Tilapia in Cream Sauce

Tilapia in a zesty cream sauce. You can substitute any of your favorite fish(maybe not salmon). I've used flounder and orange roughy but prefer tilapia over flounder for the texture and over orange roughy for the price. A very fast and very good fish recipe. -- posted by Chef #1312888

Monte Cristo Quesadillas

My husband and I adore Monte Cristo sandwiches, but let's face it,they are fattening, and messy to make. I was playing around and came up with this. The measurements are NOT exact! Use as much or as little of each ingredient to suit your tastes. The important thing is to make sure that you place cheese on the tortilla first, and then last before you top it with another tortilla. The cheese acts as glue, and it will keep the whole thing from falling apart. Only flip it when the cheese has melted! -- posted by Retro Kali

Easy Grilled Chicken Livers

I discovered this recipe by accident, when my DH and I were roasting a whole chicken on the grill. Whole chickens usually have the organs stuffed inside, so I pulled them out (neck, heart, gizzard and liver) and cooked them on the grill. Our kitty cat got the neck (minus the bones), heart and gizzard, but I got the liver and it was unbelievably delicious. I tried it again with a container of chicken livers and they were so tender and juicy and so, so easy to make. It sounds a little weird, but trust me, they are out of this world. -- posted by sunflowerseed

Anna's Tuna Soboro (Quick and Easy!)

Soboro is a salty-sweet Japanese dish that is used in many ways - you can put it into onigiri, serve it over rice, stir-fry it with veggies, or put it into scrambled eggs. It keeps in the refridgerator for a week and can be frozen, so you can easily make more than you need and have an easy meal later in the week. It seems that in Japan, they consider it a condiment. This is tuna soboro - there are different soboro recipes for different types of meat. I cannot take credit for this recipe - annathered at wordpress originally posted it on the web. -- posted by freakingdork

Spicy Pan-Seared Salmon

I made this salmon to accompany "Zataran's Black Beans and Rice". It was a quick and easy fix for a busy workday dinner. The salmon turns out juicy on the inside, crispy and brown on the outside and spicy from the combination of seasonings. If you desire to tone it down a notch, cut the amount of cayenne pepper in half. I served each filet atop one serving of "Black Beans and Rice". -- posted by MarthaStewartWanabe

Grilled Lime-Ginger Marinated Pork Loin

This is another one of my experimental yet successful creations. DH, the guinea pig, heartily approved. The pork loin turns out tender and juicy with many layers of flavor: smokiness from the grill, tanginess from the lime juice, nuttiness/saltiness from the soy sauce and a little heat from the ginger and red pepper flakes. -- posted by MarthaStewartWanabe

George Foreman Simple Grilled Salmon

I am sure you can do this just as easily on the regular grill, but it was too hot outside today, and I was just cooking for myself, so the George Foreman worked out better for me. This recipe is tailored for 1 person/1 serving, however you can change the serving size if need be. Unfortunately, I am the only one in the house who likes Salmon.
Jalapeno Shark Burgers

I came up with this when I had bought some shark steaks and had no idea what to do with them. My mom mentioned that shark is a meaty fish, but a bit bland, so I decided to throw it in the food processor and make burgers. Try to trim off as much of the skin and fatty stuff as you can.
Seared Ahi Marinade

Biscuits for 2 ( or 4 )

As you know most biscuit recipes make anywhere from 8 to 12 biscuits. And some time that's just way too much for two ( or 4 ) people. While I was looking through my treasured 1996 Taste of Home Annual Recipes, I discovered this recipe that was sent into them by Sylvia McCoy of Lees Summit, Missouri. While making this recipe, I did make a couple of changes on the way that they were made. But, I don't think it affected the finished product. For higher biscuits, I double sifted the dry ingredients( I've always done that :) )If you have the above mentioned Cookbook, please check page 191 for the original recipe.I know this seems like alot of steps, but it's really easy. :)Submitted to " ZAAR " on October 6th, 2009 -- posted by Chef shapeweaver ©

Maine Shrimp

Maine shrimp are caught in the coastal waters of Maine during winter. They;re usually sold with their heads still on. Anyhow they are a very delicate shrimp, which appear to me to be very similar to the "ama ebi" (sweet shrimp) served up at good sushi bars. The recipe below is probably the simplest way of cooking them. -- posted by Diann is Cooking

El Cheapo Quesadilla

The DH and i love mexican food, but due to budget we don't get to go out to eat for it much so i've been trying to make my own versions at home.

These turned out really good, we even eat then when money isn't tight now!!
I got all the ingredients at aldi's which is why i call them el cheapo;)

I make these in my grill pan but you can use a regular frying pan with good results, also switch up the meat and cheese for different flavors.. hope you like them. -- posted by onegoofydevil

Irish Rarebit on Soda Bread With Cheddar Cheese and Ale

An easy and very tasty rarebit dish made with Irish cheddar cheese and the ubiquitous Irish ale, Guinness. The Emerald Isle produces some great dairy products and none is better than their butter and Cheddar style cheese. This recipe has Ireland written right the way through it, using soda bread as the base for this cheesy snack, as well as the aforementioned cheese and ale. I have also made these to eat with a bowl of hearty soup or Irish stew, perfect for a cold or damp winter's day. Amazing high tea time food as well; served with salad, chutneys and pickles for a cheap and easy fire-side supper. -- posted by French Tart

This is a dry-rubbed Salmon recipe with a nice bit of heat and curry-like flavor, without the need for a heavy sauce. Delicious and relatively healthy.
Big Batch Dulce De Leche

I love this recipe because you can prepare several cans of dulce de leche at once and they keep for months in the cupboard ready to use at a moment's notice. Also there is no stirring while it's cooking. The first time I made it I admit I was nervous boiling unopened cans of sweetened condensed milk but it worked perfectly but BE SURE TO KEEP THE WATER LEVEL WELL ABOVE THE CANS while they are simmering for 3 hours. The water pressure from all sides of the cans keep them from blowing up and meanwhile the condensed milk inside cooks like it would in a pressure cooker and it turns into caramel. -- posted by Ronalynne

Easy Stove Top Macaroni & Cheese for One or Two

This is one of my favorite week night dinners. I usually eat the whole thing myself since I live on my own, but it could be shared as a side dish. This recipe is easy to change up by substituting a different cheese or vegetable, or using different shapes of pasta (or filled pasta, such as tortellini).
