			<description>Here is a little piece of history for you - The almond has an interesting history in China.  The sweet almond was already in cultivatoin in the late Tang dynasty (AD 618-906), having been brough to China from Russian Turkestan and central Asia.  The bitter almond is a local nut, which is actually the kernel of the native apricot.  It is used extensively in Chinese herbal medicine for respiratory dysfunction and is also added in carefully prescruibed quantity (because of it's slightly toxic properties in its raw state and its strong bitter taste) to &amp;quot;superior&amp;quot; soups such as double-boiled quail and ginseng soups.  In desserts, it is often ground and combined with milk. Though it shows how to make the wreaths by hand, my guess is that if you have a cookie press could do the same thing with the wreath design.  These should look so pretty on a holiday cookie tray.  This looks like a lot of work, but hey - the holidays only come once a year right!! 			<description>This recipe made delicious chewy cookies.  I know you can't really call cookies healthy but I did what I could to make them a little better.  The flours and flax that I use can all be replaced with all purpose flour if you like. Anytime I use raisins I like to soak them for a few minutes in warm water.  This plumps and softens them nicely. 			<description>This is an almond butter cookie that melts in your mouth! An old Scandinavian recipe,I have been making this cookie for over 50 years: it was one of the first ones that my Swedish Grandmother taught me to make. However, this is NOT the cookie you make when you are running short on time. You must be proactive and do several steps before you can even begin the cookie itself.  It is critical to really brown the butter as it's that key ingredient that adds all the flavour. I will make over 100 of these each Christmas: at the start of the baking day I wil brown and cool the butter. At the end of the baking day, I will combine the ingredients and bake it, knowing that these MUST sit out on the counter to cool 100% or they shatter. The next day I repeat the steps. 			<description>I originally found this recipe on a baking blog,  Cookie Baker Lynn.  I made one major change to the recipe; melting the chocolate and incorporating it into the batter instead of using them as chunks in the cookie.  I searched here and found two recipes for these cookies each giving credit to Martha Stewart's website.  Both used chunks of chocolate rather than incorporating in the batter.  I think this is a significant enough change to warrant another recipe and to claim my own spin ;)  These cookies are thin chewy chocolatey goodness in every bite. 			<description>This recipe makes enough for a family reunion (I halved the recipe and still had 4 dozen cookies).  I've posted the recipe as originally written.  I really like the seasonings--cinnamon, ginger, and cloves.   It makes a nice twist on a classic treat.  Next time I'll skip the shortening and use real butter (just a personal preference).  I'd also dip my fork in white sugar and press them in a criss cross pattern after they come out of the oven instead of before.
