			<description>What a delicious combination: smoked salmon and chive pancakes!  This dish is part of Irish cook Kevin Dundon's dinner menu for St Patrick's Day that I was delighted to find just recently in the March 2005 edition of the BBC Good Food magazine.  And I certainly won't be waiting for St Patrick's Day 2006 before I try it.  He describes this as a 'prepare ahead starter': the pancakes are served at room temperature.  One detail in this recipe, I suppose incidental, that really intrigued me was that he doesn't use commercial spray-on oil.  A reminder that there really are alternatives to so many of the products that the advertisers try to foist upon us. He suggests a simple alternative, one I opted for years ago after reading that commercial spray-on oils contain carcinogenics.  But I have rarely seen recipes that suggest this.  I have already posted the side dish to Kevin Dundon's St Patrick's Day menu: his scrumptiously creamy Colcannon.  Next I shall be posting the main course dish: Guinness &amp;amp; Honey Glazed Pork. 			<title>Guinness &amp;amp; Honey Glazed Pork Loin</title>

			<description>In his Las Vegas restaurant, The Nine Fine Englishmen, Kevin Dundon serves this Guinness glaze in a dish mixed with olive oil for dipping bread into instead of butter.  Pork loin cooked with this glaze sounded just too delicious not to share.  I found this recipe in the March 2005 issue of the BBC Good Food magazine.  It is part of Irish cook Kevin Dundon's suggested St Patrick's Day dinner menu.  He serves this pork loin with colcannon and cabbage. As he says I love buttered cabbage with this pork. Simply heat a knob of butter and cook the remaining finely shredded cabbage (the other half of the Savoy cabbage used in his colcannon recipe) for 5 minutes, so its still just a little crunchy.   I have already posted his side dish colcannon - Colcannon recipe #123663 - and his prepare-ahead starter - Smoked Wild Irish Salmon With Chive Pancakes recipe #123667. The preparation and cooking times provided below are my guesstimates. Kevin says that this dish will be &amp;quot;ready in 2 hours&amp;quot;. Please mention your experience of cooking times if reviewing the recipe. Ill also post his dessert for this St Patrick's Day menu: Sheridans Cream Sticky Pudding.  All the dishes in this menu sound like any-time-of-year dishes to me! 			<description>This recipe for an oh-so-decadently-delicious Irish-Greek-chocolate-and-cream drink was part of an article on ouzo in the October 2005 issue of cooking magazine 'Australian Good Taste'. The article was called 'Greece Lightning' and begins: &amp;quot;A potent Greek spirit that has the ability to turn cloudy, ouzo can have the same effect on you - so take care not to overindulge in our delicious drinks, dessert or dressing.&amp;quot; A cocktail?  Well the ingredients suggest that but the photograph showed Chocolate Bullets served in two tall smoothie-style glasses.  This is clearly not a drink for the faint-hearted!  I've listed this as serving 2, but I think it could also be served in 4 cocktail glasses.  The original recipe specified &amp;quot;chocolate topping&amp;quot; as the fourth ingredient; ever with a mind of its own, Zaar converted this to &amp;quot;chocolate fudge topping&amp;quot;, which would I imagine be sweeter. BTW, if you're using metric measurements, 1 cup = 250 ml. 			<description>This recipe comes from The Ballykissangel Cookbook which has been leant to me by my good friend Joan.  Ballykissangel was a very popular gentle drama series set in the fictional Irish village of the same name.  The cookbook is a collection of traditional and modern Irish recipes, created by Aidan Dempsey, who used to do the catering for the BBC film unit.  This cake can be made in advance, frozen, then served straight from the freezer.  The recipe states that this serves 4, but I reckon that that's a typo; this will be rich and even though the cake is not deep, a quarter of a 9 inch cake still sounds like a lot of cake to me!  You will gather that this means that I havent tried this yet, but it  sounds super good and super easy to make; it would also be a good way to use up egg yolks if you have been making meringues. I love the name of this soup and it would be so good served with smoked Icelandic lamb meat. Dare I also mention that my Mother's maiden name was Sullivan and my father's last name was Ryan! So I'm an Irish Colleen born in the U.S., half-raised on Czech food, who developed a fondness for Tex-Mex fare, and eventually moved to Iceland. Now that's a real culinary cultural exchange program of epic proportion! :-) ...

History:  From 1939 to 1945 Joseph Sheridan was the head Chef of a catering company based at the Shannon airport (20 miles north of Limerick , Ireland ). Joseph Sheridan was taxed with trying to find a suitable drink for passengers who had traveled for eighteen hours by seaplane and then had to travel by boat to the terminal. Hot coffee and tea was obviously not enough to take the chill out of the passengers so Joseph began to offer an alternative. His mix of Irish whiskey and coffee became known as Irish Coffee, and Joseph had secured his place in drink history

To this day if you travel through Shannon Airport you will find the Sheridan Bar in the departures lounge, and a plaque that has been placed there in honour of Josephs great warm libation.
