			<description>This recipe was given to me by a chef at the Regal Alaskan Hotel in Anchorage, Alaska, while on a fishing trip. This is by far the best tasting fish or shrimp I have ever had, and tons of people agree with me. I have used this recipe several times for large parties and have yet to find anyone not completely satisfied. If you cook the food properly it will not come out burnt, but will have some charring on the outside and be perfect on the inside. My favorite is the blackened shrimp with the cajun hollandaise sauce, it is to die for. 			<description>Salmon is a healthy and delicious fish, an excellent source of omega-3 fatty acids, special fats that can only be found in fish from cold, Northern waters including salmon, sardines, kippers, and mackerel.  

Be careful when buying your salmon, farmed salmon has high levels of PCBs, and ones from the Great Lakes or Atlantic Ocean have mercury levels, which are dangerous to pregnant women and children. 			<description>I finally took the plunge and tried this odd recipe. It was the most delicious fish I've ever tasted, moist and silky texture. It is NOT oily tasting at all, and you can even eat the lemon slices. Yum! 

Next I'll try it with salmon. 

Poaching fish in oil may seem like an unusual cooking method, but it's actually a little like confit, the traditional preparation in which meat is cooked in its own fat. The idea comes from a guest television talk show appearance by Mario Batali, the chef of New York City's Babbo, and the technique he demonstrated is adapted here for home use. 

The fish fillets stay extremely moist, but without any taste of oil, and the layers of lemon slices, which lose their tartness when heated with the oil and salt, infuse the dish with wonderful citrus notes. 

Another bonus: the oil doesn't pick up any fish flavor (believe it or not) - it tastes lemony and slightly salty - and only a small amount is served with the dish, so the rest can be used again in a vinaigrette, or added to mashed potatoes, or saved for cooking.

Regarding the cilantro root -- my husband looked at every Asian market in the area to no avail thinking if anyone would have cilantro root they would.  He felt it was essential to the recipe despite the recommendation of adding additional cilantro instead.  He mentioned to me he had been looking for cilantro root -- &amp;quot;Did you think of the herb section of the nursery?&amp;quot;  I bought a little 4-inch pot of cilantro from the herb section and washed the roots thoroughly (a chore, I will admit).  Sometimes you can find cilantro with some of the roots attached, but rarely.
