			<description>This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way. 
Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. 			<description>This is classic Cobb salad flavors, but a definite twist. Smokey turkey bacon, mango, seafood (crab, lobster and or shrimp) and a fresh citrus vinaigrette, but just as good. Now for expense reasons, I love shrimp and crab, but by all means, use lobster for the ultimate if you want. I try to use some good crab (canned is fine) as well as some great shrimp from your local grocer.  You can even use some grilled salmon which is just as fine for this.

I love this elegant salad. You can vary the greens if you want some fresh spring greens, arugula or even watercress, but I happen to like romaine for my salad.  Also I like to use the classic flavors of egg, bacon, tomatoes, but I love to add some onions to the salad base and then the fruit gives it a nice twist with the seafood and the citrus vinaigrette is a nice change.  I still top with gorgonzola for the bleu cheese lovers for some of that basic flavor and then top with with fine chopped walnuts for some crunch.  But have fun, use your favorites... nothing wrong with changing it up a bit.

Yes lots of ingredients, but nothing hard, just some chopping involved, but it makes a great hearty salad. Fun for entertaining.  Serve a nice bowl of fresh soup to start and then some homemade bread with the salad ... that is a very hearty dinner and a nice change from heavy pastas, sauces and casseroles.  But I'm a big salad person, so I love it and it is always a crowd pleaser. 			<title>Pepper Crusted Tuna, Mustard Sauce and a Pea Shoot Salad</title>

			<description>This was adapted by a friend of mine ... who got it from a caterer ... who got it from a friend ... who got it from a magazine, who got it from WHO KNOWS where.  Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days.  The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them.  And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company. 			<description>This is the result of many years of trial and error...as well as the generous base recipe donated by a girlfriend about 27 years ago when we went on a girls' weekend to Mendocino and tried to out-cook each other.  Her salad was a huge hit and eventually evolved to this recipe, which has been a family favorite ever since.  The croutons are boxed/purchased but made special by sauteeing them in butter just before adding them to the salad.  The dressing is mixed up in a blender in a matter of just a few minutes. I try to utilize as many &amp;quot;convenience&amp;quot; items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own.
