Yummy addition to pasta, cheese spreads, salads on toasted crispy bread, grilled fish or chicken, pizza toppings, etc. You can jar it and use as needed! The olive oil is a judgment call on you own taste. If you want it thick and chunky or creamy.

White Beans with Tarragon

Healthy Creamy Pesto Sauce

This is a recipe I make over and over--it's simple, fast, healthy, inexpensive and good for any season/occasion. I love creamy pesto sauces over pasta, but ya know those sauces ain't so healthy: high in fat, sodium, or both. Even those little packets of creamy pesto sauce in the "gravy" aisle aren't good for you. This sauce is better for you and even faster to make than one of those packets! You can adjust to taste or what you have on hand: I've used fat-free yoghurt, low fat yoghurt and (my favourite) homemade yoghurt--you can buy fresh at an Indian grocer. The recipe makes about a cup, which you can mix with cooked chicken or sauteed mushrooms (or both, like I do!) or steamed clams or steamed veggies and pour over enough cooked pasta for 2-4 people. I'll post other recipes with some of my favourite uses, but be creative! -- posted by bikerchick

Cheese Tortellini Pesto Pasta Salad

This is most definately my FAVORITE pasta salad in the world! I have been making it for years, but never wrote it down....well...thanks to Recipezaar I'm learning to "measure", LOL!!!! Very happy to share! This recipe is for a small crowd. If making just for your family, omit the rotini, and add only as much of the rest of the ingredients (about half) that you'd like. Don't worry, it's really simple and easy! -- posted by Wildflour

The Art of Cookery website is where this recipe was found and is followed by a tip for those of us watching our fiqures. Pears and cheese as a starter will stimulate both appetite and taste buds, so this is best for those who are not watching their weight. Even if you are worried about the waistline though, don't deny yourself this delicious combination, you can still enjoy it but as a main course.
Creamy Macaroni and Cheese Sausage Casserole

Really you can add in anything you want to this, but I prefer sausage meat, frozen peas are also good to add in. Make certain to put a cookie sheet under the baking dish in case of spills, the casserole dish will be very full, or you can bake it in a larger casserole dish. This is delicious even made without the sausage meat added in, but for a main meal I suggest to add in the cooked sausage. You will love this! -- posted by KITTENCAL

Caesar Salad Sauce

I was hosting a baby shower one day, and one of the guests offered to bring a caesar salad. She forgot to bring the salad dressing! I didn't have any of the bottled stuff so I threw this together. I don't put any egg in the sauce itself, but I serve the salad with bacon bits and hard boiled, chopped up eggs on top. I also HATE anchovies. So you won't find any in here. If you like them, you will have to figure out on your own how much paste to use! -- posted by C & D's Mommy

This versatile appitizer can be used in an antipasto tray....over cut tomatoes.... on fresh baguettes... or as part of a salad. Good olive oil is a must here! The oil can, (over time) go rancid so smell it to make sure that it is still good...you will know if it is off! Don't make it too spicy, however, or the flavor of the fresh cheese gets lost.
Kids Caesar Salad

I work at a kids day camp and am constantly in search of basic recipes that give kids plenty to do in a limited amount of time. This is a generic recipe that isn't a brain teaser, but I thought i'd post it because as simple as it sounds, sometimes it's hard to come up with recipes designed for kids. I like the recipe because it doesn't involve much knifework and is great for my 6-9 yr old kitchen program. -- posted by SUPERchef :)

Summer Time Easy Courgette - Zucchini Carpaccio

A delightful and very elegant summer starter dish that is fresh and easy to make. The combination of the parmesan cheese with the hazenut oil and black olives is a very sophisticated flavour, making this a wonderful dish to serve before any special summer dinner party. If you cannot get hold of hazelnut oil, walnut oil would be a good substitute. Green olives can also be used, but the colours will not be so dramatic! Try to use FRESHLY grated/shaved parmesan cheese from a block, the taste is far better than the pre-packed grated cheese. Wine suggestion - a chilled Chablis or Chardonnay. -- posted by French Tart

Traditional Caesar Dressing

I was searching forever for a caesar recipe that was true to the original. I found it difficult to find a recipe that didn't include something silly like mayonaise or yogurt. And then when i thought i did find one, they had to ruin it by adding anchovies! (contrary to popular belief, anchovies were not in the original caesar salad, that came years later). So i had to write my own recipe. After several attempts, this is what i came up with. I recommend not using a food processor, as it tends to put too much air into the eggs, i have better results with a bowl and a whisk -- posted by Chef Jaybo

Traditional Caprese Salad

Caprese salad is a great main dish (lunch) or appetizer for a summer dinner. It goes best with a white wine, and is amazing when preceding a light pasta dish. When using as a main dish for lunch, double up the portions.

This is a recipe that has been handed down through the generations in my family as long as anyone can remember. My grandmother (peacefully rest her soul) recalled learning this recipe from her grandmother. She also told stories of her grandmother recalling learning it from her grandmother. This is a truly old-world Italian version of this recipe. Many of the versions that people know have been Americanized or have been updated in some way. As best I can tell, this recipe is about as traditional as it gets. -- posted by Obsidian468
