Greek Style Baked Chicken

This is one of those quick tasty recipes which we enjoyed at a friends recently. It is very important that you do not overcook the chicken.
Spiced Roast Chicken Breast

Oven Baked Buffalo Wings

This is an extremely simple oven baked chicken wing "recipe". It's roots came out of me being tired of paying premium prices for those frozen cooked Buffalo Wings in the grocery store! I hesitate to even call it a recipe, since it is so simple. Not fancy, but super simple on time and ingredients.. and still satisfying. -- posted by Chef Come Lately

Easy Grilled Chicken Livers

I discovered this recipe by accident, when my DH and I were roasting a whole chicken on the grill. Whole chickens usually have the organs stuffed inside, so I pulled them out (neck, heart, gizzard and liver) and cooked them on the grill. Our kitty cat got the neck (minus the bones), heart and gizzard, but I got the liver and it was unbelievably delicious. I tried it again with a container of chicken livers and they were so tender and juicy and so, so easy to make. It sounds a little weird, but trust me, they are out of this world. -- posted by sunflowerseed

Oven Fried Chicken from Paula Deen

This is very delicious, and easy to make! Placing the chicken on the cooling rack is REALLY what makes it great, no need to turn them. I double the mustard/water combo, because I think this makes the chicken more moist. If they are not brown enough for you, place under broiler for a few minutes after it is baked to get a nice brown color. Also, a drizzle of melted butter before baking is a nice touch. This is from Paula Deen, hope you enjoy! I am trying to say Panko bread crumbs in the ingredients, but it will not let me.
P.S. I am SO in love with Panko bread crumbs, if you have not yet tried them, please do, you will love them! : ) -- posted by Scoutie

Peanut Chicken

I came up with this after reading a dozen different chicken satay recipes and finding that I didn't have all the ingredients to make any of them. Not authentic thai, but thai-ish. It's not spicy at all to keep it toddler friendly.
To make it more friendly to my gestational diabetes, I substitute an equal amount of splenda for the sugar, but left the honey in. I have frozen this dish successfully, defrost in fridge and heat in microwave.
Serve over rice. -- posted by ~Jena~

Just Plain and Basic Chicken Breast

When I was a newlywed, my husband was big on health and nutrition (still is, actually), but for the life of me, I had NO idea how to cook chicken. This is a recipe you can use on almost any chicken breast, I've discovered, and it will turn out well, whether you have it coated with anything or not. I've been cooking for both my brother and husband for several years now, and they are happy to brag up my chicken. So apparently something's being done right ;D -- posted by Luvinmyfamily

Bobby's Tandoori Spiced Chicken

Adapted from Bobby Flay's recipe over on FN's website. The recipe posted there makes much more spice mixture than you would ever use to make the chicken, so I'm posted the reduced amounts. This is very spicy, so if you aren't a fan of heat, cut the cayenne to 1/2 teaspoon. This is served with Bobby's Grilled Tomato Jam & Herbed Yogurt.
Baked Chicken With Lemon and Herbs

Because different cuts of chicken cook at different rates, we recommend one of the following options: Use only one cut of chicken (such as all breasts or all thighs) or be prepared to remove the various different cuts from the oven as soon as they reach their appropriate temperature for doneness. Any strong-flavored fresh herb, such as rosemary, tarragon, or sage, can be substituted for the thyme.
Palomino Chicken

Yummy, bright and pretty, easy weeknight dinner. While this calls for six chicken breasts, I cut the proportions in half, as we are a small family. The beauty of this is the cooking method, which can be anything you are in the mood for - it can be sauteed, broiled, baked or grilled. Originally came off the inside of the label from a can of cranberry sauce. Note: It's easier to cut the apricots up with kitchen shears than attempting the sticky frustration of dicing them. -- posted by Cecily Parsley

This recipe is from the September 2009 Costco Connection magazine, but originates with Fine Cooking magazine. Another excellent recipe. I typed it here exactly. However, when I prepared it, I used chicken breasts without the bone, and just spread the mixture on top of the breasts, and covered and baked. Very tasty, very easy recipe to prepare. -- posted by DeidreJane

Chicken With Apricot Jam

This is a really easy, sweet, savory dish. When I first made it I was surprised by the flavor of the sauce. I served it over rice with veggies on the side. I can definately see making a lot of the sauce and using it in a stir fry. Next time I make this, I might try a different flavor jam, just to see what happens. :)

I originally found the recipe on WebMD, and they sourced it from The Art Institute of New York City. -- posted by Kkikii
