Low-Fat Easy Cheesy Chile Relleno Casserole

I'm searching for easy low-fat recipes on the 'net. There are more recipes on 'Zaar that are similar, but this one was different. This one was found at the Care2 website @ http://www.care2.com/greenliving/easy-cheesy-chile-relleno-casserole.html Adapted from Healthy Homestyle Cooking, by Evelyn Tribole (Rodale Press, 1994). Here is a family favorite in a low-fat reincarnation that‘s better for you than the original, but without sacrificing taste. The final product tastes rich and creamy, zesty and cheesy, with only a fraction of the fat: a great way to celebrate the day. -- posted by SassiFras

Tender and Spicy Molasses Cookies

This is a highly modified version of Old Fashioned Ginger Cakes by Rachel-Snachel . It is interesting because it uses no milk or eggs, and is devoid of refined sugar.

This recipe's flavours are equilibrated for Blackstrap molasses, if you use regular molasses you might have to reduce the spices.

This is a very nutritious, flavorful and comforting recipe on cold winter nights. Perfect if you are nervous, not too good if you feel agressive. -- posted by Blueberries and Mortar

Favorite Grilled Chicken

This is our personal favorite recipe for grilled chicken. I've posted it here for safekeeping! We use the prepackaged 3lb bag of individually frozen, boneless skinless chicken breasts and double the marinade ingredients. It usually works great for us if we pull the bag out of the freezer, toss the ingredients in the bag, reseal it, then shake it around enough to mix and coat the breasts well. Then we toss the bag in the fridge overnight..as they thaw, they marinate perfectly to grill (indoors on our grill pan or out on the regular grill) the next evening, and we have some tasty chicken to serve guests. If it's just us, then we have enough left over to add to salads during the week. We genrally use Italian Salad Dressing
Recipe #43522 as our salad dressing at home, it works well in this recipe. -- posted by lizbits

Oatmeal Whole Wheat Quick Bread

I found this on AllRecipes, posted by Zoe. She says "There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!" I have personally made this a number of times as a quick accompaniment to warm soup. The original recipe calls for an oven temp of 450, but I find this gets too brown if I go that high. Also, I have made this as both a rustic round loaf and in a loaf pan. When I want to make a round loaf I put it on a cookie sheet. It does flatten a bit while cooking, though, so if I want slices instead of wedges I will put it in a loaf pan and tent w/ foil to avoid burning the crust. -- posted by smellyvegetarian

Yakitori Chicken (Skewers)

Great as a main meal with some rice and veges or as a fingerfood appetizer.
Use a gluten-free soy sauce if cooking gluten-free (Aussies- Chang's brand is currently gluten-free). Bottled crushed ginger can be used in place of the fresh grated ginger. Bamboo skewers should be soaked in water for 5 minutes before using to stop them catching alight during the cooking time -- posted by **Jubes**

Lighter Shrimp Scampi

(From Everyday Food)
Scampi minus the butter and wine. Keep a bag of frozen (raw) shrimp in the freezer and you can have a quick and easy weekday meal on hand. (It just takes a few minutes to quick thaw the shrimp, follow the directions on the bag.) I always have a jar of minced garlic in the fridge and I often sub bottled lemon juice for fresh. I serve with steamed broccoli and a salad. You could also serve with a side of pasta, rice, or garlic bread. -- posted by Pomtini

Dried English Mustard

For those of us across the pond (and in other parts of the world too) who can't easily find this neat condiment, and/or only need a little bit and don't want a huge bottle, for making traditional English dishes. The flour gives it substance and turmeric heats it up-- it's a fab substitute for plain ground mustard when making macaroni and cheese sauce! Feel free to adjust upward or downward depending on how much you need-- this is to make a "spice rack" sized bottle. In a fancy spice bottle, it makes a nice gift for the Anglophile in your life! 1 SERVING = 1 TSP, 12 TSP IN 4 OZ -- posted by the80srule

Homemade Hamburger Helper Mix Sodium Free

I found this somewhere on the web as I was searching for sodium-free alternatives for my DD. She loves stove top mix type meals, but they were absolutely off limits for her salt-free needs. This is a great substitute, easy to make and can be used to make a variety of different stove top meals. One recipe for an Italian skillet dinner is included below; I will add more as I try them. This makes enough for several dinners. Mix it up and store in a plastic container. -- posted by Messy44

Maine shrimp are caught in the coastal waters of Maine during winter. They;re usually sold with their heads still on.
Tuna Patties

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!

You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried! -- posted by Angel Stowe

Indian food is my all-time favorite cuisine, and even I am surprised I haven't posted a single recipe yet... until now! Tandoori chicken is a classic North Indian favorite dish which is baked in a clay pot or oven. While you don't need a clay oven for this recipe -- the results are still fabulous (wow is it good)!
Foil Wrapped Savory Fish

Before my divorce, I found myself the proud owner of lots of fish....he spent an awful lot of time fishing! So I had to find numerous ways of preparing it, so that I didn't have to eat the same thing over and over again! I can't say I miss the ex-husband, but I really do miss the fish! The sesame oil adds a nutty flavor....if you don't like sesame oil, use butter or margarine. I live on the gulf coast, so my fish of choice is red snapper, grouper, or amberjack...if I'm lucky triggerfish! A nice firm, white meat fish is preferably...nothing fishy tasting like mackerel! -- posted by breezermom

Homemade Chili Powder

A recipe I came across by accident in one of my cookbooks. I've never made chili powder before, nor have I looked on Zaar for a recipe. Heaven only knows why I haven't. The only chili powder that I can buy is very expensive (I have an allergy to black pepper and most brands say "spice" on the label which could mean anything) so I decided to try this one. I'll never buy chili powder again. You can adjust the heat by increasing or decreasing the amount of cayenne. -- posted by LARavenscroft

Big Batch Dulce De Leche

I love this recipe because you can prepare several cans of dulce de leche at once and they keep for months in the cupboard ready to use at a moment's notice. Also there is no stirring while it's cooking. The first time I made it I admit I was nervous boiling unopened cans of sweetened condensed milk but it worked perfectly but BE SURE TO KEEP THE WATER LEVEL WELL ABOVE THE CANS while they are simmering for 3 hours. The water pressure from all sides of the cans keep them from blowing up and meanwhile the condensed milk inside cooks like it would in a pressure cooker and it turns into caramel. -- posted by Ronalynne
