Hannah's Asian Chicken Strip Salad

My daughter asked for a chicken salad for dinner tonight. She wanted chicken with light green lettuce leaves. When asked what flavors she wanted on the chicken, she said Asian. So here we have Hannah's Asian Chicken Strip Salad. By the way, she's 8. I don't usually measure my ingredients, I just pour until it looks right so these are guidelines more than actual measurements. -- posted by ButterflyMama

Morgan's Simple Cucumber Tomato Salad

I make this salad all the time for my kids, and my youngest (Morgan) absolutely loves it. If she eats nothing else on her plate, this salad is always gone. I usually use regular old vine tomatoes, but it's equally good with a pile of halved cherry or grape tomatoes. No matter how you make it, it's ridiculously easy and really yummy. -- posted by Seedbeads

Fresh Cabbage and Tomato Salad

This recipe was in a brochure from our Health Insurance Company. It sounded good so I tried it and we liked it very much. It is a heart healthy recipe from the National Heart, Lung and Blood Institute. Guess that can't hurt...lol. You can make more of the dressing if you like extra flavor from that. We made a double batch of the dressing. Cook time is chill time if you want it chilled, but other than that there is no actual cooking time. Use a small head of cabbage. I couldn't get the software to let me reflect that in the directions or the ingredients. -- posted by OceanLuvinGranny

Maple Basil Cole Slaw

Crunchy Asian Sesame Salad

This salad is great. Light, crunchy and pleasantly nutty. After graduating from college this past May and being home looking for a job I got sick of eating the same things everyday so I threw this together for something lighter. I've included what I use below, but this salad lends itself to be pretty flexible. Would be great with sliced grilled chicken on top or shrimp might be good too, with a little squeeze of lime. One warning: this makes quite a lot of salad so unless you are feeding a crowd I wouldn't put the dressing on all of the salad at once... it won't keep (soggy lettuce, soggy crunchies, etc). A good solution would be to bag up single serving portions in ziplock baggies and then top with dressing and crunchies when ready to serve. You could even put them straight into the bag and shake to mix it up before putting on a plate. -- posted by Steph.K

Felfel B'tomatish - Algerian Pepper & Tomato Salad

This is a classic Algerian 'salad' dish. You can either grill the tomatoes & peppers over an open flame, deep fry them or roast them. My family loves this recipe & we always mop it up with fresh bread! You can also serve this as part of a mezze selection. The vinegar is of course optional but it acts as a flavour enhancer so I do recommend at least trying a little of the salad with a few drops of vinegar on! -- posted by Um Safia

Instead of making them in individual bowls we made it in our big salad bowl with all ingredients combined and it turns out quite nice.
Tuna-Tomato Salad

This was something I made up while living on a student budget in Paris, France. This is another example of how the greatest things that come out of the kitchen are not a result of planning. I just looked around at what I had in the cupboard, put them together and it worked! It is a great starter or side dish. One rule though...you MUST add the blue cheese! It is what brings everything together. I kind of think of this as the French version of a caprese salad. -- posted by dk683

Tangy, Zesty Oil and Vinegar Potato Salad

The best potato salad you've never had. For when your craving that certain ZING from vinegar...I don't like regular potato salad. I don't like sweet relish, eggs, or miracle whip in my potato salad. The sharp onion with the vinegar balances the soft potato texture. Inexpensive and college budget approved. For more of a bite, add two to three teaspoons of whole grain mustard along with the olive oil. Try this!! Yumm....From Bon Appetit, 2009.

I wanted something that was cool, crunchy, tangy, spicy and a little sweet that would meet my diet requirements and was not your typical diet food.

This is my version of a fresh veggie relish/salad that is great alone or when paired with seafood, beef, pork etc...

Perfect in a warmed flour tortillas wrap with some shrimp, or a lettuce wrap with a bit of Avacado. It can be used with seafood, chicken, beef or pork as a relish. Or as I like it, alone for lunch. High fiber, low fat and awesome taste. I hope you enjoy it. Sturdy, abundant and inexpensive, cabbage is a long-standing dietary staple throughout the world and is so widely cultivated and stores so well that it is available throughout the year. They belong to the Cruciferae family
of vegetables along with kale, broccoli, collards and Brussels sprouts. Cabbage is very high in vitamins C and K, and a decent
source of dietary fiber.

Gazpacho, the classic fresh-vegetable salad from Spain that eats like a soup, usually takes a lot of chopping. In this streamlined recipe, most of the chopping is done for you by using canned tomatoes and vegetable juice. Because vegetable juice is a combination of several vegetables, you get most of the garden-fresh quality of a traditional gazpacho in a single ingredient. By adding some smoked turkey, this traditional light soup serves as a hearty, one-pot main-dish meal. For a spicier gazpacho, add a dash of hot pepper sauce. -- posted by Chef #1365024

Piquant Caper Salad Molds

This very unusual recipe came from my husband's step-grandmother. I'll be honest with you: people who try this either ADORE it and clamor for the recipe, or take a bite and say, "hmmmm....innnnteresting?" (then don't finish it.) Happily, the former outnumber the latter! If you're like me and really love the sweet/sour/salty combination, you'll love this. I serve it at buffet dinners on a big glass tray, with each individual mold atop a curly lettuce leaf, and dolloped with a bit of homemade mayonnaise. (Note: the "cooking time" is actually "chilling time.") -- posted by La Dilettante

This is an easy to make family favourite given to me by my mother years ago. A delicious, high fibre way to include more brown rice in your diet. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night. The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing. Everyone will be coming back for more and want the recipe.
Sweet Savory and Spicy Potato Salad

My friend Tricia made this for a cookout and I fell in love! It is the only potato salad I will make from now on. My husband never eats potato sald. He says "If there is meat around, why waste the time on side dishes?" He ate two HUGE servings of this......it is THAT good! If you cannot find candied jalapenos, just use one small fresh jalapeno (seeded and minced) and a tablespoon of sugar....it is just as good. We love curry, so we add more curry powder. Taste it and customize it to your taste!

The long prep time is the passive time needed to chill the potatoes. -- posted by LizP
