Peanut and Pineapple Curry

I saw Jamie Oliver make a version of this curry and knew I had to try it. I found this recipe on the net and adapted it to suit our taste. Check out Recipe #190959 to make your own, fresh coconut milk. This is great served alongside a simple chicken or fish dish, or just served on its own, over jasmine rice, for a vegetarian dish (if you want it to be completely vegetarian, omit the fish sauce, but be prepared for a loss of flavour). -- posted by evelyn/athens

Fried Chilli Sambal

This Indonesian Sambal Bajak is very addictive. In an airtight bottle it keeps for weeks (ha ha) in the fridge. I love it on rice, steaks but best on crackers with a good sharp cheddar. I've tried commercial brands but nothing beats this hot, savoury, nutty home made sambal.
A note about the trasi (blachan) - only buy a small amount, it lasts forever and is used only in small amounts.....but it stinks, I keep mine in a ziplock bag in the freezer. -- posted by cherry's eats

Kaya (Coconut Egg Custard)

Kaya (or Serikaya) is an Asian coconut egg custard that is eaten spread on thin toast with lots of butter. Is it a traditional breakfast in Singapore and Malaysia. The directions in this recipe come from "Cook Malaysian" by Lee Sook Ching, with a slightly modified ingredient list to make things simpler for people outside of Asia.

I find pandan leaves in my local Asian market, but I have also used pandan extract with good results. It can be omited, but the flavor won't be the same.

I press the mixture through a sieve before bottling. -- posted by Sascha

Easy Indonesian Chicken

This is the one I didn't want to post. Wanted to keep it a secret! But what the heck -- I enjoy Zaar so much, why be miserly?? Years ago I cut the recipe from a newspaper food column, and it hides, yellowed, in an old recipe scrapbook. I make it every now and then and I guarantee that it's a quick, easy, gourmet meal! The original recipe specified rice vinegar, but I use balsamic. -- posted by Zurie

Soto Ayam (Indonesian Clear Chicken Soup)

This version of the classic Indonesian chicken soup comes from the Hyatt Regency in Yogyakarta, Indonesia. Found in Sunset Magazine, January 2007. In the magazine, they talk about having a no RSVP soup party which is low pressure & high commitment. You provide the soup & your guests provide the bread or drinks or nothing at all - no stress. A great way to get to know your neighbors. Serve all the garnishes on the side so that your guests may create whatever combination they like. Up to 2 days ahead, cook, cover, and chill chicken in seasoned broth. -- posted by Manami

Indonesian Slow-Cooked Chicken (Ayam Manado)

This recipe was provided by a lovely man called Barnadi who ran a groovy little Balinese Restaurant in Richmond, Melbourne called Djakarta. This was our favourite thing on the menu, and we could never resist ordering it. I think the restaurant is still there, but last I heard Barnadi had left Australia and opened a restaurant in Bath, England.
* Chicken thigh or breast fillets can be used if preferred, but meat cooked on the bone gives the best flavour. If using breast fillets, cut into pieces before cooking. -- posted by amanda l b

Spicy Indonesian Pork Satay (Or Chicken)

One teaspoon of dried red pepper flakes with give you a mild heat flavor for more spice then increase the pepper flakes. Plan ahead the pork needs to marinade 8-24 hours. Make certain to soak the wooden skewers a minimum of 30 minutes before threading and grilling. Serve with favorite dipping sauce or you can use whatever leftover marinade that you have after basting the satay as a dipping sauce if desired. Make certain to use only low-sodium soy sauce for this recipe, also if you are using peanuts in place of peanut butter they must be unsalted. The recipe may be doubled but divided into two separate recipes and the pork marinated in two separate bowls. This will work well on on an indoor grill or oven broiler heat. For dipping sauce see recipe#143558 -- posted by KITTENCAL

Grilled Tandoori Chicken Pieces

Tandoori Chicken is a chicken dish dating back to the time of the Mughal Empire in Southern Asia; it is still popular throughout that area, as well as Central Asia. The chicken is marinated in a yogurt seasoned with garam masala - garlic, ginger, cumin, cayenne pepper, and other spices depending on the recipe. It is traditionally moderately hot, but the heat is toned down to a "mild" taste level in most Western nations. Cayenne, red chili powder, or other spices give it its red colour. Turmeric produces a yellow-orange colour. In some modern versions red and yellow food colouring is used instead. It is traditionally cooked at high temperatures in an earthen oven (i.e. tandoor), but can also be prepared on a traditional grill. You can use any cuts of chicken you like. ALLOW to marinate overnight!
PLEASE adjust cooking time for smaller pieces. Wonderful with aromatic rice. -- posted by mama's kitchen

South China Morning Post 1963 - Authentic Chicken Satay Skewers

I discovered this yellowing paper cutting in my Mum's recipe scrapbook recently - this recipe is the one we always used to use when I was younger. The recipe was posted in the South China Morning Post in 1963 - by a chef from The Repulse Bay Hotel - that lovely old Colonial hotel is sadly no longer there......they used to have this great satay on the menu, as well as the MOST amazing Club Sandwiches! Absolutely authentic and I have decided to share it with you all!! If some of the language is a bit archaic - it is because I have decided to post it, as it was written in the paper at the time! -- posted by French Tart

Indonesian Coconut Rice With Chicken and Zucchini

Food and Wine: "Luscious is the word for this Indonesian version of chicken and rice. Coconut milk spiced with cumin and coriander cooks into this rice and sauces the whole dish."

Nasi Goreng

This rice dish is very popular in the bars and cafes in Asia. I used to eat this often when I lived in Singapore. Add any leftover meat and vegetables to the rice add a few eggs, dinners ready. Can be eaten hot or cold. I eat it cold and serve with prawns or pork. -- posted by Brian H

Smoor (Indonesian Chicken and Rice)

My grandmother (see profile) was born in Indonesia and we grew up on recipes that we thought noone else in America ate at their dinner table. Well, now you can eat this dish which I have transliterated as "Smoor." I have no idea what it means, but I eat it!
For some reason my grandmother always served it with bread and butter pickles. As kids we poured a little pickle juice on top of the "smoor", but this is probably just a family quirk. We also eat this with "kroepoek" (fried pulverized prawn chips). -- posted by BatiksWindmillsAndTurbans

Bami Goreng (Indonesian Version of Lo Mein)

My grandmother was born in Indonesia and growing up we awaited the next time she would make Bami Goreng- "Fried Noodles."

She made it with pork, but since I no longer eat pork I substitute chicken here. This is the basic version. You can add any vegetable you like. I add tiny frozen peas and carrots for color, or red or yellow bell pepper thinly sliced using a mandolin. -- posted by BatiksWindmillsAndTurbans

Authentic Balinese Indonesian Satay Chicken

This is amazing! I got this recipe from a lady I met on my honeymoon in Bali. It's Indonesian home cooking so it's more authentic than the Satay you could try in the restaurants. To make this dish quicker to prepare, you could use unsalted peanut butter instead of roasting and peeling the peanuts. Oh and if you don't like your food spicy, use only 1 chilie or omit them all together. Enjoy! -- posted by Natalia #3

Bo-Kaap Cape Malay Kerrie - South African Cape Malay Curry

This distinctive and tasty authentic curry relies heavily on the special blend of spices, known as Cape Malay curry powder. Cape Malay curries are famous for their fruity and full-bodied flavours, making good use of local colourful vegetables or meat and fish, they are not as hot as the curries used in the Indian kitchen. This "secret" recipe hails from one of the steamy kitchens in the vibrant Bo-Kaap area of Cape Town; it was on a recipe sheet given to my mum from a spice shop in that wonderful area, in the 1950's. The Bo-Kaap area is a treat; the houses are painted gorgeous bright colours that won't fail to make you smile, there are always children playing in the streets and the haunting call of the muezzin will remind you of exotic destinations such as Istanbul and Cairo. And then there's the smell of spices that wafts through open doorways and comes rushing out at you as you walk past Atlas Trading, the local spice emporium. You might be just minutes from the centre of elegant and sophisticated Cape Town, but you'll feel as though you're in a different country.
Serve this curry with yellow rice and a variety of sambals and atjars. -- posted by French Tart

Out in the village near Bireuen in Aceh, Indonesia, this is one of my favorite recipies the my neighbour taught me. It is also nice to use this 'pemp' spice paste with a medly of green eggplants and pea-eggplants.
Spices in Aceh are ground on a flat grind stone, which achieves a very finely ground paste. Using a mortar and pestle, or a blender will have a less refined paste. -- posted by Atjehfire

Indonesian Carrot Soup

A flavorful soup with curry powder and coconut milk, this recipe comes from The New England Soup Factory Cookbook (wish I could take credit for it, but I can't!). Although the original recipe calls for vegetable stock (this is a vegetarian soup), I generally use chicken stock because I think it gives it a richer flavor. Adjust spiciness and sweetness by varying amount of hot pepper flakes and honey accordingly. Make sure you use a good quality canned coconut milk -- in my experience, powdered coconut milk isn't a good substitute. I love this as a soup, but it's also great as a sauce/gravy over white rice on its own. Yummy -- and I generally am not fond of really spicy foods. But this yummy and packs just enough of a kick! -- posted by Jakey Bakey

The trasi or belachan(shrimp paste) can usually be found at the asian grocers. The fresh coconut can be substituted for desicated coconut, but you will need to sprinkle 1/4 boiling water over the coconut to plump it up.
Risoles (Indonesian Style of Rissole)

Risoles is one of popular appetizers in Indonesia. It looks similar with spring rolls but the how to make it is a little bit different. Also the taste. In Indonesia you can easily get this snack without even bother to spend your time in the kitchen. They sell it in the market, bakery, or even along the street.

The name Risoles is borrowed over from the traditional Portuguese rissole. A rissole is a small croquette, enclosed in pastry or rolled in breadcrumbs, usually baked or deep fried. It is filled with sweet or savoury ingredients, most often minced meat or fish, and is served as an entrée, dessert or side dish. -- posted by IndoFoody

The Best Indonesian Peanut Sauce

This recipe comes from the vegetarian times and is actually a vegan recipe, though I am not either of those things :-). I made this because I just LOVE peanut sauces and this is the best one I have had, not to mention how simple it was to make! I used reduced fat peanut butter and it didn't seem to affect the recipe at all. It will keep up to a week or so in the fridge and personally, I like to either toss it with noodles and chicken or serve it with chicken chunks over brown rice. I don't like things spicy and this was perfect. I also saute the chicken chunks in 1 tsp sesame oil just to enhance the flavor. It makes quite a bit of sauce, I would say it serves 6! Enjoy! -- posted by Quistis145

This is a traditional Indonesian recipe for fried chicken, but I have made it a bit healthier - it still tastes good but I have substituted the frying for grilling and steaming the chicken first instead of simmering in coconut milk.
I use drumsticks but you could use chicken thighs (with bone) or traditionally a whole chicken disected into small pieces. You do need to leave the skin on the chicken or it won't crisp up when grilled.
If you can find fresh tumeric root use about 1 cm piece, it has a more intense flavour -- posted by Coasty
