Don't bother buying chorizo, it is so easy to make. You can mix in some eggs to make breakfast burritos, serve the cooked chorizo over refried bean, or make it into tacos.
Blue Cheese & Bacon Burgers

My husband and I had burgers at a restaurant once that had blue cheese and bacon. It was so good, so I attempted to make our own. After lots of trial and error, I've got the recipe down. I typically make the burgers and freeze them for future use. The blue-cheese butter freezes well too for steaks or other uses. -- posted by Melanie B.

Mushroom and Horseradish Hamburgers (Reduced Fat)

It is Friday again and that means it is another chance for me to try to invent a healthier burger. This week we actually wanted a beef burger so I wanted to try to get it low fat but still moist and tasty. I had the idea of a horseradish and mushroom burger and this is what came out of those thoughts. The mushrooms are used sort of in place of breadcrumbs and their high moisture content helps to keep things moist. I think I may have thought that the horseradish would have been a stronger taste but in reality it was rather mellow but nice. If you want more of a bite from the horseradish I would suggest spreading a bit of the horseradish sauce on your burger bun as much more in the mix might make it too moist to hold up. Cooking time includes the chilling time. -- posted by Sarah_Jayne

Onion Stuffed Hamburgers

Hamburger pattie surrounding a slab of uncooked onion. Oh, by the way, the onion will cook inside the burger, mellowing the flavor of the onion and keeping the burger moist. Each pattie is about 1/4 pound of meat surrounding a 2 inch diameter 1/4 inch thick slab of onion. Even my kids love these. -- posted by SAM the Nuke [:-{)

I've been making this for quite a while. I always liked it because it uses pastrami instead of the normal corned beef.It has sort of a strong mustard taste, so you may want to tone that down by cutting the 1 Tbsp down to a 1/2 Tbsp if you prefer. -- posted by beckerd

Israeli Kabobs

These have a very middle-eastern flavor. They taste just like something you could order at most Israeli/Mizrachi restaurants. When I was living in a mircaz klita (an absorption center for new immigrants) in Jerusalem, a Jewish-Iraqi family taught me how to make these for Shabbat. The lady shaped them into little footballs, but I just make small patties. These would be great on a grill as well!
Greek Gyro Meat - Rotisserie, Grill or Oven

We love Greek food, but Gyros are a true hit in my house! Most of the Gyros that we buy out are dry and the sauce never really tastes like it should. This is a fabulous recipe for those of us who love a REAL Gyro. It is flavor packed and very versatile. If you do not have lamb, you can substitute with finely ground hamburger. It will not be as authentic as the lamb Gyro, but the spices and seasonings used in this recipe will get you to where you are going! I serve this with recipe #296173. You can also wrap these up in foil and take along to a picnic or outing. UPDATE 07/25/08: I was given this recipe from a neighbor who used to live in our neighborhood and made this meat on his BBQ rotisserie. I had no idea it was an Alton Brown recipe until now. Please know this recipe was not posted in malice. -- posted by Humble Bee

Romanian Mici--Grilled Fresh Sausages

These are also called mititei and they are an essential part of Romanian life in the summer. People in Romania rarely make these from scratch but rather buy the pre-seasoned meat at the butcher shop. In the U.S. we don't have that option so I combined a few recipes I had seen and came up with this one. They are delicious. Rich and garlicky. Serve them straight off the grill with yellow mustard and bread. Beer is a must too. If you would like to add lamb to the mix, substitute it for half of the pork. -- posted by Transylmania

Hamburger Wellington

This is based on a recipe from George Foreman's book, Indoor Grilling Made Easy. His intro says, "These are more like hamburger panini, so the burgers are meant to be on the thinner side." I made mine on the George Foreman grill (somehow I've managed to collect about 3 of them in various sizes!); however, any panini maker would work, too. You can also adapt these for a flat griddle, preferably a grooved one, keeping in mind that where the instructions say "grill" you'll need to grill both sides of the patties and the sandwiches, adjusting cooking times accordingly. -- posted by mersaydees

Country-Style Sausage Meatballs

This is an interesting and tasty variation of meatballs from a Greek cookbook, where half the mince meat is substituted with the contents of a spicy country-style pork sausage. The meatball tastes like sausage but is leaner and healthier. It tastes better if it is allowed to sit overnight before cooking so that the flavours can blend together. -- posted by Perfectionist cook

Simple, No-Mess Burger Crumbles

The ideas for this easy make-ahead recipe came my friend Sharon, a homeschooling mom with 2 teen boys and a 12-yr-old daughter. She's always looking for easy meal prep ideas.

This method lets you stock your freezer with ground beef crumbles. After that, go wild with already-cooked crumbles that you can use in tacos, sloppy Joes, hamburger casserole, etc.

Note: Time and amount are approximate. Today I have about 7.5 lbs of burger crammed into my largest crockpot. -- posted by Jora

Simple Meat Loaf

This is an easy blend that I came up with after looking at a few different recipes. It just happened to please my family; I'm posting it here so I won't lose it, lol. They tend to like foods fairly bland and boring.
I didn't measure to see how many cups of bread crumbs I got, as I kept crumbling slices of toast until it looked right. And the beef broth was my own homemade, still gelled from being in the fridge; I don't know if canned would be different. -- posted by All Thumbs

Dad's Meatloaf

This is the meatloaf that I grew up on, and is pretty much the only meatloaf my friends and I will eat. Our family believes that less is more when making meatloaf so there is nothing strange in it that anybody would object to, unless they just do not like beef. The onion powder is for children and people who say that they don't like onions because of the texture. However, if you actually like onions feel free to substitute real onions chopped fine. -- posted by MistyCat82

Meatloaf With Lentils and Vegetables

I found this recipe online while looking for a good veggie-filled meatloaf. I made a few changes, even though I haven't made it yet. It sounds like it would be good with ground turkey or chicken as well (with the corresponding stock). The web site I found it on recommended topping with a salad made from baby salad leaves, lentils, carrot, onion, and tomato and red pepper chutney. I plan on topping it with tomato sauce or BBQ sauce. -- posted by mayness

Serbian Cevapi

This recipe is for Serbian Cevapi or also known as Cevapcici. They are home made sausage links for lunch or dinner usually served over a bed of minced onions on a platter. They are also served in sandwhiches with Pita or Home made Flatbread (Lepinja) with raw onions, tomato wedges and lettuce. Or a Serbian spread called Kajmak.

This recipe makes about 45 links depending on how you cut them. I would suggest letting them sit in the fridge or cool place over night to let the flavor set in.. But at least 2 Hours to cool in fridge. -- posted by Chef #1222633

I got this recipe from a magazine quite a few years ago. This is a really different meatloaf that packs a lot of flavor.
Last Minute Helper (Like Hamburger Helper)

This was made on the fly out of necessity, you start your day thinking whats for dinner knowing you will not have time to cook later, so you grab a pound of hamburger out of the freezer thinking you will figure out what to do with it as you do the shopping today no problem.

So now you start your day, drop off the kids at school, do all your running only to get a call which delays your plans for shopping, so you think just make burgers add some chips for tonight no problem. Now its time to get the kids from school and you get another call asking you to grab more kids for the neighbor, you think still no problem they are not staying for dinner, so now it gets late and then it happens, the call that says we can't get the kids yet.

The kids are starting to scream they are hungry, now your brain is racing, what to do, so much for a simple burger not enough to go around, you think make hamburger helper and add extra noodles, you race to the cupboard to realize you didn't get to go shopping, so you say I'll make my own hamburger helper and thus this quick and simple recipe is born.

Remember this is for a quick and simple meal, treat it as a quick fix and a base to make bigger and better things. -- posted by Half-Elf

Amazing Burgers

I always used to play around with my burger recipes until the night i made these- I'll never make burgers any other way. Enjoy!

NOTE: The addition of a slice of your favorite cheese melted over the top of your burgers can never hurt.

ANOTHER NOTE: I make my patties and let them sit in the fridge covered in clear wrap for a half hour before grilling.

MORE NOTES: A good juicy burger can tend to make the bun soggy so it's a good idea to lightly toast the bun on the grill.
