Linda's Bean Salad

My sister-in-law took some of her bean salad to my mom and I tasted it. After that, I had to have the recipe and called her right away.
This is great for picnics, potlucks, or anytime. I suggest making it a day ahead, as it is so much tastier then. Not sure of the servings, since she just brought a serving to my mom. Cooking time is the refrigeration time to chill. -- posted by keen5

Cucumber Dill Pasta Salad

There are lots of pasta salad recipes here but I don't see this particular variation. I love dill in most anything and combined with cucumbers and pasta, it's tart/creamy comfort food to me. For even more color & crunch, radishes could be added for another twist. You may need to adjust the mayo and sour cream amounts - I don't really measure it so I've guessed. I start with a large dollop of each then add till I get the texture and taste that I want. Update: Thanks to the first reviewer for finding my typo with the salt; it has been corrected. -- posted by SusieQusie

Patrick's Artichoke Pasta Salad

This recipe is truly a "scratch" one but, after your culinary efforts, your guests will be mightily pleased to have tasted a pasta salad that is bright, new, and delicious. You will not find this recipe anywhere else because it took me about 6 months to develop it and I have only posted it HERE on Recipezaar! I wanted a pasta salad that used an Italian-based dressing and which packed a LOT of flavor, slightly creamy. Through much research, a few false starts and, blind luck, I got the pasta salad that I wanted. It's fairly easy to put together but it does take some time. It's great for a covered dish or as a side dish to either fried chicken or pork chops. I plan to use it for summer barbecues as well. And, once again, I have to thank Dee514 for her spectacular Italian Spice Blend recipe (Recipe #38293) which I have listed in the directions and which is an integral ingredient. For SAINT PATRICK'S DAY, use all GREEN PASTA (spinach pasta)! I hope you enjoy this pasta salad as much as I do. -- posted by Bone Man

Spinach Salad With Strawberries

I originally saw this prepared on Cooking Live for a 4th of July special years ago, and tried it immediately. It was a huge hit and I have since made this numerous times. This is a wonderful salad, and is one of my favorite versions of this type of salad. I used champagne vinegar and a splash of raspberry vinegar. Dress the salad right before serving or else it will wilt dramatically. I serve this throughout the summer months, but it is also nice for Valentine's Day. -- posted by HeatherFeather

Sushiman's Sick Salad

Every year, on Israel's Independence Day, we all go off and have a barbeque in a public park together with friends and family. Every year, without fail, my Sushiman makes his Sick Salad. Sushiman is British, so sick means barf. And it really does look like barf. People rave about it, although I wouldn't know, I really can't bring myself to eat it, although that one time I did taste it (with my eyes closed), it was actually pretty tasty! At the request of a few brave souls in the Jewish forum, here it is, in all it's glorious, barfy splendor! -- posted by Mirj

Garlicky Olive Oil Potato Salad

Garlic and Bacon Roasted Potato Salad

This past weekend I went on a camping trip and my assignment was to bring the potato salad. I wanted it to be absolutely perfect so I started messing around with recipes the week before and threw out a few batches before I came up with this. The roasted potatoes enhance the flavor of the garlic and bacon and makes this a great tasting combination. This is best made at least a day ahead so that the bacon flavor can really combine and penetrate the potatoes. Everyone absolutely loved it and I hope you do to. -- posted by invictus

Colorful Fruit Kabobs

This is basically fruit salad - on a stick! It's a great, healthy side for kids or elderly people who have trouble handling plates. It does take a bit of time to assemble, but the results look stunning at a baby shower, birthday party, or cookout!
The goal is to make the skewer colors red, orange, yellow, green, blue. You can, however, substitute any fruit you'd like. You can also reverse the order in which you put the fruit on the skewer, and dip the bottom of the strawberry in chocolate.
Honey Mustard Chicken Pasta Salad

Although I usually think of coleslaw as a summertime side dish, it seems to go really well with my Super Bowl spread. I serve pulled pork with baked beans and some of this lovely, creamy coleslaw, then sit back and collect the compliments! Again, this makes a LOT, so adjust accordingly.
Simple Cucumbers and Onions

My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad.
Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

Chinese Chicken Burgers With Rainbow Sesame Slaw-Contest Winner!

This is Brigitte Nguyen's $50,000 Grand Prize recipe in the 2009 National Chicken Cooking Contest put on by the National Chicken Council. Geared to big appetites, it could easily be turned into eight burgers rather than six. Cook them on the grill or in a frying pan if you prefer. As a shortcut, you could substitute 2 cups of already-grated cabbage for the julienned vegetables in the slaw. Look for Sriracha chile sauce on the Asian aisle of the supermarket.

I created this recipe many years ago when I was looking to do something a little different with my grandma's old fashioned potato salad dressing recipe (which is great by the way). I am now mortified that I actually used canned green chilis...it is much better with fresh ones! -- posted by Melanie B.

Crab Salad Stuffed Shells

These always go over well at my summer barbecues and Picnics. It's not the Normal presentation for crab salad but that's what people love about it -- posted by GingerlyJ

Quency's Pasta Salad

This recipe came from a girl I knew named Quency. She said it was a family recipe. I always make this for bbq's and pot lucks. It is a big hit! This makes a very large quantity of salad. I usually mix it up in a foil roasting pan so I don't have to worry about having a big enough bowl or remembering to bring my bowl home. -- posted by ~Sherry~
