			<title>Houston Ham and Cheese Kolaches</title>

			<description>This recipe is not EXACTLY like they have around here, but I am working on it.  This will give you a really good idea of what we bring home from a donut shop in and around Houston.  These breakfast treats come from the Czech immigrants who settled the Texas Hill Country (between Houston and Austin and around Austin), and frequently come in a fruit type (dimpled and filled, like a danish) that is also available up North, and meat (which apparently doesn't exist anywhere else but around here in Texas).  Ham and cheese has always been one of my favorites.  The amount of flour you use will greatly depend on whether you are making this in or around Houston right before or after a rainstorm, as I always seem to; or if you are making it someplace with a normal, low level of humidity. 			<description>I found this in the Chicago Tribune's Good Eating section.  I never worked with Taleggio cheese before but loved it in this recipe.  Taleggio is creamy and mellow but it's flavor changes according to how long it's been aged.  It can become somewhat pungent if it's been aged for a longer time.  It melts nicely.  You can substitute goat cheese or Fontina cheese.  Oh, and for the chicken...I buy big bags of frozen chicken breast halves and they're huge, so for this recipe I just used two halves, sliced them in half vertically and then pounded them....they're much easier to pound than a whole chicken breast half.  But, I'm writing the recipe as I found it, with 4 chicken breast halves, OK, I'm talking too much so I'll shut up now. 			<description>Just made this for Easter.  It turned out wonderful.  It's now our 2nd favorite ham recipe.  This is a Penzey's recipe and uses Raspberry Enlightenment, a sauce used to enhance other flavors.  I added a step at the beginning from my other ham recipe: simmer ham in ginger ale on the stove for 45 minutes.  It cuts the saltiness a little.  It also cut down the roasting time to 1 1/2 hours.  This is a very forgiving recipe, because I forgot to cook the sauce down ahead of time and I used 1/3 C of mustard powder and it was fine. I didn't need to change anything but if I don't have Jack Daniel's I will sub Southern Comfort with good results.  You could also add whole cloves to the outside of the ham to intensify the flavour.
