			<description>POSTED FOR ZWT 4: Getting the REAL peri-peri oil recipe is a pain in the backside, and you never really find it. This is the nearest to the real thing, I think, but I don't take responsibility!! You won't have peri-peri peppers, so any hot red peppers, fresh or dried, will do. Ready-made Peri-peri oil can be bought where I am. The longer you can steep this oil, the better! The Moz prawns (shrimps) are large and straight from the ocean, and are only slit through the back shell and the vein removed. Then they're butterflied, brushed well with the oil, and fried or grilled just until they curl up and turn pink. There are other similar recipes. Mozambique prawns are really the only prawns to use! 			<title>Salmon on Salt in a Frying Pan</title>

Put a layer of kosher salt( about 2 cm.) in a frying pan and lay
4 pieces of Salmon (dryed) with skin down on the salt.
Put a few drops of lemon on the Salmon and cover 
it with a lid.
Cook for ten minutes onlyon a medium heat
(otherwise it will dry out)
Skin of Salmon sticks to the salt.
Take it carefully out of the frying pan.

			<title>Roasted Chicken Breasts Base Recipe</title>

			<description>This is a great recipe that is simple and good all it's own, but can be a base to so many other recipes.  I aquired this recipe from Cook's Ilistrated.

To make sure that the breasts cook at the same rate, purchase two similarly sized whole breasts (NOT SPLIT BREASTS) with skins fully intact.  Whole chicken breasts weighing about 11/2 pounds work best because they require a cooking time long enough to ensure that the skin will brown and crisp nicely.  If you do not own a broiler pan, use a roasting pan fitted with a flat wire rack.  This recipe can easily be increased by 50 to 100 percent. 			<description>The cooking times below are for 21/25 shrimp (that is, the size of the shrimp is such that there are 21 to 25 in 1 pound.) If 21/25 shrimp are not available, adjust cooking times slightly. Either a nonstick or traditional skillet will work for this recipe, but a  nonstick will simplify cleanup.

I have always read and heard that it is not best practice to cook chicken in the juice that it marinates in, but I did for this recipe, and I'm still alive. It is not ABSOLUTELY necessary to freeze the chicken after combining all the ingredients in the bag - in fact, for my experience, I just took out frozen chicken breasts and defrosted the chicken in the sauce (in the fridge) and made it the very next night. The freezing part is just an option for busy people to have a convenient ready-made meal waiting in the freezer. 			<description>One day we were shopping at Costco in Albuquerque, New Mexico, and a sample lady gave us a sample of salmon spread on a cracker.  It was absolutely DELICIOUS!  The next day we returned and purchased the Bear &amp;amp; Wolf brand of Wild Alaskan Pink Salmon, which is the brand you should use if you can get it.  You can even get it through their website.  The next day the sample woman was not there, so we had to come up with the recipe by trial and error.  I guess you could actually use any brand. You can honor the Buffalo tradition by serving blue cheese dressing as your dipping sauce...use a low-fat or a fat-free dressing if you are trying to eat healthier. And as you know, the chihcken tenders have less fat than the wings.
