			<description>This is what I created with leftover basil pesto, Italian bread, some Parmesan, ham and Mozzarella... Let me just say, there were no leftovers of this! Wow, melted cheese, pesto, olive oil...so good. If your pesto is oily you won't need the extra olive oil and also if you make your pesto with lots of Parmesan you may not need the additional cheese. My pesto is a little dry with not that much Parmesan because I like to add it later. 			<description>This is one of six frozen baby meals I used to make for my son. A friend gave me the combination and with minimal preparation you save yourself time and money. All six are really pretty good and I've made them for myself in a pinch. I would either try to use leftover meat from other dishes I'd prepared or intentionally make extra to use for these meals. My son used to have a three-compartment baby tray with lid and I'd put one or two frozen cubes in the first slot, a little baby vegetable in the second slot and a little baby fruit in the last slot and he was set for lunch. I'd have his tray ready the night before or in the morning and by lunch the frozen cube(s) had almost thawed and just needed a little warming in the microwave. My mother does not care for plain white rice, so I wanted to make something people would eat without adding tons of calories and fat. After looking at what I had on hand, I came up with this - was pretty darn good as is and even better when I topped with the orange sauce from  ORANGE YOU GLAD YOU MADE THIS ROASTED CHICKEN?  Recipe #211548 -  also went great with CHINESE ROASTED CHICKEN Recipe #135753.  I must credit Daisy Martinez for the rice - this was the best and the easiest I have ever made, I followed her recipe except she calls for 1&amp;frac12; tbsp salt which I did not use). 			<description>This is VERY good! Second time I had a large boneless Boston Butt from the Farmer's market. I inserted garlic slivers, scored the skin and then rubbed the meat with salt, pepper, rosemary and thyme, then refrigerated for about 5 hours and it was just as good!  Have also added some chopped, peeled apples and it adds a nice dimension to the flavor.  I usually add more garlic, and some carrots and celery. If you like it nice and juicy, use  2 cups of  apple cider. Third time,  I browned and did the onions and cider the night before and then fridged it over night. 			<description>This is a crock pot comfort food recipe for ham. The ham's braising liquid is transformed into a garnet sauce studded with raisins. Choose tawny or vintage port, as they are the driest types and make the best sauce.  Try to get a &amp;quot;Cure 81&amp;quot; ham, which has been cured by a method that results in a more flavorful, less salty ham. If you can't use a Cure 81 ham, blanch the ham before cooking it: Place the ham in a large saucepan of cold water. Over low heat, slowly bring the water just to the simmering point. All amounts for seasonings are estimates--I tend to season as I go and according to taste; I have a feeling these are underestimates.  I will be sure to update the next time I make this with adjusted amounts.
