw together one day when I was trying to think of something to do with chicken breasts and a little leftover pasta sauce. It's EASY and takes no time at all to prep if you have pre-made sauce and pesto. I make this with Kittencal's Perfect Pesto (#144195) and my own Magic Fresh Tomato Sauce (#388224). I never bother measuring myself, so you might have to adjust the amount of tomato sauce so it's close to but not covering the top of the chicken. Serve this with angel hair pasta if desired. Once again, I will beg you to use real shredded parmesan cheese and not the powdered stuff in a can. This makes a huge difference, and you don't even have to shred it yourself if you don't want to - just pick up a bag of pre-shredded. Any Italian blend cheese works great too. -- posted by ItalianMama

Basil-Arugula Salad With Chicken & Prosciutto

This is a salad-ified version of a chicken pasta dish I had once at Cheesecake Factory. It is both hearty and light, and rich with complex flavors. The basil adds a pesto-like element to the ensemble, and the dijon in the dressing (modified from Mille® ™'s Dijon Paremsan Dressing, recipe #21008) brings out the peppery taste of the arugula. Because prosciutto is rather salty, be stingy with salt on this. The prosciutto should offer just the right amount. -- posted by SJBG

Chicken and Mushroom Pasta Bake (Spaghetti Tetrazzini)

Jamie Oliver says - "I remember meeting a lovely old couple outside my parents’ pub and when they heard I was going to Italy they told me to make sure I cooked turkey tetrazzini – I hadn’t a clue what they were talking about and then, by chance, I saw a recipe for chicken tetrazzini in an old Italian cookbook and it’s great – really tacky but gorgeous!
We eat a lot of boneless skinless chicken in our house, so I am always experimenting with ways to make it more interesting. The delicious cheesy, garlicky sauce will have you asking for seconds! I used a Mexican blend of cheese and it turned out amazing, so I think you could play with what types you use to get some different tastes. -- posted by stonecoldcrazy

Prosciutto/Chicken Breasts/Eggplant Panzanella/Raisinvinaigrette

"Chef Barbara Lynch's take on saltimbocca gets its richness from Taleggio* cheese, which is stuffed in the chicken breast. A slightly sweet bread salad is served with the chicken." Bon Appetit Magazine, September 2009 Edition. The real name of the dish is: Prosciutto-Wrapped Chicken Breasts with Eggplant Panzanella and Raisin-Pine Nut Vinaigrette - with "Taleggio cheese that is a semi-soft, washed-rind cheese from the Valtaleggio region in northern Italy, near Lombardy. It is characteristically aromatic yet mild in flavor and features tangy, meaty notes with a fruity finish. The texture of the cheese is moist-to-oozy with a very pleasant melt-in-your-mouth feel. The combination of the soft texture, pungent aroma, and buttery flavors has proven to be addictive especially when spread on fresh crusty bread! Taleggio pairs nicely with Italian Nebbiolo wines, as well as a wide range of reds & whites." Cooling times have not been included. -- posted by Manami

This chicken dish is a great base for other dishes such as shredded to make in salads, pastas and sandwiches.

Chicken Parmesan Bite-Bake

Okay it sounds silly, right? I find it hard to fry the chicken breasts because they're different thicknesses from one end to the other. I just cut them into bite sized cubes and continue on with the recipe. My mom likes it with pasta under it, but I really just like it with a nice salad and some cheesey bread. Add as much or as little as you like; this is just a basic, tasty recipe. Enjoy. :o) -- posted by NicolinaSurel

This is a nice light pasta - the sauce isn't heavy (or, really, very saucy at all) and the ricotta makes it just a touch creamy. It's also quite healthy. This is one of those recipes that can be made quickly with what you have in the kitchen! Instead of overdoing the pasta - we used whole wheat pasta & bulked it up with veggies and lean chicken breast.
Sicilian Chicken Soup

A hearty spicy full bodied chicken noodle soup, perfect for cold nights, or people with colds!

This recipe was inspired by Carrabas Mama Mandola's Sicilian Chicken Soup. My friend and I absolutely love it, but we live too far away from a Carrabas to have it more than once a year or so. We tried other "copycat" recipes we found online, but none of them were even close. So through trial and error we created this recipe.
Cider Sauteed Chicken over Pasta

This was a one-off experiment that needed to be remembered. Flavorful chicken breast, sweet onions, and tender pasta. It has all of the makings of a hearty, yet healthy meal for the family! The preferred pastas are either rotini or angel hair, as both tend to hold the delicate flavors of the sauce better.

Recipe from bottle of Holland House cooking wine for Chicken or Veal Marsala. Taste very much like what is served in local Italian Resturant. -- posted by Chef #1334638

Lynne's Chicken Marsala

I went to Italian cooking class and was taught how to make this dish. I use chicken tenders to make it quick and easy. If you use chicken breasts, take the time to pound the breasts flat. Of course, veal can be substituted for chicken, I have never made it because of the cost of the veal. Also, I buy the sliced mushrooms to make it quicker. -- posted by WorkingMom2three
