Magnificent Macaroni and Cheese

Another composite recipe sewn together of recipes from my grandmother, mother, celebrity chefs, dear friends, and random dips into the online well. Finally years of baked failures and "pretty good" recipes has come together into a Cheesy Mac that can only be described as "Magnificent." -- posted by AlmightyMooX

Cheddar Raisin Muffins

These muffins are a wonderful accompaniment to ham, pork chops, or grilled chicken. The raisins make them sweet, the cheese keeps them savory. They are best served warm right from the oven. -- posted by Alan in SW Florida

French-Style Baked Eggs & Cheese

I was inspired by a recipe I saw in the hit game "Restaurant Empire", wondering why it got such a low rating when I thought the ingredients sounded awesome...so here's my adaptation of it! This is a great brunch/leisure breakfast dish, I make this on some weekends when I have time to cook a gourmet breakfast instead of rushing out the door with coffee and toast. (And I love to leave bits of egg on the stove to make some scrambled egg to eat before it gets baked.)

If you want it to be thicker and fluffier for the scrambled egg element and to cut into pie-like wedges, use an 8" baking pan.
If you want it to be flatter like a frittata, use a 10" baking pan. -- posted by the80srule

Jill Samwiches

My younger sister, Mona, loves when I make these and they're so simple to make and soooo good!! It sounds like a wierd combination but it's really cheap and good. She named them Jill Samwiches because I was just playing around in the kitchen one day and came up with this. I've even added an egg to this sandwich before-not very healthy but oh so good. Goes well with any kind of soup or salad. Enjoy -- posted by msjill111

Glorious Grill Cheese and Pickles! How Good is That? Longmeadow

I love cucumbers, and the next step in keeping cucumbers year round is to pickle them. There is nothing more glorious in nature then opening a processed and canned dill pickle from the summer months. Just biting into one sets off a whole memory of the previous garden and all the treasures it yielded. The second part of the recipe really is based on the typical and very heart warming grilled cheese sandwich. Talk about memories! Remember when you were a youngster, and the rain was pouring sheets outside? You were chilled to the bone from trouping around in it and Mom met you at the front door, helped you out of your wet clothes and gathered the old cast iron skillet out of the cupboard. She then buttered two slices of homemade bread with real butter and put two wonderful slices of cheddar cheese between the bread and grilled away until the sides of the bread became crusty and brown? The inside oozed the cheese out, as it was ready to be devoured alongside potato chips and a pickle. Since I saw this recipe from "Rachel Ray" I have adapted this for the use of my summer pickles and pumpernickel or rye bread. But really you get your pickle, get your bread, some great cheese slices and there you go. Stay in from the rain of the day, and use your cast iron skillet for a trip down memory lane. -- posted by Andi of Longmeadow Farm

Classic Chili Poblano Rellenos

I love chili rellenos and with poblano chilies, they are super good! I hope you enjoy this classic recipe, using poblano chilies!
This chile pepper is often mislabeled 'Pasilla', which is a different pepper entirely. It is one of the most popular chiles in Mexico and has won the appreciation of many a chef worldwide because of the superior flavor it has over regular bell peppers.

They have a tough outer skin that usually requires roasting and peeling before use. These very large chile peppers are most popular in chiles rellenos recipes, but cooking with these as a substitute for bell peppers in any recipe will enhance the flavor. -- posted by Sharon123

Fresh Cucumber Cheese Dip

This is such an unexpected fresh dip! I love to serve it with the new "Flips" cracker/pretzels. We've also served this dip with bagels, pretzels and other crackers. You can also spread it on a tortilla wrap and make pinwheels or top it with ham/turkey and make roll-up sandwiches!

Classic Skillet or Baked Macaroni and Cheese

This is just good 'ol mac and cheese- rich, creamy and satisfying. Any cheese you like can be put in there, and any shaped noodle will work (though I think elbows, penne and rotini work best). Whole milk makes a richer mac and cheese, but didn't miss it here (and dh only will drink whole milk!). This will serve 8 adults a main course, more if there are kids or as a side. -- posted by newmama

Southwestern Pimento Cheese

I hate the mushy store bought style of pimento cheese. I prefer it a little drier than the traditional one so I came up with this. You can add more mayo to moisten if you want. This recipe should have texture so don't over mix everything. Serve with crackers or tortilla chips. We like this spicy and usually add more heat. -- posted by Chef #1504827

Baked Camembert With Pistachios & Cranberries

Got this recipe from the Betty Rosbottom article in the local paper.
Plan on serving/eating it right away because the cheese does harden up quickly and the dish gets fairly mutilated once people dive into it.
I just love the mix of flavors and textures with this dish. I prefer toasted baguette, but crackers or other breads would also work. -- posted by GES 2009

Golden Macaroni and Cheese

Wow! This is comfort food at it's finest. I stirred in ham before baking, but skipped the bacon topping. I also didn't put the breadcrumbs and melted butter on top, and it was still heavenly. I cooked my noodles only until slightly underdone so they wouldn't be overcooked but you decide how you like them. If you use processed cheese (like Velveeta), the recipe says to omit the bread crumbs.
Irish Rarebit on Soda Bread With Cheddar Cheese and Ale

An easy and very tasty rarebit dish made with Irish cheddar cheese and the ubiquitous Irish ale, Guinness. The Emerald Isle produces some great dairy products and none is better than their butter and Cheddar style cheese. This recipe has Ireland written right the way through it, using soda bread as the base for this cheesy snack, as well as the aforementioned cheese and ale. I have also made these to eat with a bowl of hearty soup or Irish stew, perfect for a cold or damp winter's day. Amazing high tea time food as well; served with salad, chutneys and pickles for a cheap and easy fire-side supper. -- posted by French Tart

Nelson's Mexican Cheese Dip

In Memphis, TN in the 1970's there was a restaurant called "El Chapo", where we ate mexican food on an almost weekly basis. I can remember my father asking the waiter for the recipe for their cheese dip, which was served along with "hot dip" (salsa) and tortillia chips. Over the years he adapted the recipe, which he always had on hand for a late afternoon snack. Dad served it cold from the fridge. My son prefers it warm. Either way it is addictive, so make sure to have lots of tortillia chips on hand! -- posted by REALtorFOOD

Avocado-Tomato Grilled Cheese Sandwich

I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it. -- posted by TasteTester
