			<description>I finally took the plunge and tried this odd recipe. It was the most delicious fish I've ever tasted, moist and silky texture. It is NOT oily tasting at all, and you can even eat the lemon slices. Yum! 

Next I'll try it with salmon. 

Poaching fish in oil may seem like an unusual cooking method, but it's actually a little like confit, the traditional preparation in which meat is cooked in its own fat. The idea comes from a guest television talk show appearance by Mario Batali, the chef of New York City's Babbo, and the technique he demonstrated is adapted here for home use. 

The fish fillets stay extremely moist, but without any taste of oil, and the layers of lemon slices, which lose their tartness when heated with the oil and salt, infuse the dish with wonderful citrus notes. 

Another bonus: the oil doesn't pick up any fish flavor (believe it or not) - it tastes lemony and slightly salty - and only a small amount is served with the dish, so the rest can be used again in a vinaigrette, or added to mashed potatoes, or saved for cooking.

			<description>I was looking for recipes to cook halibut seeing as I caught 2 from a deep sea fishing trip off of Vancouver Island.  The first one I caught was 46 lb and the second one was 27 lb.  I found this recipe from a Hellman's pamphlet.  I made a couple of changes to suit our taste.  We love doing halibut this way.  The topping keeps the fish moist.  We had our halibut cut into 1 lb. servings so we bbq it in one piece and then cut it into portions. While the fish is baking I deglaze the frying pan with a flavored vinegar (I use a tequila-lime vinegar) and a little water, then top the fish with the sauce before serving. When I made this I used 7 ounce Salmon filets and cooked them for about 13 minutes on each side, and then I put them under the broiler for about 2 minutes just to crispen up the breadcrumbs. 			<description>This is my original recipe. It is so easy you won't believe how good it is. Beautiful white halibut, lightly smoky from the BBQ, with a sauce of red currant jelly and garlic.  Feel free to add a bit of finly chopped jalapino if more heat is your taste.
If you can't find red currant jelly, seedless red raspberry works well, but will be sweeter.
