Kohl Cannon or Colcannon

This recipe is courtesy of my Scottish roots. Kohl Cannon can be made in various ways, depending on whether you are Irish, German, or Scottish. No matter how it is made, the eating of Kohl Cannon was a common custom on Halloween. In it would be buried, well wrapped in waxed paper or foil for today's world, 4 favors. A penny (for wealth), a button (for poverty), a ring (for marriage, and a matchstick (for spinsterhood). Much excitement was aroused, especially among the young lassies who were hopeful that the Kohl Cannon would foretell their future happiness! This recipe is the Scot's Way! -- posted by SilentCricket

EASY Jack 'O Lantern Cake

We have 3 family member birthdays in a row in mid October and I make this cake for one big celebration. I'm not sure where I first saw this, I know it wasn't in a cookbook. I'd like to think I'm creative, but I probably saw it in a magazine over 30yrs ago. It makes a very large amount of cake, so it's great for any fall party or Thanksgiving dessert. Use your imagination and creativity to make the face and stem and leaves. I have also used black tinted icing for the eyes, nose and mouth. I only have 1 bundt pan, so the time consuming part is using it to make 2 cakes. It's really a good looking center piece on a holiday or theme table. -- posted by peppermintkitty

Gooby Tomato Soup

I was looking for some Halloween recipes, and stumbled across this little gem online. I altered it slightly, adding basil, a stock cube, and using some fresh tomatoes as well as tinned.

The soup has to be hot to melt the cheese a bit, but the idea is that it gives you a different texture, and as a Halloween soup the kids can play with the 'goob' as well as eat it.

The preparation and cooking times are estimates, more or less. Just judge it by sight :) -- posted by Jaxies

Rumbledethumps - Celtic Potato, Cabbage & Cheese Gratin

A wonderful combination of mashed potatoes, Savoy cabbage, cheese & chives - baked OR grilled to give a crispy cheesy topping. This is one of my very favourite family recipes - my Mum used to make it, as did her Mum before her! This is a Scottish recipe, similar to Irish Colcannon, which is also a potato & cabbage dish. You can serve this as a vegetable accompaniment or as a light luncheon dish with crusty bread & extra vegetables.

Best Ever Pumpkin or Butternut Squash Soup

I made this for a dinner party recently and served with French bread it went down very well. I’m not the greatest fan of soups, but as winter is setting in, I find that this is fantastic to have on hand. I make a large amount up on the weekend and take out what I need in the morning so that it has time to defrost before I get home. Once home, 10 minutes on the stove and I have a filling and healthy or filling and luxurious dinner, or starter to stave off the hunger whilst I cook the mains.
Time and quantities are relative estimates as I tend to use what I have, and just make sure that the water doesn’t evaporate from the pot. It usually takes about an hour and freezes exceptionally well. Add cream for extra richness if you like, but it is not necessary. -- posted by Luschka

This is my own creation. I made it for a regular coffee mug but for a "Grande" simply double everything and use a tall latte mug. If you want to go all out for guests or your sweetie leave room at the top of the mug for a wallop (forget the dollop!) of whipped cream and sprinkle it with shaved bittersweet chocolate and finely crushed hazelnuts.
Winter Squash Pie

Winter squash come in many sizes and shapes, but all have hard outer rinds that surround sweet, often orange flesh. Winter squash arrive late in the growing season and have a long storage life, so they've long been a staple in winter and spring when other vegetables are harder to come by. Pumpkin, acorn squash, Hubbard squash, buttercup and butternut squash are all examples of this wonderful vegetable. This recipe only uses one cup of squash, so it's a good way to recycle a little dab of leftover squash into something new and wonderful. From the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. -- posted by Molly53

Tartiflette - Alpine Melted Cheese, Bacon and Potato Gratin

Fast becoming a classic, Tartiflette is the perfect palliative supper dish for chilly autumn and winter evenings. This delicious, rich and hearty dish hails from the Alpine Haute Savoie region of France. For authenticity's sake, try to get hold of a whole Reblochon cheese. Reminiscent of Camembert or Brie in flavour, texture and shape, Reblochon has the perfect melting quality for Tartiflette. In addition, as this dish can be prepared a day or so ahead, it could make the ultimate Bonfire Night or Halloween centrepiece! This is a truly indulgent dish, which is best appreciated after a strenuous morning on the ski-slopes — or at least a brisk winter’s morning walk. It is important to use a ripe Reblochon, preferably bought a few days in advance and left to reach maturity out of the fridge. For this to happen, it should be uncategorised. Of course, if you have a good cheese monger you will be able to buy one ripe and ready to eat. Serve the Tartiflette hot and straight from the gratin dish with fresh salad, crusty bread and assorted pickles. Edited to add: One reviewer made a comment that you should fry the bacon and discard the fat - it IS stated in the main instructions to do just that! Also, if your potatoes are not cooked after 15 minutes plus 25 minutes in the oven, you have not cut them thin enough - try to cut them quite thinly, as shown in all the photos. Reblochon cheese is a very STRONG cheese - do not try this recipe if you are not a lover of strong cheese! Merci:-) -- posted by French Tart

Queen Victoria's Brown Windsor Soup

The very soup reputed to have built the British Empire and one that was oh-so-fashionable in Victorian and Edwardian times! This soup was served daily, until recently, in the dining cars of British Rail. This classic hearty soup was also very popular at the castle (Windsor) in the nineteenth and early twentieth centuries. Queen Victoria was particularly fond of it, and it regularly appeared on state banquet menus.
However, this recipe has not had very good press over recent years - drab tinned brands and indifferent, greasy soups served in some lower end restaurants have given it a bad culinary name! I hope to redress that with this authentic recipe from Windsor in Berkshire, England - home to the Royal Windsor Castle. A rich and hearty soup, this makes a meal in itself when served with crusty bread, scones or bread rolls. -- posted by French Tart
