Best Turkey in the World - Jamie Oliver.

This looked so fab on his Christmas TV special. I am making it for christmas lunch this year, and a few other of the recipes provided. Cannot give a guarantee that it will be as brilliant as it seems, but fingers crossed it is.

I'll post the recipe for the stuffing too, but I guess you can use any favourite recipes for stuffing you like if you want to.

Make the butter and apply the night before cooking.

The amount of butter required will depend on the size of the bird. For a 6 kilo turkey, around 150g-200g is used.

approx 30 minutes per kilo on 400 plus 20 minutes at the end.

Preparation time based on preparing the butter, spreading it, and packing the turky with stuffing. No refridgeration time, or stuffing prep. Cooking time based on a 5-6 kilo turkey. -- posted by JinxTheCat

Braised Chuck Steak

Chuck Steak is usually tough & tasteless, but not when prepared like this! I like making a gravy with the drippings & serving it with Recipe #331767 Choose a boneless chuck steak that isn't too fat, but has some nice marbling. You can also use Beef Short Ribs for this. -- posted by Ackman

Tuna Patties

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!

You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried! -- posted by Angel Stowe

Tandoori Chicken (Made Easy)

Indian food is my all-time favorite cuisine, and even I am surprised I haven't posted a single recipe yet... until now! Tandoori chicken is a classic North Indian favorite dish which is baked in a clay pot or oven. While you don't need a clay oven for this recipe -- the results are still fabulous (wow is it good)! I usually serve this with fresh lime wedges, creamed curried cauliflower in coconut milk, Recipe #408115, naan bread with mint-yogurt sauce and chilled lassi... a delicious meal surprisingly easy to make. -- posted by Bazaar®

My Christmas Ham

An adaption from a recipe found on AllRecipes.com. This has become our favorite ham recipe when using the oven (we also smoke ham outside on the grill).
Everyday Meat Loaf -- Meatballs -- OAMC

A moist and tasty meatloaf recipe. Perfect with boiled mashed red-skin potatoes and crispy, steamed green beans. The way it's cooked keeps it out of the grease & everyone who has tried it, loves it! --Let's face it - there are some incredibly awful meatloaf recipes out there. Some of the worst I've found were at restaurants! --This particular recipe is (adapted over the years) from my Mom's 1942 Betty Crocker cookbook - which she used the whole time I was growing up. She gave me the cookbook when I married. --In November of 2009, I made this for 20 people at "fish camp" in the Outer Banks of NC. Compliments galore! I was asked for the recipe by 10 attendees (the other 10 are in my family) --I also use the meat from the second loaf to make meatballs that cook well (fresh/frozen) in the crockpot on low covered in sauce. --Uncooked loaves/meatballs flash freeze well for OAMC. -- posted by DriverMama

Easy Asian Turkey Burgers

Pasta With Tuna, Spinach, and Red Pepper Flakes

The original recipe came from the San Francisco Chronicle. The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach. If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use. However, I have used tuna in water when it was all I had in the pantry. Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version. Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!! I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it. This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). I look forward to reading your comments with your add ins :) -- posted by CharlieGal

Kona K's Too Easy Smoky & Spicy Chicken Thighs

These chicken thighs are so yummy and easy to make! Perfect for busy weeknights. Just get the spices together the night before, allow the thighs to marinate over-night, and voila -- no need to worry about tomorrow's dinner. I love the spicy and smoky flavors, and the thighs remain juicy on the inside with a nice crispy crunch outside!

I haven't tried this with other meats, but I have a feeling this will go great with pork as well! -- posted by Kona K

Tortiere

I went hunting recently for a tortiere recipe, this is an amalgamation of several recipes and my personal preferences to boot. And to add to the debate of what to serve with tortiere? My family likes HP sauce with theirs.

For the pastry you need a double-crust pie dough, chilled for an hour. I usually make the full block of shortening, and add an egg and a tablespoon of vinegar to my water, it makes an awesome crust. Even though I am now making dough enough for 3 double-crust pies that way. The rest I often turn into butter tarts or an apple pie, no one ever complains about that! -- posted by MummaKat

Pork for Burritos - Succulent Spicy Carnitas Omac

Easy, Easy, Easy! A lighter version of the traditional Mexican roasted pork dish. The original title of this recipe is Succulent Spicy Carnitas, but if you are looking for the traditional flavor of carnitas this isn't for you. This easy recipe results in a flavorful pork, perfect for tacos or burritos. It is very mild in "heat" so you may want to add more chipotle. The predominant flavor comes from the cinammon. This recipe is perfect to store in the freezer and defrost in the fridge to make a quick after work meal. Serve with lime wedges, guacamole, salsa, sour cream and tortillas. From Lia Huber -- posted by cookiedog

Herb Crusted Beef Tenderloin

Published in Cook's Country magazine, Dec/Jan 2007. A whole beef tenderloin can be an expensive cut of meat but three distinct crusts - the oven-seared meat, the herb paste coating, and the herbed bread-crumb crown - make this roast perfect for special occasions. Begin the recipe 2 hours before you plan to put it in the oven. The tenderloin can be trimmed, tied, rubbed with the salt mixture, and refrigerated up to 24 hours in advance; make sure to bring the roast back to room temperature before putting it in the oven. Serve with Recipe #408760. -- posted by swissms

Pat's Do Ahead Party Chicken

My husband lived on a street where a neighborhood chef would create dishes, then call the neighbors at all hours. They would stumble over in PJs and tast the latest creation. Then he would throw them all out and go to bed. He was famous for this chicken recipe. I found stuffed it in a cookbook, got the story, tried the dish, got the rave reviews, and am sharing because a relative said "FINALLY, a new Chicken recipe!"

Don't be afraid to make this for the family dinner for a trial. Great served with steamed rice and roasted brocolli. If you make chafing pans of this, double the recipe here. You can wing the rest to accomodate any size crowd. The key to making it great is finding a THICK piece of Salmon.
Roasted Cornish Game Hens With Sesame-Ginger Sauce

This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! Enjoy!! -- posted by Time4tea

Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like.
