Trick and Treat Muffins

Muffins designed to trick children into eating some fruit and vegetables. Children think they are having a delicious, moist chocolate treat. In fact they are eating low fat muffins containing apples and beetroot. And when do you confess your deception? Perhaps at their twenty-first birthday party? Or when they leave home, when you give them the recipe? Or if there are other younger children still being deceived, perhaps this is best shared privately. Like the truth about Father Christmas, the Easter Bunny and the Tooth Fairy.
Dulces De Calabasas (Mexican Pumpkin Candy)

This is the stuff you get by the cash register at Mexican restaurants or in little Mexican grocery stores. It's been one of my favorites since I was, oh, 6 or 7 and got some at Olviera Street. I add the cinnamon and cloves because I like it spicy, but traditionally it's just pumpkin and sugar. Really labor-intensive, but so worth it! Do not use carving pumpkins, use sugar-pie or other cooking pumpkins (which the computer does not recognize.) Cook time is for unattended resting time. -- posted by ketchupqueen

Gooby Tomato Soup

I was looking for some Halloween recipes, and stumbled across this little gem online. I altered it slightly, adding basil, a stock cube, and using some fresh tomatoes as well as tinned.

The soup has to be hot to melt the cheese a bit, but the idea is that it gives you a different texture, and as a Halloween soup the kids can play with the 'goob' as well as eat it.

The preparation and cooking times are estimates, more or less. Just judge it by sight :) -- posted by Jaxies

A Meal in a Pumpkin

This is a very cute idea for around Halloween. When I first saw the recipe, I thought "YUCK", but then I tried it and it is really good and kids think it is GREAT because it is prepared and served in a pumpkin.

Halloween fun for everyone (you can add some vodka or rum for the adults...but you didn't hear that from me!). I'm really not sure how to put in Zaar times for prep and cook, so just take a look at the directions. It's very easy!

The frist "ingredient" is: 1 new rubber glove, washed well and rinsed. The Zaar puter kept spitting that one back at me. -- posted by Annacia

Pureed Squash Butternut, Acorn Any Hard Winter Squash!

This process is so very easy. No peeling! Take a look!
Squash is great for pureeing, roasting and baking. Once cooked and pureed, it can be used in soups, main dishes, vegetable side dishes, even breads, muffins, custards and pies.

The skin has many nutrients so go ahead and use it. Or peel and discard. But you will never know it's in the puree.
Dress any cooked winter squash with butter and herbs, a cream sauce, cheese sauce, maple syrup, candied ginger, spices and or nuts. -- posted by ~Rita~

Healthy Pumpkin Oatmeal Cookies

from Her Sports magazine. I ran out of rolled oats, so I used 1 cup rolled and 2 cups quick oats. Also substituted pumpkin spice mix for all the other spices and fresh pumpkin puree for canned pumpkin. I added only --1/2 cup raisins and added --1/4 cup chocolate chips. These came out a tad dry (as there is no fat in them) so adding a little oil could go a long way, though I haven't tried it. I baked for 8 min, rotated, and baked 8 more minutes. I will do slightly less next time. Also, they do not grow at all when baking, so the size you make them is the size the will end up. Mine were about 2 inches in diameter. -- posted by mikey & ev

Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~
