Grandma G's Collard Greens

I got the recipe a week ago from my Grandma Geri before she went back home to NJ. This recipe is so delicious and easy. As I write this on here I am making them on my stove right now. You can use several different types of meat in this dish. The best to use is smoked turkey neck. You can buy it in the store. I am using Turkey bacon but regular bacon is just as good! And you MUST MUST MUST use Lawry's seasoned salt. If you don't have coarse salt that is ok. Let me know what you think of this recipe! -- posted by *~*Elizabeth*~*

Grandma's Pickled Fresh Zucchini

Grandpa did the gardening, and oh what a gifted gardner, and grandma cooked up his magnificent bounty. Whenever the zucchini was taking over grandpa's vegetable patch, grandma would whip up this delicious, tangy side dish. It's a flavorful accompaniment to any grilled meat, a terriffic addition to your salad plate or antipasto platter, and its herbed-vinegary jolt will turn an ordinary panini or deli sandwich into something extraordinary! Grandma's storing trick: A Mason jar - She layered the zucchini slices horizontally in the jar and kept them refrigerated for up to 2 weeks. -- posted by Feast Your Eyes!

Favorite Creamed Spinach

This recipe is made with a white sauce, and has lots of garlic in it. I came up with this recipe after making several other creamed spinach recipes that were overcooked, flavorless, and dull. I wanted something bright green, garlicky, and creamy. This is the only creamed spinach dish that my husband will eat now. Feel free to use all butter or all olive oil or substituting cream for the milk depending on your taste. I think this combination is big on flavor and cuts a lot of fat. I have even had success serving this dish to people who claim they do not like spinach. Enjoy! -- posted by Adelinkat

Tangy Pomegranate Chicken Legs Stuffed With Herbed Rice

These marinated chicken legs come out beautifully glazed and juicy, and look like a lot more work than they really are! I marinated mine for only one hour and they still turned out nicely. Also, you can add sliced and scored potatoes to the baking pan if desired, to soak up some of the juices.

Note: I originally tried this recipe for one serving, so had to estimate the measurements of the marinade and stuffing. The proportions are correct, but the amounts may need adjusting for your personal taste. I also only had dried herbs on hand, but fresh would probably turn out even better! -- posted by Sephardi Kitchen

California Mushroom Tart

A meatless main course or delicious side. Or cut in smaller slices as an appetizer. Uses humble, button mushrooms. Looks tricky, but is very simple once you have the veggies sliced. Depending on your cheese, you may want to use a different herb than basil. Note: do not try to substitute frozen spinach for fresh - it will be too wet, and make your tart soggy. -- posted by dianegrapegrower

Lambs Quarter (Quelites) and Beans

"Quelites" is a Spanish word for "wild greens." We like to cook with edible weeds, and lambs quarters fall into this category. You can look online for more information about how to identify this plant, which you can use much like you use spinach. So here is my effort and I think it tastes just like it. You can add more cinnamon if you wish. You can serve this with lots of different dishes it goes well with most things. -- posted by Tea Jenny

This is also delicious served over rice, or with a little wasabi paste added at the same time as the Mirin. -- posted by Chickenzombies

Gomae - Japanese Style Spinach Salad

This is Chef floWers version of Spinach Gomae. It's a side dish I often ordered at my favourite Japanese restaurant (before it closed down.) I found a visual version on you tube and since I couldn't find a recipe on www.recipezaar.com I thought I would add it to Zaar's collection. We all love this salad and my daughter can eat the whole serving (if I let her). I often double the recipe, so she can have extra greens, well it worked for Popeye The Sailor Man.
Kimchi

This is a recipe for a basic napa cabbage kimchi. I have been making different kinds of kimchi for the past several years. It has taken several batches to find the right combination that my family likes. While it is much easier to just buy it from the korean market, there is nothing like homemade kimchi that is made with love and care. This is a rough recipe. Making kimchi is a method, not a strict recipe. Also, please note that it is important to find the best ingredients you can find. Mediocre ingredients lead to mediocre results. I find that the overnight salting is less wasteful and keeps the kimchi crunchier longer. It sounds like it takes a long time, but active prep time is probably about 1 to 1 1/2 hours since the cabbage does a lot of the work while you are sleeping. -- posted by grace chang

Lobster, Shrimp Salad With Greens in Orange Cups

I call this my entertaining salad. It is just so pretty and always is a hit. Guests, family, dinner party, special night for you and your other half, or just a special one night salad. Now, I add lobster to mine, but with the combination of the shrimp and fruits, it really isn't too expensive. If you can't find fresh shrimp or lobster, frozen will work just fine. Just look for the frozen lobster tails when they put them on sale - One nice size tail is plenty for this recipe. Once cooked, it will keep warm without coming to any harm, and it will also re-heat very successfully. And, yes, it does freeze well so, all in all, it's a real winner of a recipe. It's great because it can be made the day before and gently re-heated with no last-minute bother. It is a perfect accompaniment to venison, goose or pork (and if you have any left over it does wonders for bangers and mash). -- posted by winterbaker

Holubsti--Ukranian Cabbage Rolls

I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked. This recipe comes from me combining elements of two or three different recipes that I found. The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well. If I want to do a homemade sauce, I usually do it a day or so in advance.,

By omitting the meat, this can be a vegetarian dish. By also omitting the sour cream and using margarine instead of butter, it can be vegan. -- posted by CorianneW

Red Cabbage With Apples (Rot Kraut Mit Äpfeln)

For 100 years, Lüchow’s was NYC's landmark German restaurant; it closed in 1982. This recipe is from “Lüchow’s German Cookbook” (1952). My ancestors immigrated to the U.S. from Germany, and settled in Brooklyn and Queens. When I was a child, for special occasions my grandmother would make Sauerbraten served with with dumplings and a red cabbage like this. The sweet-sour taste, the deep red color — these had special appeal to me as a child. This is my comfort food — to this day it conjures happy forty-year-old memories of sitting in my grandmother's crowded kitchen on a festive Sunday afternoon. -- posted by Belgophile

Creamy Butternut Squash and Spinach Gratin

I just got back from a quick trip to Miami, Fla. and had something very similar to this at a restaurant called Captain's Tavern. It was so good, I had to try to find the recipe. Here's one gleaned from Gourmet magazine, Nov. 2006 via Epicurious. Enjoy! This is one big casserole, but at the restaurant it was in individual dishes. You may add the cheese between each layer or just use it to top, or leave it out if you prefer! On the website, this has 92 wonderful reviews! this is even better the next day. You can half this recipe and cook in a 9x9" pan. This is so good, serve to company and for the holidays. This recipe calls for slicing raw squash but to make it easier to cut, microwave for 3-5 minutes, or lightly steam or bake and then cut in pieces. The recipe says it will serve 8-10 people but some said it served 12! -- posted by Sharon123

Cabbage With Caraway

This is my mother's recipe - I don't know where she got it from. It is a great way to cook cabbage, which leaves it slightly crunchy and tasting delicious. Nothing like the awful boiled cabbage you remember from school!

Cabbage is very good for you, as it contains anti-oxidants, vitamin C and all sorts of other things.

Try this as a vegetable with chops or burgers and plain boiled potatoes. You can use leftover cabbage and potato to make Bubble and Squeak. -- posted by SarahEmmm

Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own.

A vegetarian recipe for spring rolls that will satisfy any craving for Chinese! While this recipe requires some advanced preparation, it does make a number of servings which can then be frozen and prepared at a later date. -- posted by Lizz Clements
