Stars and Stripes Berry Trifle

Little pound-cake sandwiches make this dish something special, not to mention it's delicious! A glass trifle bowl is needed for this, and straight-sided works best. I usually put the berries in as is and skip the sugar step, although admittedly the berries do look prettier with the glossy sugar. I have also made this with just one pound cake, half the amount of custard and blueberries but double the raspberries, and it was equally good! I have also served it with some chocolate shavings on top or with chocolate sauce on the side - or both! And serving this in individual serving dishes looks nice also. I make recipe#238798 for the custard, but make sure to double it to get the full four cups you'll need for this trifle. This recipe comes from Cook's Country. -- posted by hepcat

Patriotic Fruit Pizza

I made this up off the top of my head for Independence Day, but it could be used as a light refreshing summer dessert. Not exactly nutritious, but light cream cheese and skim milk make it not too unhealthy. It's very nice with a cold glass of milk, I'm sure it'd be delicious with other fruits, but I recommend using fresh over frozen! -- posted by Vegetarian Pixie

Pineapple Cloud Pie

A co-worker brought this in for myself and my wife to try. I was apprehensive at first (I don't usually like pies) but was completely won over on my first bite! I came home from work and started searching RZ for the recipe. To my surprise, no one had sent it in. I ended up finding similar ones on the site, but none that used the Rice Krispies as the crust. Personally, I think this made the pie better (and was why I loved it). I finally found the recipe on RiceKrispies.com and knew I had to submit it first thing! I have left the directions alone but substituted the brand names of the products my co-workers used (since I KNOW how AMAZING this is). I hope you enjoy this as much as I do!
Luscious Amaretto Ricotta With Berries (Low Fat)

Simple, but delicious, this is all about the ricotta. This is a low fat version of a Bon Appetit recipe that also included cream cheese, but not Amaretto. This ricotta is also good with peaches and crushed Amaretti cookies. Includes 30 minute stand time for the fruit. Each serving (based on two people) contains 3.5 grams of fat, and 1.5 grams of saturated fat (calculated from ingredient labels). -- posted by Maito

Maine Wild Blueberry Pie

This pie is the perfect end to a summer meal! I adapted it slightly from a recipe in Coastal New England Summertime Cooking by Sherri Eldridge. I prefer it the second day, after the flavors have had time to meld together. Yum! Cook time includes time for blueberry mixture to sit. You can also dot the top with a small amount of margarine or butter before adding the second crust for a slightly richer texture and flavor. -- posted by Kree

Goodrich Dairy Chocolate Caramel Malt

While stationed at Offutt AFB near Omaha, Nebraska and living in the barracks back in the late 70's, inevitably someone in the lounge on a Friday or Saturday evening would say, "Who wants to make a run to Goodrich Dairy?" We'd scramble for our shoes and our wallets, and off we'd go. My friend Sharon got me hooked on these malts, and whenever I have one, I'm reminded of the fun we had together: cruising the base-gates & seeing which L.E's were working or those Saturday evenings when we'd get all gussied up & head over to The cHEETah to do some dancing or when we were really bored & go cruising 73/75 & waving to guys in hot muscle cars.
This is so different from your traditional "cake." It's like a snack mix made into a cake! Uses popped popcorn, M&Ms, caramels and peanuts. This recipe was titled Patriotic Popcorn Cake because it used red, white and blue M&Ms, but there are so many other possibilities! Use pastel M&Ms to make an Easter cake, red and green M&Ms for a Christmas cake, all pink or all blue M&Ms for a baby shower cake, assorted colors for a circus theme...you get the picture! -- posted by mailbelle

Mexican Banana Splits

From Vegetarian Times. This is very good. I had a bit of trouble getting the 6" tortillas to fit in the muffin cup, but I folded them in a bit and it worked. It took longer than the 7 minutes for them to be crispy enough, but I could also open them up a bit to get more ice cream in once I put them in bowls. I also used 1/2 C hot cocoa mix (presweetened) for the sauce and it turned out great. You could even dip any leftover tortilla cups in any leftover sauce. Yummy! -- posted by WI Cheesehead

BBC Cocktail (Baileys, Banana, Coco Lopez) is a decadent frozen dessert drink. They are perfect for summer blended with ice. My co-worker introduced these to me. Think she first discovered them on a cruise vacation then recreated them back at home. They are the latest rage amongst our circle of friends now. Some people add a dash of pineapple juice too, but haven't done that yet. Also, can be made with fresh banana blended in as well. -- posted by BlondieItaliana

Red, White, and Blue Jello

Jello and yogurt are a classic combination, and I prefer this to the typical cool whip layer. I prefer to boil the water in the microwave - 2 cups take about 2 minutes. I also stick my jello in the freezer for 10-15 minutes so it sets faster between layers :). I use a plain tasting yogurt, so add 1/2 cup sugar, but you can leave it out if you are happy with the flavor of your yogurt. Cooking time is time to set in the freezer. -- posted by Japan bound

Kumquat's Kookin' Kaboodles' Limone Pistachio Gelato

Posted for the ZWT4-- Frozen Italian Dessert Challenge-- Part 1, this is an unusual and unique gelato recipe with some ingredients that are not necessarily traditional. Although lemon and pistachio are typical of fine Italian cuisine by their Mediterranean character, the ingredients take a curve ball by using both buttermilk and lemon yogurt to give both a solid base and a nice tartness to accentuate the lemon flavor. The Splenda was made as an option to accomodate those with special dietary needs, and the egg yolks and heavy cream, while not traditional, provide richness and act as a stabilzer for this yummy frozen dessert. -- posted by Sue L

While some people look down their noses at Jello desserts as being too kitsch, I believe taste comes first. This is light, refreshing, and it makes a beautiful, patriotic presentation.
Unknownchef86's July 4th Creamy Red, White & Blue Jello

What do you get when you combine two Zaar recipes...and give it a twist? It would look distinctively something like this. It didn't turn out exactly the way I wanted it, as I wanted only three distinctive layers and wound up with four, and the red and blue are lighter than I wanted, but it was really, really good...so I was willing to look past its faults. I'll still keep experimenting with it, but I thought it would be a good one to post for the 4th of July. Cooking time is chilling time (between layers and after assembly). Other flavors would work well with this, also...like a layer of orange and a layer of white. A few things worth noting: 1) For presentation purposes, try to find a plain vanilla ice-cream (without vanilla bean flecks) in it. 2) Allow 15-30 minutes for the first and second layers to set before you pour on the next layer or the layers will mix together and won't be separate. 3) Make the blue layer first if you want the layers to be red, white and blue from the top down. 4) The white layer has a very delicate, almost custard-like, flavor which goes well with the fruit flavors. If you want a more more pronounced flavor, add a little bit of vanilla (preferably white vanilla, so it doesn't change the color) or use Recipe #25883. 5) I found it far easier and quicker to open the side of the box of ice cream and slice it with a long knife than to dig it out with a scoop. 6) For darker colors in the red and blue, you could add a little paste food coloring to reach desired color. 7) I created this recipe due to some inspiration from two 'Zaar recipes: Recipe #25883 and Recipe #108778. Thank you to dojemi and faith58 for your inspiration. -- posted by UnknownChef86

Summer Fruits Terrine or Bodacious Berries in Wine Jelly!

This is one of my favourite recipes, when the soft fruit season arrives, I try to make this at least once......and it is STUNNING if served as the finale to a dinner party. This is an unashamed copy of a recipe by Delia Smith, with very few modifications of my own, as she gives such great ideas and suggestions on how to make this elegant and LOW fat dessert. The directions may seem long-winded, but they are really just useful tips on how to weight the terrine down overnight. Serve this in slices with a red berry coulis and crème fraîche or cream. Fruit juice can be used if this is being served to children or to anyone who does not drink alcohol - I suggest a red fruit juice. -- posted by French Tart

Pumpkin Pie-Sicles (Popsicles)

This is from Family Fun's Nov. 2008 issue. I had some butternut already cooked (see Rita's Recipe #194908 for an easier way to cook the squash!) so I halved the recipe and it made 6 popsicle molds. It really tastes like pumpkin pie! My 5 yo was begging for another one right after the first one. I used half and half instead of the cream and pancake syrup, since I didn't have maple (it's up to $20 quart here!) I bet it would work with canned or cooked pumpkin too, although I'm not sure how much to use. What a great, healthy alternative to all that sugary, artificial colored popsicle junk the kids usually get. I also used 1/2 tsp pumpkin pie spice for the halved recipe, so I would recommend using the higher amount of spice, or even 1 tsp. Prep and cook time do not include cooking the butternut. -- posted by WI Cheesehead

Best Blackberry Pie

My mom has been making this pie since I can remember, and now it is a staple in my kitchen. It uses quick cooking tapioca, and has a very fresh taste since you do not cook the blackberry mixture before baking. You can use fresh or frozen blackberries. I am always asked for the recipe when I take it to a pot-luck or gathering of friends. I love using Martha Stewart's Foolproof pie crust (Recipe #59026) for double-crust pies like this. -- posted by CindyMarie

Snowcapped Pink Strawberry Mountains(Strawberry Granita)

Brilliant with color and pure, intense flavor! You may use frozen, thawed strawberries, but you might need to add more sugar. Cooking time is freezing time. Would you like a little history?

History of Granita
According to Alan Davidson in the Oxford Companion to Food, (Oxford University Press:Oxford) the appearance of "water ices" is documented to have taken place in Europe in the 17th century around the same time as ice cream. There is some undocumented conjecture that Marco Polo returned to Venice from China in the 13th century and introduced ice cream or water ices to Italy. Further it is not known for sure if water ices were first found in Spain or in Italy. In any event the mixture seemed to have migrated to London at some later, undocumented time.

Granita is akin to but not quite the same as sorbet. The difference being sorbets tend to be smoother and less granular in texture. Both are made with water, a flavoring such as fruit juice or coffee and typically sweetened with sugar.

I am always looking for ways to use blueberries when they're in season, and this one is a special summer treat! It's old-fashioned comfort food, with the candied ginger adding a sophisticated twist. My family was shocked at how good it was with so little sugar and fat (recipe from Cooking Light).
Best Cupcakes Ever

This recipe is adopted from a recipe for Flag Cake by the Barefoot Contessa. I made it for 4th of July 2009 and it was probably the best cake I've ever made. I don't usually like cream cheese frosting, but this one is divine, especially with the fresh berries on top.

A few months later I found cupcakes topped with raspberries and blueberries at Star Provisions' bakery in Atlanta, and I could swear they used this same recipe, though Annie Quatrano might beg to differ. That's what gave me the idea to make cupcakes with the Flag Cake recipe. The cake batter includes sour cream, which makes the cake SO moist and delicious. I've tried substituting 1/2 cup of Splenda for half a cup of the sugar in the batter and they came our great, so you could experiment with substituting Splenda for even more of the sugar.

Enjoy! -- posted by Cook-a-holic

This makes a beautiful dessert and it will perk up any dessert table! It can be served any day of the week, but really shines when you're looking for something patriotic! Slide it right in there alongside the burgers and potatoe chips and cold drinks! You can't go wrong! Delicious!

Coconut Lime Stars

"These crunchy, buttery cookies have a refreshing tropical taste from the toasted coconut in the batter and a tart lime frosting. Reeah Parker of Germantown made these for her son in the Marines one summer and they were such a hit, she now makes them year-round, cutting them into holiday shapes." Found this recipe in The Washington Post - almost an amuse-bouche for a Christmas platter. Refreshing, tart, wonderful! Thank you Reeah! ***Note - prep time includes a 30 minute chill time for the dough*** -- posted by Buster's friend

This is an easy from scratch cake with a nice sweet tart lemon flavor from the glaze. My family loves this one and it works great as the base for a berry shortcake!
