Italian Parmesan Herb Mix

This came from my Southern Living magazine in an article about homemade food gifts for the holidays. I think nothing says love better than something homemade. It means you took time and thought into making someone a gift. Their suggestions for use are to toss with pasta, veggies, or popcorn, sprinkle over salads, mix with butter and baste hot baked bread with it, or use it in flour for breading chicken. -- posted by Redneck Epicurean

Barbecue Chicken Rub

A great rub for chicken on the BBQ that goes well with most sauces. I always use it for wings on the grill. You can substitute cane sugar with brown sugar, although the moisture content of it will cause clumping in your rub. You can avoid the clumping by drying out the brown sugar by spreading it out on a cookie sheet, stirring it around every three hours. -- posted by Whipper

Whipper's BBQ Rub

A good all-purpose barbecue spice rub that is best suited for indirect cooking, or at least medium to low direct grilling. The sugar will burn with direct grilling over high heat. You can subsitute the cane sugar with brown sugar, but because of the mositure content it tends to clump and isn't as easy to work with. You can always dry the brown sugar by spreading it out on a cookie sheet and letting sit until it drys out, stirring every 2-3 hours. -- posted by Whipper

coarsely crumbled. CHer's add your favorite dried chiles to liven it up. I usually add a milder chile for flavor then a bit of Thai Birds. -- posted by mama's kitchen

Spicy Meat Rub

A beautiful red spice mix with a kick, this spice combo is good as a general purpose taco seasoning replacement or as a meat rub. Works best with pan fried or grilled chicken or steak, but should be good with pork, lamb, or anything else that breathes air. Would also be good sprinkled over pasta or added to steamed vegetables.
To add more of a kick replace one part ground black pepper with one part cayenne pepper. -- posted by GenYChef

The Best Creole/Cajun Seasoning Mix

Move over Emeril!... you will never purchase Creole or Cajun seasoning again once you taste this one --- I have searched for the longest time to find the best seasoning blend, this is it! --- four tablespoons of seasoned salt will not be overly-salty if you prefer a more salty taste then add in some white salt --- this makes a fair amount of seasoning, just store in a tightly-sealed glass jar in the refrigerator to use in ground beef recipes, soups, or stews, homemade pasta sauce recipes, or use it to season roasts, chickens, pork, beef, I use it on just about everything! If you like extreme spice then increase the cayenne up to 4-5 teaspoons. This makes a great gift for a spice-lover! -- posted by KITTENCAL

Cajun Spice Blend

I was looking for Cajun seasoning for my New Year's Day black eyed peas. This is based on Julie Sahni's recipe in "Savoring Spices and Herbs" with a few alterations. Everyone loved the peas, btw. NOTES: I ground only 1/2 the herbs/spices for textural effect. I usually grind up a whole nutmeg & store in a jar so there's always an amount of fresh nutmeg on hand.

Oven Dried Onion / Garlic Flakes

This is a good way to use up extra onions/garlic and store them for future uses. Be sure to store in cool, dry places at room temperature in AIRTIGHT containers out of sunlight. With no moisture to be allowed to enter the container...ever ever.
FYI-Temperatures too high will result in the onions being cooked instead of dried and when overdried will lose its flavor and nutritive value. Onions/garlic that are underdried will spoil so be sure they are crisp when removed.
1 small clove = 1/8 teaspoon garlic powder 1/2 teaspoon dried garlic slices.
1 small or 1/4 cup chopped,fresh onion
= 1 tablespoon dried onion. -- posted by ~Rita~

An easy concoction that I made to give barbequed meats a bit of a spicy kick! With all the elements of the Caribbean - Dark Rum, Barbados Brown Sugar, Tropical Pineapple Juice and Fresh Ginger. This will make enough marinade/glaze for about 6 pork chops or pork steaks, 6 chicken breasts etc. Reserve a little of the marinade/glaze to dribble over the cooked meats just before serving. (NOT the marinade/glaze that the meat has been soaking in - as it will contain raw meat juices!) -- posted by French Tart

Green Chili-Cheese Compound Butter

This is a fabulous compound butter for fish, corn bread or muffins, corn on the cob or just to slather across a slice of bread. This butter freezes well as long as it is protected from the beastly odors that live in your freezer. Make sure to wrap well in plastic wrap and place in a Ziploc freezer bag. Or place in a container with a tight fitting lid placing plastic wrap on top- in contact with the butter itself. -- posted by Humble Bee

Homemade Taco Seasoning Mix

¼ cup seasoning and ¾ cup of water per pound of meat. As long as its stored in a cool, dry place it keeps forever.

possible add-ins:

dried jalapeños
ancho chilli powder
chipotle ( I always add chipotle)
dried onions they’ll rehydrate during cooking.

This recipe will make enough for about 4 lbs of meat.
This is pretty spicy stuff, if you don’t like a lot heat remove some of the peppers. -- posted by Jemshui

Minnesota Masala

I'm very fond of Indian cooking and, above all, the key element is the spice blend or "Masala" used by the recipe. A standard "curry powder" is what most folk outside India associate with Indian cuisine, although there are hundreds of varieties. This particular type is based off of a nut Masala and Garam Masala only it uses the wild rice native to my homestate, Minnesota, for the "nuts" as well as a decent amount of cloves. It not only seasons with a bit of heat, but it also thickens a bit with the ground rice. -- posted by David J Rust

Lemon Verbena and Calendula Vinegar

When steeping herbs in vinegar in the morning, it can be used that evening since it will begin flavoring the vinegar immediately. The longer it stands the more flavor it will have. The flowers and herbs will deteriorate and the flavor will not be as vibrant.

"The annual bed of pot marigolds is filled with plants. These are the true pot marigolds, Shakespeare’s “flowers of Middle Summer”, and by midsummer this spot will appear to be covered with a cloth of gold. I expect them to self-sow, returning every year to gladden our eyes.”
