I played around with some of the ingredients(mainly because I was too lazy to go down in the basement to get the other bag of all-purpose flour) substituting some whole wheat flour and quick oats for some of the all-purpose flour it called for, and using light brown sugar in place of half of the white sugar. This is a kid-pleaser, with or without the topping. The original recipe states it makes 12 regular-sized muffins. Usually I double the batch and make two loaves, then slice, bag, and freeze the leftovers.  Just pop in the microwave for a few seconds to defrost.  Great served with preserves, cream cheese, peanut butter, or other spreads.  And did I mention that my kids love this stuff? If you end up baking often, it would pay to make a batch of the white flour, whole wheat flour, and wheat germ for faster baking.  This uses Orange Puree, a blend of cooked carrots and sweet potatoes.  If you are short on time, you can use jarred baby food instead.  The texture of the puree is essential in hiding the texture of the vegetables in these muffins. Finally I came up with this recipe.  My family really LOVES it and  often  friends and  family go back for 2nd and 3rd helpings. I used this as a side dish but the ripe bananas add enough sweetness to this dish that it can be used as a dessert without adding any sugar. Any type of squash puree can be used for this including canned pumpkin.

All six are really pretty good and I've made them for myself in a pinch. I would either try to use leftover meat from other dishes I'd prepared or intentionally make extra to use for these meals. My son used to have a three-compartment baby tray with lid and I'd put one or two frozen cubes in the first slot, a little baby vegetable in the second slot and a little baby fruit in the last slot and he was set for lunch. I'd have his tray ready the night before or in the morning and by lunch the frozen cube(s) had almost thawed and just needed a little warming in the microwave.
