			<description>This delicious ham will feed anywhere from 12-14 people which makes it a perfect ham to serve at a holiday dinner! Plum preserves can be used in place of the apricot. Cooking time is for an 8-pound ham if you use a different size then cooking times will have to be adjusted slightly. If you like more glaze to serve on the side then double the preserves and orange juice but still use only 3/4 cup to pour on the ham. This is one of my most requested recipes from family and friends - I have been cooking and preparing this ham for about 20 years now; it is wonderful for celebrations and festive gatherings! You can increase the quantities and weight with ease, although I have given the minimum ham weight here. The &amp;quot;boil before baking&amp;quot; method gives you a moist and flavourful ham with a sticky glaze, and just a hint of spices. A couple of &amp;quot;musts&amp;quot;, do use good quality high fruit ratio marmalade, and if the ham is smoked or heavily brined - do soak the ham joint overnight or for up to 24 hours, in cold water - it disperses the excess salt. This ham makes a wonderful centrepiece for any special meal; however, it is also a wonderful and very economical way of providing two more types of snacks or meals - ham sandwiches, plus the ham stock makes a delicious base for all types of soups, especially ham and pea soup! 			<description>I came up with this recipe because it is just my husnad and me and purchasing a big ham is not logical. I have had the occasion to double this recipe to use on a large, bone in ham and the results were just as wonderful.

Should you decide to utilize this recipe for a large ham, please follow the cooking directions on the hams packaging and layer on the glaze every 20 minutes to achieve that perfect glazing layer.

You will not use all the bourbon on a small ham, but may have to increase it if you are baking a larger ham.

			<description>Just made this for Easter.  It turned out wonderful.  It's now our 2nd favorite ham recipe.  This is a Penzey's recipe and uses Raspberry Enlightenment, a sauce used to enhance other flavors.  I added a step at the beginning from my other ham recipe: simmer ham in ginger ale on the stove for 45 minutes.  It cuts the saltiness a little.  It also cut down the roasting time to 1 1/2 hours.  This is a very forgiving recipe, because I forgot to cook the sauce down ahead of time and I used 1/3 C of mustard powder and it was fine. 			<description>Not sure why this is called Hollywood Ham, but it is a very good ham! It is especially good reheated, the sauce keeps it moist. I have used 1 1/2 cups chopped pineapple instead of the apple with great results as well. Can reduce the apple cider to 2 1/2 cups and add 1/2 cup of of Madeira or Port wine for a more complex flavor. This is also economical, the extra ham you do not use in this recipe can be used for other recipes or freeze for later use. Adapted from Bon App&amp;eacute;tit magazine, March 1995.
