This is from the Beyond Parsley cookbook put out by the Kansas City Junior League awhile back...

Eggless Semolina Pasta Dough (From Bob's Red Mill)

Will be attempting this tonight. Per the Bob's Red Mill website:This recipe can be made without the unbleached white flour, producing a very good pasta, but it is harder to work with. To create an eggless pasta with any type of flour, substitute about 2/3 cup water for every two eggs.

Personal note: the olive oil in this makes it more workable for filled pastas than would be a fat-free dough. -- posted by ZoeB

Caribbean-Style Rice and Beans

Almost every ethnicity includes a rice-and-beans dish as part of its cooking tradition.
Shredded Wheat Cookies

This is how I get rid of our extra plain, boring shredded wheat that no one really wants to eat. They are crunchy, but still soft. To my taste buds, they fashion a taste somewhere in between peanut butter cookies and oatmeal cookies, but with a crunchy aspect to them, paired with a hint of chocolatey goodness. The baking time is for a couple batches, but it will vary depending on how big your oven and/or baking sheets are. -- posted by zoegirl21

Black and White Cheesecake Squares: It's a Martha Good Thing!

Chocolate AND cream-cheese in one recipe--I'm sure these are "too good for kids," so share sparingly with the younger set! The rich chocolate base provides the foundation for the creamy cheesecake layer with generous chocolate crumbles scattered over the top. This one comes from the back page in Martha Stewart Living's magazine "The Last Course", April '09. Prep Time includes chilling cookie layer after baking (before adding the cream cheese layer). -- posted by Debber

Peanut Butter Chicken

I don't recall where I got this but it's a family favorite that we make often! We generally use a mix of white and dark meat so use your preference. All ingredients can be adjusted to taste. Fish oil can be omitted but it really adds to the flavor! I highly recommend adding the peanut butter a little at a time and tasting the sauce with each addition as some may like more or less peanut butter flavor. Rotel is a great substitution for the diced tomatoes if your family likes it.

I've quadrupled the recipe with great results for large gatherings and you can easily scale back the chicken and add more onions and mushrooms to make this even more budget friendly. Leftovers freeze well and reheat easily in the microwave.

This also works well in the crockpot by throwing in everything except the peanut butter (and rice or noodles) and cooking till the chicken is done. Mix in the peanut butter just before serving (it may work fine going in with everything else but I haven't tried it for fear of a burnt peanut flavor). -- posted by persi

Best Chili Ever!

Rachael's Recipe Notes:

Yes, you are reading the ingredients correctly - fennel seed, ground cinnamon and unsweetened baking cocoa are what make this delicious!
I make this in a 4 quart stainless steel pan on the stove top, but after sweating the onions and peppers and browning the meat, if you want to put this in a crockpot and cook on LOW for 4 to 5 hours, it's just as good!

If you like, you can add a can of diced tomatoes, undrained (15 to 16 ounces), at the same time you add the tomato paste. Sometimes my family likes the diced tomatoes, sometimes they don't.

I serve this with homemade jalepeno cornbread and/or crispy tortilla strips. -- posted by Rachael's Kitchen Goodies

Chai Tea the Simple, Quick, and Delicious Way!

This is a fast and simple way to make a large pot of Chai tea for company or to put in the fridge for a weeks worth of Iced Chai! This recipe comes from Vikram Vij's brilliant Indian Cookbook, found here http://www.amazon.ca/Vijs-Elegant-Inspired-Indian-Cuisine/dp/1553651847. I have changed the method and measurements slightly.

This is a very basic recipe that is open to extensive modification. Try it with whole allspice, cloves, a cinnamon stick, or even dried apple peices! The possibilities are endless!

I do this on the stovetop, but it would also be very possible to boil the water in a kettle first. I find allowing the spices to sit in the water as it boils enhances the flavour. -- posted by TheJourneyman

Easy Seasoned Parsley Potatoes

I started making these when my parents got ill & I needed a quicker way to make potatoes for potato lovers. You can change this up many ways with different seasonings. I've done spicy for my family & have even put a mexican flair to a batch that was good. Like always...sour cream can always be added too. -- posted by shadowgirl...

Pantry Taco Soup

Okay, i know there's a BILLION taco soups on here already. But from what ive seen so far, mine's a little different. This recipe is a favorite here at home. Its college-friendly because most of the ingedients are in cans. Its cheap, convenient, filling, several servings, crockpot-friendly, freezable, easy.. its just great. You can fix up the soup however you like, as far as the veggies and meat go. Ive used pork, steak, stew meat, chicken. One of the cheapest and best meat to use, in my opinon is ground hamburger. -- posted by gimme_a_spachler'

I got this recipe out of the Aug/Sept 09 Taste of Home Magazine. I made it with dinner last night and it was a hit. Easy to make and delicious. You can also make these ahead of time and reheat as needed. This one is extremely picky kid-approved. Enjoy! (The original recipe called for 1/4 cup canola oil, but I upped it to 1/3 cup because it just wasn't enough to coat all of the knots.) -- posted by SassiFras

Soup

This is a basic recipe for a clear soup--can be made with what you have already and helps use up leftovers. Doesn't it bother you when you find recipes that require you to buy cumin nostrils or some other obscure ingredient? Not this recipe. Do whatever you want to do with the ingredients beyond the basic part of the recipe.

This helps make a weeknight supper by adding a good salad and bread or a sandwich. If I add a lot optional ingredients it can make a meal on its own.

I like to make a large batch and freeze it in 2 serving batches. Remember that some veggies and dairy don't freeze well. -- posted by krolek

Michele's Chicken Tortilla Soup

I used to go to a local Mexican restaurant all the time for this soup. I finally decided I needed to learn to make it because eating out was costing me way too much ;) I looked through several recipes for the soup, combined some, and then tweaked until I came up with a recipe that was close to that of my favorite Mexican place. This is quick and easy and I usually get rave reviews when I make this for a crowd. I hope you enjoy it! :)

PS. This soup has a mild heat. If you like it spicier, add a can of chopped chilies or a diced jalepeno. I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them. And I like to garnish with a lime wedge. -- posted by Michele105

Mixed Bean Soup With Vegetables

I love making this dish because it is tasty, filling and healthy. My bean soup is full of veggies and makes a large amount. Also, it is incredibly cheap to make. I take it to work every day for a week and so that I know I'm being healthy and avoiding tempting snacks. I get the beans in the gorcery's bulk aisle - it is a mix of pinto, kidney and white beans, as well as barley and split peas.
Curried Beef

Curried beef was a staple when I was growing up, therefore consider it one of my favourite 'comfort' foods. More often than not, my Mother used goat meat. If you get the chance, I highly recommend giving it a try. The curried meat was usually served with Rice 'n Peas (Recipe #373354 is a good version) or plain white rice. You could also substitute the beef with pork tenderloin. The amount of curry given is just a guideline. Each brand and type of curry has it's own unique qualities and intensity. If you do not have access to scotch bonnet peppers, habeneros or jalapenos will do. Freezes well for later use. -- posted by Diana #2

Sometimes i just do not feel for meat. 8 ounces chick peas is like one can and 4 ounces of mushrooms is like half a can. Like, more or less. Do not use the liquid in the can though.
Serve with brown rice and some sauce, like mushroom sauce, sour cream or soy sauce. Mustard is fine as well. -- posted by Iceland

Hearty Meatless Tater Tot Casserole

For us vegetarians who want the heartiness of a tater tot casserole without the hamburger or ground beef. I found a terrific tater tot casserole recipe on here-- which I altered a bit, then found some more tips on how to make this awesome, tasty, and cheap meal and also adjusted it to the pan size constraint. I couldn't use a real casserole dish because I live in the ghetto and don't have a real oven; I rely on a convection oven. So please note, this recipe's measures are based on using a deep (about 5") 2-quart loaf pan! It's so hearty and filling that I get at least 3-4 meals out of it for just me. But if you want to use a real 13 x 9 casserole dish because you're doing OAMC/OAWC or cooking for your family? Never fear, just double the amounts shown! -- posted by the80srule

Focaccia Flat Bread Homemade (Bread Machine)

An Italian flatbread brushed with olive oil and flavored with grated Parmesan cheese, galic salt and grated Italian Seasoning makes this bread heavenly. A good friend of mine brought this over for Sunday Night football. We cut it into squares and topped with Prosciutto Panino rolled in Mozzarella cheese and toasted under the broiler for 5 min.... oh my, this is dangerously good! It is so easy to make. Can't wait to have this with a bowl of soup or top with Pizza topping, or to just dip in garlic olive oil. This comes from a bread machine cookbook with instructions to layer ingredients liquid first. Yummers! :) Family Favorite!
Sugar Cookie Cut-Outs

I had misplaced this recipe and recently found it again. When DD was in Kindergarten the children had to take turns bringing a snack to school for everyone to share and DD loved to bring these cookies. I love this recipe because it doesn't require refrigeration before rolling out and because the cookies always turned out beautifully. The recipe is from a little booklet called Wilton Christmas Recipes & Ideas.
Note: If you're using margarine, be sure to use the hard margarine that comes in a brick like butter, not soft tub margarine. -- posted by Dreamer in Ontario

Monica & Jamie's Hummas

Jamie and I own a graphic design business. One of our clients owns a Persian restaurant with a terrific Hummas appetizer. This inspired us to try our own hand at it. After trying many recipies, we've created this version with an array of the ingredients we liked best from what we tried.

Here's my recipe, not too bad if I do say so myself! -- posted by Monica & Jamie Pearson

10 in 10 Diet Cabbage Soup

This soup is vaguely a borscht, with a sweet & sour tang and a red-tinged broth. I've settled on tomato paste as cheap and the right tomato-iness for us. I used to freeze cubes of crushed tomatoes and use five or so in a batch of soup. One friend put garden-fresh tomatoes in. -- posted by 10in10Diet.com

Awesome Crock Pot Sweet, Sour and Spicy Chicken

A great Fall (or anytime!) recipe for an easy, convenient and mouth watering dinner. You will have a hard time not tearing into it while you smell it cooking! Warning: this feeds a crowd, it can easily be cut in half, or just make the whole thing and have awesome leftovers :) -- posted by emtpixie
